Christmas is all about fruit cakes..Delicious, fruity, rich cakes will make your christmas so special. I already have a chocolate plum cake recipe in this blog which is tried by many of you. But now, I am getting many request from you all to post a new fruit cake recipe..
How can i ignore your request, so i made a eggless plum cake which turned out so soft and fluffy. I also made a microwave plum cake recipe for those who dont have a oven which i will post soon. I hope you will try this and let me know how it turned out.
Preparation Time: 15 mins
Cooling Time : 30 mins
Baking Time : 40 to 45 mins
Makes – 10 to 12 generous slices
Ingredients:
Raisans – 100 grams
Dates – 100 grams chopped
Nuts – 1/2 cup chopped finely (Cashews, Walnuts, Almonds)
Tutti Fruity – 1/2 cup (Mixed colour)
Water – 1 1/2 cup
Orange Juice – 1/2 cup
Vegetable Oil or Melted Butter – 1/2 cup
Orange Zest – 2 tblspn
Vanilla Essence – 2 tsp
Dry Ingredients:
All Purpose Flour / Maida – 1 3/4 cup
Sugar – 1 cup
Baking Soda – 1 tsp
Cinnamon powder / Pattai podi – 1 tsp
Cardamom powder / Yelakai podi – 1 tsp
Cloves – 1/4 tsp powdered
Salt – 1/2 tsp
Method:
Grease a bundt pan with oil, sprinkle with flour and dust it all over the pan and tap off the excess. Set aside till use.
Take raisan, dates, tutti fruity, water in a sauce pan. heat it up and simmer for 8 to 10 mins.
Take it off the heat, add in orange juice, oil, vanilla essence, orange zest and mix well. Remove it off the heat and allow it to cool down.
Preheat the oven to 170 Degree C / 350 Degree F.
Now take all the dry ingredients in a bowl and mix well.
Pour the cooled fruit mix over the dry ingredients and mix well.
Pour this batter in the prepared pan and bake it for 40 to 45 mins.
Remove it from oven and let it cool down for 20 mins, now invert the cake to a cooling rack and let it cool completely.
Slice and Serve.

a splash of vanilla |
Mix that well and let it cool completely.. |
Now mix the dry ingredients, take flour in a bowl |
Add sugar |
Add in the spice powders |
Add in baking soda and salt |
mix that well |
now the mix is cooled |
add the fruit mix |
mix well |
Pour the batter in |
bake it |
Serve |

@Shabeen I baked thise, in my mom's place. I baked it in Koryo OTG oven. And in my house i use morohy richards 40 liter OTG oven.

@Shaheenif u use wheat flour, it wil turn our hard and dense..yes u can use normal mould..
