Eggless Whole Wheat Banana Bread Recipe / Vegan Banana Bread Recipe


I love banana cake, i have already posted a recipe here..But this is a health variation of that. It has no butter, it is made with wheat flour and it has sunflower seeds and cashewnuts in this..so this is like super food. Plus it is eggless. In my opinion, banana cake dont need eggs, because of the bananas the cake stays together and the texture will be soft. Any how i will share banana cake with eggs soon..

The recipe calls for sunflower seeds and luckily i had them on hand, i bought couple of big packets of them during my last trip to supermarket. I got them because i thought i would add them to my granola..But it is optional, you can leave it out or simply add flax seeds or whatever seed you have on hand.

Preparation Time : 10 mins
Baking Time : 40 to 45 mins
Serves : 10 to 12 slices

Ingredients:

Whole Wheat Flour / Atta - 1.5 cup / 180 grams
Sugar - 1/2 cup / 100 grams
Ripe Banana Puree - 1 cup
Baking Soda - 1/2 tsp
Baking Powder - 1.5 tsp
Oil - 3/4 cup
Vanilla Essence - 2 tsp
Sunflower Seeds - 1 tblspn (optional)
Cashewnuts - 1/2 cup

Method:

Preheat oven to 180 Degree C. Oil a loaf pan and set aside.

First sift wheat flour, baking soda and baking powder. Set aside for a min.

Now take oil, sugar and vanilla in a bowl and mix well.

Add in pureed banana and mix well.

Now add in the flour mix and sunflower seeds and cashewnuts. Mix well to a smooth batter. It will be thick.

Now pour this thick batter in the loaf pan and bake for 40 to 45 mins.

Remove it from oven and let it cool for 10 mins.

Now invert it to a plate, let it cool for 30 mins, slice and serve.

Take all your ingredients

Puree some bananas

Take wheat flour in a sifter

Add in baking soda

and some baking powder

sift it out

Take oil in a bowl

Add in sugar

add in vanilla essence

Mix well 

add in a cup of banana puree

add it in

mix well

add in wheat flour mix

fold gently

Add in cashews and sunflower seeds

Add in in

fold well

Oil a loaf pan

Pour the batter in

Bake 

remove and serve

So moist and fluffy

want a bite

  11. I added vanilla essence and the cake turned out to be brown.. Is there two types of vanilla essence(brown and colorless) ? The color was not mentioned in the cover :(

  12. @AnonymousYes u can use cocoa powder. Add couple of tblspn..You can remove couple tblspn of flour in this recipe if you are adding cocoa

    Can you please post a photo of the oven you have?
    I have been trying baking for 3-4 times, and I am not able to do it. The top goes overcooked and the bottom is not cooked. Please let me know the correct procedure of heating oven and baking.

    I have tried few of ur recipes .they came out very well.u explain very well with pictures.so that it becomes easy to understand.thanks a ton aarthi.

    In this recipe can we use butter or ghee instead of oil.or is it compulsory to use oil.& also can we use any oil.

Thanks for the recipe. i have few doubt, shall i bake in microwave instead of convection with 5 min time? because, in Convection mode i have kept 180 deg, my cake start burnt in the top and it remains uncooked in the middle after 30 mins of time. please share ur views on the same.
