    Christmas is all about fruit cakes. Delicious, fruity, rich cakes will make your christmas so special. I already have a chocolate plum cake recipe in this blog which is tried by many. For all of you asked for egg free fruit cake recipe here is a delicious moist eggless plum cake which turned out so soft and fluffy.

    About Eggless Fruit Cake

    Fruit cakes also known as plum cake is a Christmas holiday must make recipe. Packed with lots of dried fruits that are soaked in rum or orange juice (for non-alcohol version) and festive spice mix taste and smells so wonderful.

    The main ingredient for Plum cake is made with plain flour, sugar, spices, butter or oil, dried fruits and nuts. Authentic recipe has eggs added in the cake for moist fluffy texture and it makes the cake holds it texture better. Plum cake without eggs are amazing too, particularly this recipe for eggless fruit cake has super moist texture that holds and slices beautifully. I used my eggless vanilla sponge cake recipe for this plum cake with slight modifications.

    Eggless fruit cake is not at all dry. It has the moist texture because of the oil, curd and milk combination added in the cake. I used a dark caramel in the cake which gave the iconic dark colour, smell and flavour to the cake. If you are new to making caramel, check my caramel custard recipe post for detailed instructions.

    Dried Fruits - You have to use seedless black raisins in plum cake. Raisins with seeds is not recommended. You can add a handful of sultanas in the cake. Dates, tutti fruitti, candied mixed peel, orange zest, prunes are used.

    Plain Flour - You can use whole wheat flour in this cake. It may makes the cake a bit dense in texture but still it will taste great.

    Leavening Agent - baking powder and baking soda adds to the soft texture of the cake. It also makes the cake rise.

    Curd & Milk - these both are used in the cake which acts as egg substitute. It makes the cake extra soft and moist.

    Sugar - Refined sugar is used in the cake batter, it is made into caramel as well.

    Spices - ground spices like cinnamon, cloves, cardamom and ginger are the basic spices that goes in a plum cake. You can add pumpkin pie spice mix if you have that on hand.

    Oil - I used refined oil which is flavourless. Oil makes the cake super moist. You can use melted butter in place of oil.

    Vanilla Extract - adds flavour to the cake.

    Optional - grated orange zest, lemon zest, chopped nuts can be used in the cake.

    How to Make Eggless Fruit Cake or Plum Cake

    Fruit Cake or plum cake has an iconic golden brown colour to it. It is achieved by the dark caramel which we use also from the black raisins.

    Personally I prefer to use more seedless black raisins which makes the cake rich and gives the festive scent to it. But you can increase or decrease the dried fruits quantity as required.

    Some people don't prefer dried fruits in their cake. You can opt to try my gingerbread cake or this eggless vanilla cake. If you are into brownies with festive taste, try my fruit cake brownies.

    Expert Tips

    • You can use any dried fruits and nuts you prefer. But raisins are essential for perfect tasting plum cake.
    • Instead of orange juice for boiling the fruits, you can use rum or any liquor of choice.
    • You can reduce the quantity of dried fruits.
    • Don't over bake the cake, else it may turn hard.

    How to Make Eggless Fruit Cake (Step-wise Pictures)

    2 Ways to Use Dried Fruits in this Cake

    1)For traditional and authentic recipe. You have to soak dried fruits in alcohol like rum or brandy. You can soak them for a month or more. Minimum time to soak dried fruits in rum is 10 hours to 1 day for better flavour absorption.

    Take 2 to 21/2 cup of mixed dried fruits including seedless black raisins, dates, tutti fruitti, candied peels in a bowl. Pour 1 cup of rum over the dried fruits and mix well. Leave it to steep at least 1 day and use accordingly.

    2) If you don't prefer alcohol. You can cook the dried fruits in orange juice for 5 minutes. This will make the dried fruits softer and makes the cake super moist.

    For 21/2 cup of dried fruits, you can use 1 cup of orange juice. Take them in a sauce pan or saute pan and cook them for 4 to 5 minutes. Allow them to cool completely and use accordingly.

    Pre-preparation

    1)Preheat oven to 180 degree C. Line a 8 or 10 inch (20 to 24 cm) round cake pan with parchment paper. Grease the parchment paper with some oil or butter and set aside.

    Making Caramel.

    3)Dark caramel is essential for making plum cake. The caramel adds flavour and colour to the cake. Take a frying pan, add sugar and cook till it gets caramelised. For making smooth caramel, don't stir the sugar with spoon or spatula instead just swirl the pan which makes all the sugar get golden in colour.

