    Sesame Noodles Recipe

    Sesame chicken noodles are one of the easiest and tastiest noodles you can make at home. It is a one pot noodle recipe which is high in protein and tastes absolutely delicious. You can add any vegetables like bok choy, broccoli, cabbage or zucchini based on your liking.

    I make noodles often and serve it with chilli chicken and chicken manchurian. This one pot Asian inspired sesame chicken noodle is perfect for busy mornings, dinner and for kids lunch boxes.

    The recipe is so versatile that you can adjust the oil, spices, vegetables and noodles based on the ingredients available in the pantry. 

    About Sesame Noodles

    This week I'm on a mission to do fridge clearance and use up all the stocks before buying anything new. While doing this, I found a glass noodle packet lying inside the refrigerator, which I bought to make a Korean Japchae recipe. So, I decided to turn this into a super quick and easy protein rich noodle recipe. Chicken sesame noodles is a flavourful, satisfying recipe in a bowl and I made this with all the ingredients which have been lying around in my kitchen for a while. 

    Sesame chicken noodle is a stir friedAsian inspired noodle recipe made with shredded chicken, vegetable, glass noodles which are tossed in sesame oil, soy sauce and garnished with sesame seeds and spring onion. It has the flavours of sweet, spice and nutty crunchy bite of sesame seeds.

    What is Glass Noodles?

    Glass noodle also known as cellophane or bean thread noodle or mung bean noodle. It is a light, translucent and chewy noodle made from sweet potato starch or with mung bean. The noodles has very mild or neutral flavours that blend beautifully with the sauces. It is widely used in Asian cuisine to make noodles, stir fry, soups and spring roll. 

    WHY I LOVE THIS RECIPE - What I started as a simple fridge clearance day, turned into this amazing and delicious noodle dish. It is a kind of recipe that is easy to make with the available ingredients without compromising the taste and flavour. This recipe is also perfect for a lunch box because it is loaded with vegetables and chicken. It is a great way to sneak in vegetables in your kids meal. 

    Ingredients

    Toasted sesame oil : Toasted sesame oil is the signature ingredient for this recipe. This oil is made from toasted sesame seeds. It is used to toss the noodles for its unique flavour. If you don't have toasted sesame oil, then you can also use regular oil like canola oil, vegetable oil, groundnut oil or olive oil. 

    Toasted sesame seeds : I have added a generous amount of toasted sesame seeds as it adds the nutty and crunchy flavour to the noodle. 

    Glass noodles : As I had glass noodles in my pantry, I used it. You can use any noodle variety like udon noodle, soba noodle, spaghetti, hakka noodle or even millet noodle for this recipe. Cook the noodles as per the package instructions. 

    Ginger and Garlic : Add finely chopped ginger and garlic for its amazing flavour. 

    Onion : Thinly slice the onion as it adds a crunch texture to the noodle and also adds mild sweetness.

    Green chillies : Green chillies are added for the spice. You can add chopped or sliced green chilli. Adjust the chilli quantity based on your spice level. 

    Vegetables : I have used carrots, capsicum, spinach and mushrooms. Thinly slice the carrot and capsicum. Spinach and mushroom should be chopped roughly. You can even use cabbage, broccoli, bok choy, and zucchini as per your liking. 

    Chicken breast : I have added cooked and shredded chicken for the protein. If you're vegetarian, you can also add tofu or edamame. 

    Spring onion : A handful of spring onion is used for its flavour and also for garnishing. 

    For sauce : I have used soy sauce, vinegar, sugar and salt as a flavouring agent of the noodle. You can mix everything in a bowl first and add it to the pan. Honey can be used as a substitute for sugar. 

    Hacks

    Soaking the noodle : Glass noodles tend to cook faster than other noodles. So start by soaking them in a wide bowl with hot water for 30 minutes. Strain them and set aside. 

    Make ahead of time : You can chop the vegetables and keep them in a box inside the refrigerator the night before. Also cook and shred the chicken pieces and store it in the fridge. With this pre prep work, you can make the noodle stress and hassle free during busy mornings. 

    Want spicier ? Add a spoon of red chilli or green chilli sauce. Or else you can make it spicier by adding chilli oil and chilli crisp for the spicy kick flavour. Adjust and add the spices based on your preference.

    Don't overcook : Stir fry the vegetable in high heat just for a minute to retain its crispiness. Also after adding glass noodles, just toss for a second and turn off the stove. Because they turn mushy if cooked for a long time. 

    Sesame Chicken Noodles (Step by Step Pictures)

    1)Soak rice noodles or glass noodles in water for 30 minutes.

