    Mango Chia Pudding Recipe

    Mango pudding is one of the must make recipe during this mango season. This version is super healthy since it has chia seeds added in them. This will make best breakfast option.

    About Mango Chia Pudding Recipe

    The word pudding is thought to derive from the Latin word botellus, which means sausage, possibly leading to the French boudin, which derives from the Latin botellus, which means small sausage, and refers to encased meats used in mediaeval European puddings. Another comes from the West German pud, which means to swell.

    This mango chia pudding can be customized as per your liking. You could add coconut milk or regular milk in this. You could even add any sweetener like honey, maple syrup or sugar. If your mangoes are too sweet you can even skip adding sugar in this.

    Mango Puree 

    Mango purée is a pulp made from fresh mangoes that has been mashed or blended. purée can be made in a blender or food processor, or by hand with a fork or potato masher for a chunkier result. To make mango purée, use any type of diced mango, such as Ataulfo or Alphonso.

    Chia seeds 

    Chia seeds have a mild, nutty flavour that complements both sweet and savoury dishes well. They have a very subtle flavour, though some compare it to a poppy seed or an alfalfa sprout. The dry chia seed has a crunchy and dense texture when raw.

    Coconut Milk 

    Coconut milk is extremely versatile, and it can be used in both sweet and savoury dishes. Chongchitnant explains that in largely dairy-free Thai cuisine, its used to add creaminess and fat to a wide range of dishes, from sauces and dressings to curries and stews to puddings and dessert soups.

    Ingredients
      

    • Mango Puree - 2 cups
    • Chia Seeds - 2 tblsp
    • Water- ½ cup
    • Coconut Milk or Milk - 2 cups
    • Honey or Sweetner of choice - as needed
    • Ripe Mangoes - 1 cup chopped finely

    Instructions
     

    • Take chia seeds in a bowl, add water and leave to soak for 10 mins.
    • Take mango puree, honey, coconut milk and mix well. Add soaked chia and mix well.
    • Add in mangoes and mix well.
    • Spoon it into bowls. Chill for few hours.
    • Serve cold.