    4)Once the sugar turns dark amber in colour. Add in ¼ cup water and swirl the pan again till it gets smooth. Be careful when you add water to the hot caramel as it may splatter on you.

    5)Now dark caramel is ready. Set aside to get warm.

    Dry Ingredients

    6)You start by mixing the dry ingredients together in a separate bowl. Take plain flour, salt in a mixing bowl.

    7)Add in your mixed spice powders, baking powder and baking soda. As far as the spices, I used 1 tsp of ground ginger, 1 tsp ground cinnamon, ¼ tsp ground nutmeg, 1 tsp ground all spice. You can add cardamom, black pepper as well.

    8)Mix the dry ingredients into the flour and set aside.

    Making Eggless Plum Cake Batter

    9)The cake batter for fruit cake is very basic and simple. Take a large mixing bowl. Add in yogurt (curd) and milk.

    10)Add in oil or melted butter. Add a splash of vanilla extract.

    11)Add in sugar and mix well into the yogurt, milk mixture till the sugar is dissolved.

    12)Add in the dry ingredients which we mixed earlier along with the dried fruits. You can use any method of preparing dried fruits into the batter.

    13)Mix the dried fruits and dry ingredients gently using a spatula. Eggless fruit cake batter is ready.

    Baking Eggless Fruit Cake

    14)Transfer the cake batter into a round cake pan and spread evenly. Pop it inside a 180 degree C preheated oven for 1 hour and 20 minutes. Insert a tooth pick to check whether the cake is baked or not. If the tooth pick comes out clean then the cake is baked. Else bake longer. When you press the top of the cake gently it should spring back.

    Top Tip: During the mid way of baking, If you see the plum cake is getting too dark in colour. Tent a foil or parchment paper on top loosely. This prevents the cake from getting too dark or burnt on top.

    15)Once the plum cake is baked. Remove the cake from oven, let it cool in the mould for 15 minutes before inverting to a serving plate. Leave to cool completely before slicing and serving.

    Ingredients

    • 2 cups Plain Flour 240 grams
    • ¾ cup Sugar 150 grams
    • ½ cup Oil 120 ml
    • ½ cup Yogurt | Curd 120 ml
    • ½ cup Milk 120 ml
    • 2 tsp Vanilla Extract
    • 1¼ tsp Baking Powder
    • ½ tsp Baking Soda
    • ½ tsp Salt

    Dried Spices

    • 1 tsp Ground Cinnamon
    • 1 tsp Ground Ginger
    • ¼ tsp Ground Nutmeg
    • ½ tsp Ground Cardamom
    • 1 tsp Ground All Spice

    Dried Fruits

    • 1½ cup Seedless Black Raisins
    • ¼ cup Dates
    • ¼ cup Prunes
    • ¼ cup Tutti Fruitti
    • ¼ cup Candied Peels
    • 1 cup Rum or Orange Juice

    For Caramel

    • ⅓ cup Sugar 65 grams
    • ¼ cup Water 60 ml

    Instructions

    • You have to start soaking the dried fruits in rum at least a day in advance. You can leave them to soak in rum upto a month or year. If you don’t want to use rum you can boil the dried fruits in orange juice for 5 minutes to soften them. Cool them down and use as required.
    • Preheat oven to 180 degree C (360 degree F). Line a 8 inch or 9 inch round cake pan with parchment paper. Grease it slightly with oil and set aside.
    • Make caramel. Take a frying pan, add sugar and cook till it gets caramelised. For making smooth caramel, don't stir the sugar with spoon or spatula instead just swirl the pan which makes all the sugar get golden in colour. Once the sugar turns dark amber in colour. Add in ¼ cup water and swirl the pan again till it gets smooth. Be careful when you add water to the hot caramel as it may splatter on you. Set aside to cool.
    • Mix plain flour with salt, dried spice powders, baking soda and baking powder. Mix well and set aside.
    • Take curd, milk, oil, vanilla and sugar in a mixing bowl. Mix till sugar is melted. Add in dry ingredients which we have mixed earlier, soaked dried fruits and caramel. Mix gently to form a smooth batter.
    • Transfer the batter in the prepared baking pan. Place the cake pan inside oven and bake for 1 hour and 20 minutes. Insert a tooth pick to check whether the cake is baked or not. If the tooth pick comes out clean then the cake is baked. Else bake longer. When you press the top of the cake gently it should spring back. During the mid way of baking, If you see the plum cake is getting too dark in colour. Tent a foil or parchment paper on top loosely. This prevents the cake from getting too dark or burnt on top.
