2 Minute Microwave Vanilla Cake Recipe

Microwave cakes are so versatile, it can satisfy any sweet cravings at any time of the day even in mid night. Since this cake takes under 5 minutes to make from start to finish. This is the base recipe, you can customize it as per your liking. You can add nuts, dried fruits or chocolate chips in it to make it more tasty.

Recently i bought few coffee mugs to add it to my collection. My microwave is broken, right now i am in my mom’s place. So i am making use of her microwave and making a bunch of microwave mug cakes. Yesterday  few relatives and their kids dropped by, so i made few microwave mug cakes for them and they devoured it in a second.

I am planning to do few more microwave cakes like banana, carrot soon. So far i made this one, chocolate cake and self saucing chocolate mug cake. This cake is maha’s favourite cake, she loves vanilla cake and adorably calls it “nevilla” cake. I simply love the way she calls it and i can listen to it for hours.

I had many mug cakes recipe on my blog and everything is delicious on its own way. One of my favourite cake is Nutella Mug Cake and it is Yum. It is one of the most popular cake on my blog.

This cake would seriously become a addictive recipe. It is super delicious, it needs just basic ingredients to make which you have already in your pantry. You can top it with whipped cream, chocolate frosting, vanilla frosting or simply drizzle it with plain ol vanilla icing. You can check all my frosting recipes here.

A simple and easy vanilla cake recipe which can be made in under 5 mins from start to finish.

Ingredients

  • All Purpose Flour / Maida - 4 tblsp
  • Baking Powder - 1/2 tsp
  • Sugar - 3 tblsp
  • Oil or Melted Butter - 1/2 tblsp
  • Milk - 4 tblsp
  • Vanilla Essence - 1/4 tsp
  • Salt a pinch
  • Chocolate chips few for garnishing

Instructions

  • Mix all ingredients in a bowl, except chocolate chips.
  • Pour it into a microwave safe coffee mug.
  • Microwave on high power (mine went to 800 watts) for 1.30 mins.
  • Remove it and let it stand for a min.
  • Top with chocolate chips and serve.

Notes

1) My microwave has 800 watts. I cooked it for 1.30 mins. If you have higher power microwave, you can cook it lesser.
2)You can add nuts or chocolate chips into the batter.

 Pictorial:

1)Take 4 tblsp all purpose flour or maida in a bowl

2)Add in 1/2 tsp baking powder

3)Add in 3 tblsp sugar to the mix.

5)Mix well so it is combined.

6)Add in 1/2 tblsp oil or melted butter

7)Add in 4 tblsp milk

8)Add in 1/4 tsp of vanilla essence.

9)Mix gently to a smooth batter

10)Take a microwave safe coffee mug, spoon the batter into the mug.

11)Dont over fill the mug, fill half way through, since it will rise.

pour the batter in

12)Bake for 1.30 mins. Timing may vary so keep an eye on it.

13)Top with chocolate chips when it is still hot.

    Hi Aarthi, I tried this recipe on my first baking, unfortunately my cake turned out not spongy and bit hard, almost like idli consistency. Dint raise at all. I added all ingredients double the amount into a glass bowl and microwaved it for the same watt and same time. Can’t figure out wat went wrong. Please guide me.

    if you have doubled all the amount as you stated then you should have increased the time according to the quantity.
