Apple Muffins with Cinnamon & Sugar Crunch Topping – Christmas Recipes

This is another recipe to be added in your Christmas baking list..A simple apple muffins which is so easy to make and delicious to eat…This muffin taste so fruity because of the apples that are added in this..You could never complain about the fruity and cinnamon aroma wafting from these muffins as you bake them..
  
The cool addition to these muffins are the crunch topping..It gives a lovely crispy top layer  to the muffins, but the interior is so fluffy…These muffins don’t rise too much because of the apples which we add in, so you have to fill it to the top of the muffin cases..
I hope you will try it and let me know what you think..

Recipe Source:Baking Bites
Ingrediants:
All Purpose Flour / Maida – 2 cups / 240 gms
Sugar-  3/4  cup / 150 gms
Baking powder- 2 tsp
Cinnamon – 1 tsp
Salt – 1/2 tsp
Ginger – 1/2 tsp
Egg-1
Oil-4  tblspn
Vanilla-1 tsp
Buttermilk-1 cup / 240 ml / 8 fluid ounces / 1/2 pint
Apple -2
For Crunch Topping:
Sugar -3 tblspn
Cinnamon -1 tsp
Method:
Preheat oven to 190 C / 375 F. Line muffin tray with 12 muffin cups.
In a mixing bowl take flour, cinnamon, ginger, salt, baking powder and mix well. set this aside for a moment.
Chop apple finely and dust it with 1 tblspn of flour and toss well. Take sugar and cinnamon given for topping in a small bowl and mix well.Set this both side for a moment.
In a large mixing bowl take egg and sugar and whisk till fluffy.
Add in oil and vanilla and mix well.
Now add in half of the flour and combine and pour in buttermilk and mix well.
Now add the remaining flour and mix well.Fold in the prepared apple mixture.
Pour into the muffin cases by filling to the top.Sprinkle with the cinnamon sugar and bake it for 15-18 mins until a toothpick inserted into the center of a muffin comes out clean and the top springs back when lightly pressed..
Cool it in a wire rack and serve..
Pictorial:
Take all your ingrediants..There is a spelling mistake in the picture, please add butter before the milk which i placed over there..Use Buttermilk and not milk..Please..
You will need two of this crunchy apples
take flour in a bowl
Mesure your cinnamon,baking powder and salt in a plate
add it in
and mix well
take your apples along with a peeler and a knife
peel it
quarter it and remove all seeds from inside..
I will advice you to chop it really really finely or grate it…
take it in a bowl
take some flour and toss over it
mix well so that everything is tossed with the flour…This helps the apples from sinking to the bottom..
now take a egg in a bowl
add sugar to it
add some vanilla in
and mix well
pour in some oil
and half of the flour mixture
add all buttermilk in
and mix well
add other half of the flour mixture
and mix in
now add the apples in
and mix well
Take your muffin mould and put muffin cases in it
fill it completely with the batter
now take sugar and cinnamon in a bowl
and mix well
sprinkle it on top
all baked
remove and allow to cool down
These muffins have a little crunchy top layer and fluffy interior

    Tasty looking muffins.
    Do you think maybe adding a little baking soda to the batter would leaven it more; or perhaps it doesn't need it.

    Hi aarthi. Inspried from ur baking and grilling recipes. so, brought a convection microwave. As you are a very good web surfer, Plz suggest me some sites to purchase baking stuff like cake tins, muffin trays, muffin wraps, pastry brush, hand mixers etc for minimal prices.

    Hi aarthi..I have non stick muffin molds.Is muffin cases really necessary? or we can pour the batter directly in the molds.ANd if yes Do we have to grease the molds before pouring batter?

    @Anonymoussome muffins need them, because they may stick. you can spray it with oil and then pour and bake too.
