Microwave Chocolate Cherry Cake with Chunky Cherry Coulis ( No Egg, No Butter, Takes Just 2 Mins to Make)

  
We have been cleaning the entire house today after some busy weeks. Suddenly i started to crave for chocolate, i don't know how it hit for me..I wanted something sweet, chocolaty so badly. When i searched my fridge i found the Del Monte Cherry which was left from my panna cotta dish. I decided to use that so i can post it for the recipe carnival.


  
I decided to microwave the cake because i cannot wait for another 20 mins to dig in. So i cameup with this recipe. I also made a wonderful coulis using Del Monte Red Cherry.

This coulis made the cake so fresh and yummy. I loved the warm cake which is drizzled with this yummy sauce, Traditionally the coulis should be strained, but i left it chunky because i want some texture in the coulis. I also drizzled this coulis over some icecream and had it, it was like heaven. 

Someother option to use this coulis. Drizzle it over pancakes,waffles,brownies. The Option is pretty much endless

Ingredients:

Wheat Flour / Atta - 5 tblspn
Cocoa - 2 tblspn
Sugar -  3 tblspn
Oil - 3 tblspn ( I used Coconut Oil)
Del Monte Red Cherry - 1/2 cup Chopped
Milk - 6 tblspn 
Baking Soda - 1/2 tsp

For Cherry Coulis:
Del Monte Red Cherry - 1/2 cup
Sugar - 1 tblspn
Lemon - a sprintz

Method:

Take a bowl and add in flour, cocoa, sugar,baking soda and mix well.

Now add in oil, milk and blend it till it gets into a smooth paste.

Now add in the Del Monte Red Cherry and mix for few times till it gets combined.

Oil few microwave safe  dish and pour this batter into them.

Put them in the microwave and cook them for 2 mins.

Now remove them from the oven and let it stand for a min.

Invert them into a plate or you can serve as it is along with some cherry coulis.

For Cherry Coulis:

Take Del Monte Red Cherry in a food processor and add sugar and lemon in them.

Blend them till they are smooth.

If you need you can strain them, but I didn't do it.

Serve it with Cherry cake or with icecream.

Pictorial:
Take all your ingredients..OPPS I FORGOT THE BAKING SODA..Sorry I am a AIR HEAD..

Combine all the dry ingredients

don't miss out the baking soda

add in milk slowly

now goes the oil

and mix carefully.Don't make a mess as i did

add the chopped Del Monte Cherries

Whisk to Mix

Now take a microwave safe bowl..I used my trusty ramekin..Now spray them with oil..

Transfer this mixture evenly

and microwave them for just 2 mins

They will be cooked but still moist


FOR CHERRY COULIS:
Now make the Cherry Coulis..You will need some Del Monte Red Cherry, Sugar and Lemon juice

Take cherries in a mixer..I used my mini food processor

add sugar

and some lemon juice

whip them so they are crushed yet chunky

Serve

with the chocolate cherry cake

they taste best when warm

Another option of serving this deliciousness is..to drizzle it over cold icecream

@simiI have never tried it. But i think u can bake it at 180 degree C for 13-15 mins. try it and tell me the result
