    Mango Coconut Chia Pudding

    Mango Coconut Chia Pudding is super easy to make. This pudding takes just few minutes make and taste so healthy and delicious.

    Layer of mango puree topped with chia seeds coconut mixture. Coconut and chia seeds are mixed to create a jelly like texture. This is perfect to serve for breakfast or as a healthy desert as well.

    Chia seeds creates a gel like texture when it is soaked in any liquid. It absorbs all the liquid and swells up. check my fig chia jam recipe.

    You can consume chia seeds raw, cooked. But you have to add them to water to smoothies to make them swell before eating.

    Chia seeds looks like tiny seeds but they are packed with tons of benefits. They are excellent source of omega-3 fatty acids, anti oxidants, fiber, iron and calcium. It helps to improve good cholestrol which protect against heart attack and stroke.

    A 28-gram, or 1-ounce, serving of chia seeds also contains 5.6 grams of protein. It has more fiber and protein than flax seeds.

    Ingredients
      

    • 2 Ripe Mangoes pureed
    • 3 tbsp Chia Seeds
    • 1 cup Coconut Milk
    • 2 tbsp Honey

    Instructions
     

    • Take chia seeds in a bowl, add in coconut milk and mix well. Set aside for 10 mins.
    • Add honey and mix well.
    • Take mangoes in a blender and puree til smooth.
    • Pour this into bowl, top with coconut chia pudding.
    • Set aside in fridge overnight.
    • Serve cold.
