Eggless Orange Cupcakes Recipe - Orange Cupcakes with Orange Buttercream Frosting Recipe


This is one cupcake which i wanted to bake for quite a long time. There is something in the citrus of orange which makes the cake or cupcakes which they get into taste soft and yummy. This is a eggless version and it is pretty healthy as well.



This cupcakes is made with oil, wheat flour so it is so healthy. You can skip the frosting part of the cupcakes and enjoy it as a plain cupcake with a dusting of icing sugar.


I made a orange frosting for this and it took this simple cupcakes to the next level..

Preparation Time : 10 mins
Baking Time : 20 to 25 mins
Makes : 9 cupcakes

Ingredients:

Wheat Flour / Atta - 1 cup

Corn flour / Corn Starch  - 1 tblspn
Baking Powder - 1/2 tsp
Baking Soda / Cooking Soda - 1/2 tsp
Orange Zest - 1 tblspn
Oil - 1/4 cup
Fresh Orange Juice - 1 cup
Sugar - 1/2 cup
Orange Buttercream Frosting as needed (RECIPE HERE)
Sprinkles as needed

(My 1 cup measures 240 ml)

Method:


Preheat oven to 180 degree C. Line muffin tray with cupcake wrappers. Set aside.


In a sifter, take flour, baking soda, baking powder and cornflour. Sieve well.


Take oil, sugar, orange zest, orange juice in a bowl and mix well till sugar is melted.


Add in the sifted flour and mix well.


Use a icecream scoop to scoop the batter into the tray. Bake for 20 to 25 mins or insert a toothpick, if it comes clean then the cake is done.


Remove it and cool it completely.


Now decorate it with frosting.


Top with sprinkles. Serve.

Start by sifting wheat flour

take couple of oranges


first zest them


slice them in half


juice them..you need a cup of orange juice


take oil in a bowl


add in sugar


mix lightly


add in orange zest


add in orange juice


mix well


keep mixing till sugar is melted

add in the sifter flour mix


mix gently


now take a icecream scoop


scoop some batter


fill your muffin tray


bake them


let them cool down..

take a piping bag


fill with frosting


time to pipe


pipe it over


done


you can decorate it as you like


take some sprinkles


top it over the cupcakes


Serve


Taste so yummy


it is so light and fluffy..

  6. I do not have liners. can I bake in mould just after greasing and dusting?
    alternatively, can I user butter paper?

  8. @AnonymousThis cake is so moist, you need wrapper. You can cut small pieces of parchment and line it in the cupcake tray

  9. I tried recipe yesterday. 2 cupcakes burnt, 2 were hard inside and 2 were moist. Time for baking was around 10 mins. What was wrong? Moist cakes were yummy.
