    Gingerbread Cookies

    Gingerbread cookies is one recipe which i wanted to bake for a long time. Finally made this year and it was so much fun making them and decorating time. I just went for a plain white icing and nothing fancy. You can take your own time and decorate it as you like.

    About Gingerbread Cookies

    Gingerbread is a festive holiday cookie recipe which is made all around the world specially during Christmas season. The cookie dough is made with butter, brown sugar, treacle or molasses, spices like ground ginger, cinnamon, all spice, nutmeg and salt. The dough is shaped and cut using specially made gingerbread mould and baked.

    Baked gingerbread cookies is decorated with sugar icing and sprinkles. Traditionally the cookies has a hole on top and is used to hang on Christmas tree. This is a festive. cookie that is made along with family and kids. Same cookie dough cut in the right proportion can be made into Gingerbread house.

    Gingerbread cookie dough usually has eggs added in them. But this recipe is modified accordingly so it is egg free.

    Gingerbread Cookies Ingredients

    All Purpose Flour - Plain flour also known as refined flour or maida is used in the cookie dough. Using whole wheat flour may affect the texture of the cookies.

    Brown Sugar or Demerrara Sugar - the cookies has a molasses like flavour which is achieved by the addition of brown sugar.

    Honey - traditionally gingerbread cookies has molasses or treacle used. But you can use honey instead.

    Unsalted Soft Butter - as mentioned butter has to be unsalted and soft and even mixing.

    Baking Powder & Baking Soda - raising agent helps the cookies expand and crisp up.

    Spice powders - a combination of Ginger Powder, Cinnamon Powder, Cloves Powder, Nutmeg Powder is used to flavour the cookies.

    Gingerbread Cookies Preparation

    Gingerbread dough - Take butter, brown sugar, honey in a bowl and whisk well till creamy. Add in baking powder, baking soda, salt and spices and whisk well. Now add in flour and shape it into a dough. Wrap it in cling wrap and chill in fridge for at least 1 to 2 hours.

    Shaping & Baking Cookies - Preheat oven to 180 degree C / 360 degree F. Now roll this between two sheets of plastic wrap and cut using gingerbread shape cutter. Arrange it in a baking pan which is lined with parchment paper. Bake for 10 mins. Now remove from oven and cool completely.

    Decorating - Now make icing, take icing sugar and milk in a bowl and whisk till thick and creamy. Pour this in a ziploc bag and snip off the edge. Decorate the cookie as you like and decorate with sugar silver balls.

    How to Make Gingerbread Cookies (Stepwise Pictures)

     

    take ingredients for cookies
    take soft butter in a bowl
    add brown sugar 
    add in honey
    baking powder, baking soda, salt and spices
    mix well
    add flour
    mix well
    shape it into a dough
    place it in a sheet of plastic wrap
    cover it up and chill in fridge for 1 to 2 hours
    i used the plain gingerbread cutter and the unique cutter which i got few years back
    now take the dough out, place it between two sheets of plastic wrap
    roll it out
    peel off the top layer of plastic wrap
    cut out cookies
    like this
    all done
    arrange it in a baking pan, place this in fridge for 10 mins if the cookies are too warm
    bake till done
    remove to cooling rack and cool completely
    take icing sugar in a bowl
    add milk
    make it into a thick paste like
    spoon this into ziploc bag
    cut off the edge
    decorate as you like
    done
    enjoy

    Expert Tips

    • You can use a combination of any spices that you like including all spice.
    • Use unsalted butter so the cookies don't turn salty.
    • You can make the dough upto 3 days in advance and store in fridge.
    • Don't over bake the cookies, else it may get too hard.

    Ingredients

    For Cookie Dough

    • 1¼ cup All Purpose Flour 150 grams
    • ¼ cup Brown Sugar 50 grams
    • ¼ cup Honey 60 ml
    • ¼ cup Unsalted Soft Butter 50 grams
    • ½ tsp Baking Powder
    • ½ tsp Baking Soda
    • ¼ tsp Salt
    • 1 tsp Ground Ginger
    • 1 tsp Ground Cinnamon
    • ¼ tsp Ground Cloves
    • ¼ tsp Ground Nutmeg

    For Icing:

    • ½ cup Icing Sugar
    • 1 tbsp Milk

    Instructions
