I have been hunting for good recipes using millets. I wanted to make any simple lunch recipes using millets so we can include it in our lunch. Curd rice is one of my all time favourite, i have already made it with pearl millet..So i decided to try it with this barnyard millet as well, I made it and it was so comforting..

This is quite simple to make and i am sure you will never miss you rice in this. Because it does taste like normal curd rice. But it is so healthy than that.

Cooking Time : 25 to 30 mins
Serves - 4 to 5
Kuthiraivali / Barnyard Millet - 1 cup
Water - 3 cup
Curd / Yogurt - ½ Cup
Milk - 2 cup or adjust
Salt to taste
Oil - 1 tblspn
Mustard Seeds / Kaduku - 1 tsp
Urad dal / Ulundu Paruppu - 1 tsp
Asafoetida / Hing / Kaya Podi - ¼ tsp
Green Chillies - 2 chopped finely
Ginger - 1 tsp grated
Curry leaves - a sprig
Coriander leaves a handful finely chopped
Take millet in a bowl and wash well. Add it to pressure cooker and cover with water. Pressure cook for 2 whistle, simmer for 5 mins. Turn off the heat and let the steam go all by itself. Open the cooker and mix well. Allow this to cool.
Now add curd, milk, salt and mix well.
Make seasoning by heating oil and adding all the seasoning ingredients and saute for a min. Add that to the curd rice and mix well.
|Take millet in a cooker|
|Wash it well|
|Cover with water|
|Now rice is done|
|Mix well and leave it to cool down completely|
|Add in salt|
|Now take seasoning ingredients|
|Heat oil or ghee in a pan|
|Add in mustard and urad dal|
|Add in asafoetida|
|add in ginger, chillies and curry leaves|
|mix that around|
|add in coriander leaves|
|I added some more milk to adjust the consistency of the rice|
|add in seasoning|
|Enjoy with pickle.|