    2)Heat oil in a large pan, add in ginger, garlic, green chillies and onions.

    3)Saute for a min.

    4)Add in carrots, capsicum, mushroom, and saute for 3 to 5 minutes.

    5)Saute until slightly tender.

    6)Season with salt, sugar and sauté well.

    7)Add in spinach and cook for couple of minutes till it is wilted.

    8)spinach is wilted.

    9)Add in soaked glass noodles and toss well in the heat.

    10)Add in soy sauce, vinegar, water and mix well.

    11)Add in cooked chicken and mix through. Cook for couple of minutes.

    12)Now the noodles is almost cooked.

    13)Sprinkle sesame seeds and spring onions and toss well.

    14)Now sprinkle in sesame seeds and spring onion and toss well. Serve hot.

    Ingredients
      

    • 3 tablespoon Toasted Sesame Oil
    • 1 tablespoon Ginger peeled & chopped finely
    • 6 cloves Garlic peeled & chopped finely
    • 1 medium Onion peeled and sliced
    • 2 no Green Chillies chopped
    • 1 large Carrots Julienned
    • 1 medium Bell pepper Julienned
    • 1 cup Spinach chopped
    • 1 cup Mushrooms chopped
    • 1 large Chicken breast cooked and shredded
    • 200 grams Glass noodles or Rice noodles
    • 1 teaspoon Salt to taste
    • 4 tablespoon Toasted Sesame Seeds
    • 4 no Șpring onions cut lengthwise

    For Sauce

    • ¼ cup Water
    • 4 tablespoon Light Soy Sauce
    • 1 tablespoon Vinegar
    • 1 teaspoon Sugar

    Instructions
     

    • Soak rice noodles or glass noodles in water for 30 minutes.
    • Heat oil in a large pan, add in ginger, garlic, green chillies and onions. Saute for a min.
    • Add in carrots, capsicum, mushroom, and saute for 3 to 5 minutes. Season with salt, sugar and sauté well. Add in spinach and cook for couple of minutes till it is wilted.
    • Add in soaked glass noodles and toss well in the heat. Add in soy sauce, vinegar, water and mix well. Add in cooked chicken and mix through. Cook for couple of minutes.
    • Now sprinkle in sesame seeds and spring onion and toss well. Serve hot.

    Expert Tips

    You can substitute glass noodles with hakka noodles, udon noodles, soba noodles, and spaghetti based on availability. 

    Add a splash of chicken broth or veg broth instead of water for tossing the noodles to enhance the taste and flavour of the noodle.

    Garnish and serve with crushed peanuts for extra flavour and texture. 

    Instead of chicken, you can even make it with cooked shrimp.

    Add a spoon of tahini paste along with sauce for added sesame flavour. 

    To balance the flavours, add a spoon of lemon juice at the end.

    Storage 

    Let the sesame chicken noodles cool down to room temperature. Transfer them to an airtight container and refrigerate for 3 to 5 days. Also you can store in a small portion microwave safe container or glass container and it will be an easy option for grab and go meals. Reheat using the stovetop method or in the microwave oven. 

    Serving

    Enjoy this warm sesame chicken noodle in a bowl along with a boiled egg and chilli chicken or garlic chicken.

    Q.How does glass noodle taste like ?

    Glass noodles is a soft translucent noodle, which has very mild flavour and has a chewy texture. They don't have any strong or unique taste, so it goes very well with any sauces. 

    Q.What other oil can be used as a substitute for sesame oil ? 

    Other oils like groundnut oil, vegetable oil, canola oil or olive oil can be used as a substitute for sesame oil. 

    Q.What is the difference between Indian sesame oil and toasted sesame oil ? 

    The difference is color, flavour and making process. Indian sesame oil is made from raw sesame seeds, so it is light in color and has mild flavour. Where the toasted sesame oil is made from the roasted sesame seeds, which result in intense flavour and dark in color.

    Miso sesame ramen : Miso sesame ramen is a delicious and comforting ramen soup in a bowl. It is made with purple sweet potato noodles, miso paste, tahini paste, vegetable and egg. 

    Tan tan ramen : Tan tan noodles is a spicy Japanese recipe, made with noodles, chicken, vegetable or green and egg. The noodle is dunked in a special broth which is prepared by mixing soy sauce, chilli bean paste and chilli oil. 

    Korean Japchae : Korean japchae is a popular Korean noodle recipe made with glass noodles. The noodles are tossed with vegetables, soy sauce, meat, sugar, vinegar and sesame oil.
