Baking is a stress reliever, i love baking when i am feeling little low on head. There is something in it. Many of you must have not tried it because you dont own a oven. For those people i have my microwave baking recipes and for those who dont have a microwave i have a pressure cooker cake recipe for you..This is my final cake recipe for this christmas..I have already posted my ultimate plum cake, microwave chocolate cake, eggless fruit cake and pressure cooker vanilla milk cake..
I have few more cookies recipe to post too..Tomorrow i will post a cookie recipe, so look out..Now coming back to this recipe..I always wanted to post a microwave plum cake recipe, because before i have a oven, i used to make plum cake in microwave. But i have never written that recipe, so i totally forgot it. Couple weeks back i tried it with my own recipe. I added some dates syrup too. You got to add some sticky stuff like molasses, honey, golden syrup, corn syrup or dates syrup. It is because you need some sticky stuff to hold the cake. And also i put the cake in fridge for a hour, so the cake holds better. Try this out and let me know how it turns out for you..
Preparation Time : 15 mins
Baking Time : 5 mins
Resting Time : 1 hour or overnight in fridge
Makes : 2 small round cake
All Purpose Flour / Maida – 1 1/4 cup / 150 grams
Cocoa – 3 tblspn
Baking soda – 1/2 tsp
Sugar – 1/2 cup / 100 grams
Oil – 1/4 cup / 60 ml
Dates syrup / Honey / Molasses – 4 tblspn
Dried Fruits – 1/2 cup (Raisans, Dates, Tutti Fruity, Cherry, Sultanas)
Nuts – 3 tblspn (I used Walnuts & Almonds)
Water – 1/2 cup / 125 ml
Take water in a microwave safe bowl and cook for a min till the water is hot.
Add in dried fruits and nuts and let it steep for 5 mins.
In the mean time, take flour, cocoa, baking soda in a bowl and mix well.
Now take the dried fruits soaked mix, add in sugar, oil, dates syrup and mix well.
Add the flour mix into this and mix well.
Take a microwave safe bowl, brush all side with oil. Pour the batter in, dont fill too much, just fill half way.
Put in microwave and cook for 5 mins. When it is done. Leave a standing time of 5 mins.
Remove it from oven, if it is risen to much, just pat it down a little.
Allow it to cool completely.Now put in fridge for 1 hour or so.
Now invert it, slice and serve.
1)Dont fill the microwave safe bow too much. Because the cake rises a lot. Just fill half way of the bowl.
2)After you take the cake out of the microwave, pat the cake down a little.
3)Allow the cake to cool completely, now put the cake in fridge a hour and invert the cake.
4)I left the cake in the fridge overnight. The cake got hard the next day, I took it out and left it to come to room temparature, The cake turned soft as usual.

|Put it in microwave|
|Cook for a min|
|Now the water is hot|
|Add the nuts and dry fruits in it|
|Let it steep for 5 mins|
|Take flour in a bowl|
|Add cocoa powder|
|Baking soda goes next|
|Mix that around|
|Now the fruits have steeped|
|Add sugar in|
|Add in oil|
|Add in Molasses or Honey or Dates Syrup|
|Pour it in|
|I used the bowl which i used for oil,
so the sticky stuff just slides out easily
|mix that well|
|Add the flour mix in|
|Mix that well|
|Drizzle oil in a microsafe bowl|
|Spread it on all sides|
|Pour the batter in, dont fill too much|
|I got two bowls|
|Put in microwave|
|Cook for 5 mins|
|if it rises too much, just press a little|
|Put in fridge for a hour|
|Now invert it and serve..|
