    One of my viewer requested this recipe and untill that i have never heard about this cake. And i am glad that she requested it, because it tasted so yummy, it was cold, sweet and completely different that my usual cake.This cake calls for store bought white cake mix or yellow cake mix, but i made my own yellow cake because i always love making cakes from scratch. And also to make it more healthier i added some wheat flour in it too. You can simply leave that out and use all purpose flour. My jelly didn't penetrate into the cake as expected that is because i added wheat flour in it, but still it tasted great. So if you wanna have a more fluffier cake, just add in all purpose flour instead of wheat flour. Give this cake a try and let me know how it turned out for you..

    Baking Time :  30 to 35 mins
    Setting Time : 2 hours
    Serves : 10 to 12


    Ingredients:

    Whole Wheat flour - ½ cup / 60 grams
    All Purpose Flour / Maida - 1 cup / 120 grams
    Custard Powder - ½ cup
    Sugar - 1 cup / 200 grams
    Milk - 1 cup / 250 ml
    Baking soda - ½ tsp
    Baking powder - 2 tsp
    Vanilla Essence - 1 tsp
    Butter - 75 gram 
    Jello or Instant Jelly Mix - 1 packet
    Whipped Cream for topping optional


    Method:

    Preheat oven to 170 degree C. Butter a 20x 20 cm square cake pan and sprinkle flour all over it, now spread it on all sides and tap off the excess, keep aside till use.

    Now heat milk in a sauce pan, when it reaches a boiling point, add in sugar and mix well. Add in butter and let it sit till it is melted.

    Let this sit aside till it is room temp. 

    Now sift together, wheat flour, all purpose flour, custard powder, baking soda and baking powder. 

    Once the milk mix is cooled, add in some vanilla essence and mix well.

    Add in the dry ingredients and fold gently. 

    Pour this batter in the prepared baking tray and bake it for 30 to 35 mins till the cake is done. Insert a toothpick to see whether the cake is baked, if the toothpick comes out clean then the cake is done.

    Once you take the cake out of the oven, make the jelly mix as per package directions.

    Remove the cake from oven and use a fork to prick the cake all over it, dont prick it till the end, just a little more than half way is good.

    Now pour the prepared jelly mix all over the cake and let it sit for a good 2 hours in fridge till it is set.

    Slice and serve, you can garnish with whipped cream on top too. Serve cold.

    Notes:

    1)My
    jelly didn't penetrate into the cake as expected that is because i added
    wheat flour in it, but still it tasted great. So if you wanna have a
    more fluffier cake, just add in all purpose flour instead of wheat
    flour.

    2)Add the jelly mix while the cake is still hot.

    3) Make jelly as per your package says, dont allow it to set, just use it in the liquid form.

    pour hot water
    Pin
    mix to dissolve
    Pin
    pour the mix over the cake
    Pin
    let it set for a couple of hours in fridge

    slice and serve

    you can top it with whipped cream

      Arthi, this jelly mixture available in shops have some medical smell in it... Can tell me which brand you are using in this recipe and one one more question
      Is it good to blend babies food? I have heard tat blending would break the nutrients. Namma matthu use panni kadainja better a irukkumla?

      @ArchanaI use weikfield jello mix.

      And yes u r right, but maha likes everything super smooth, if it is a little grainy then she makes like vomiting. So i puree them,but you can use mathu too.

      Hope you'll be fine. Today I'd tried your recipes of Jello Cake and Mango Cake, both are yummy and delicious, I'd made both cakes in pressure cooker and used ghee instead of butter, both are perfect. I can't upload picture here otherwise I'd showed you pictures of cakes. Thanks for nice recipes. Soon I'll try your other recipes, because they are simple to make, in budget and according to my taste. Thanks again.
