Chettinad Coconut Kuzhambu Recipe - Thengai Kulambu Recipe



This is one kulambu which i made using the fresh chettinad kulambu masala powder which i made and it was spot on. Eventhough it is so easy and made with just basic ingredients and no veggies, it was delicious. The flavour from the powder was really good..

I didn't add any veggies in this, you can add whatever you have on hand..Brinjal, drumstick will be great in this..

Preparation Time : 10 mins
Cooking Time : 20 to 25 mins
Serves : 4

Ingredients:

Oil - 1 tblspn
Mustard Seeds / Kaduku - 1 tsp
Urad dal / Ulundu Paruppu - 1 tsp
Asafoetida / Hing / Kaya Podi a pinch
Onions - 1 sliced thinly
Tomato - 1 chopped finely
Green Chilli -2
Chettinad Kuzhambu Masala Powder - 2 tblspn (Recipe here)
Tamarind Pulp - 1 to 2 tblspn
Salt to taste
Sugar - 1/2 tsp
Coconut - 1/2 cup grated and ground into a smooth paste
Water as needed

Method:

Heat oil in a kadai. Add in mustard, urad dal, asafoetida and sizzle them.

Add in onions, chillies, tomatoes and saute till onions turn soft.

Add in the masala powder and mix well.

Add in water along with salt, sugar, tamarind and coconut paste.

Bring this to a boil, simmer for 10 mins or till oil floats on top.

Serve

Take coconut in a blender


puree till smooth


Heat oil in a kadai. Add in mustard and urad dal


add in asafoetida


add in onions, chillies and tomatoes


Give a quick toss


cook till the onions turn soft


add in chettinad kuzhambu masala ( RECIPE HERE)


saute for a min


pour in water


mix well


season with salt


add a little sugar


add in tamarind water


ground coconut


mix well


Keep simmering


Cook till oil floats on top


Serve
