    Broccoli Pesto Pasta

    This pasta dish is the simplest one you can make. My 2 year daughters favourite pasta dish is this one and my garlic butter spaghetti. It has broccoli in them, so it is nutritious and tasty as well. i am sure this will be adults favourite too, You can make this for dinner and serve with a roast chicken or anything.

    About Broccoli Pesto Pasta

    Pesto, also known as pesto alla genovese, is an Italian sauce made with fresh basil leaves, pine nuts, garlic, salt, Parmesan cheese, and olive oil. Pesto, also known as Pesto alla Genovese, is an Italian sauce that originated in Genoa, the capital city of Liguria. Crushed garlic, European pine nuts, coarse salt, basil leaves, and hard cheese such as Parmigiano-Reggiano or Pecorino Sardo are traditionally blended with olive oil.

    Broccoli is a nutrient-dense vegetable that may benefit your health in a variety of ways, including lowering inflammation, improving blood sugar control, increasing immunity, and promoting heart health. Keep in mind, however, that good health does not come from a single food.

    It can be eaten raw or cooked. Broccoli is an excellent source of vitamin C and vitamin K. Making pesto using broccoli is a great option to consume broccoli. Specially to put in kids lunch box.

    Broccoli Pesto Pasta Ingredients

    Pasta - Fresh pasta frequently contains eggs, the flavours of dried and fresh pastas are likely to differ. Similarly, the flavours of egg noodles, soba noodles, and rice noodles will differ due to the different ingredients.

    Garlic - one of the main ingredient which helps to flavour the pasta. You can add as much garlic as you prefer.

    Broccoli - Cooked broccoli can be very tender, crisp-tender, or still crunchy depending on the cook time and method. You can use cooked frozen broccoli to make the pesto.

    Parmesan Cheese - this adds umami taste to the pasta while making it creamy.

    Red Chilli Flakes - you can add as much chilli flakes as needed to flavour the tastel

    How to Make Broccoli Pesto Pasta (Stepwise Pictures)

     
    Take your ingredients
    wash and cut broccoli into pieces
    boil water in a sauce pan, add salt to it
    put broccoli in this
    cook for 5 mins
    drain and set aside
    take cashews in a blender
    add garlic
    add salt and chilli flakes
    parmesan cheese
    crush it up
    add broccoli
    lemon juice
    olive oil
    pulse few times
    now it is done
    in the same water, 
    add pasta
    cook till done
    drain it
    add it back into the pot
    add pesto
    toss well
    Serve
     

    Expert Tips

    • Instead of using broccoli, you can use cauliflower or spinach too.
    • Cooked protein like chicken, prawns, tofu can be tossed in the pasta.
    • You can use almonds instead of cashews.
    • Use a good amount of parmesan cheese for flavour.

    Equipment

    • Cooking pot
    • Blender

    Ingredients

    For Cooking Pasta

    • 1 cup Dry Pasta i used macaroni
    • 6 cups Water
    • 2 tsp Salt

    For Broccoli pesto

    • 2 cups Broccoli cut into florets
    • 10 no Cashews
    • 4 cloves Garlic peeled
    • ¼ cup Parmesan Cheese
    • 1 tsp Red Chilli Flakes
    • 1 tsp Salt
    • 1 tbsp Lemon Juice
    • ¼ cup Extra Virgin Olive Oil

    Instructions

    • Bring lots of water to a boil. Add salt to it, add in broccoli and cook for 2 mins. strain it using a slotted spoon and set aside.
    • In the same pot add pasta and cook till done.
    • When the pasta is cooking, make pesto. take cashews, garlic, red chilli flakes, salt, parmesan cheese and pulse few times till it is blended. Add in broccoli and olive oil and pulse few times so it is coarsely crushed.
    • Now drain the cooked pasta and add it to a bowl, add in this pesto and toss well. Add little pasta cooking water if needed. Serve with a sprinkling of parmesan cheese.

    Notes
