Thai Sweet Chilli & Garlic Sauce / Thai Sweet Chilli Sauce / Homemade Sweet Chilli Sauce

This is one stuff which will blow your socks off, it is seriously addictive. Once you start consuming it, you should find excuses to make it again and again. I have been longing to make this sauce, ever since one of my reader(and i thank him/her) requested this recipe a long time back. But i feel so sorry that i didn’t try this before, it is that good.

So yesterday, i was going through my to do recipes, and found this sauce lying in the corner longing to be made. Immediately i got into actions. I googled a bit and found that i have all the ingredients on hand(This doesn’t need that big list too). So i made it, in less than 20 mins everything came together beautifully. Now i have a jar of smartness on my hand. Time to whip up some fried goodies. My favorite is spring rolls, whats urs?

Preparation Time: 10 mins
Cooking Time : 15 mins

Ingredients:

Dry Red Chilli – 10
Garlic – 10 medium size cloves
Water – 3/4 cup
Vinegar – 1/2 cup
Sugar – 3/4 cup
Salt – 1 tsp or to taste
Cornflour / Cornstarch – 1 tblspn
Cold Water – 2 tblspn

Method:

Take water in a sauce pan and bring that to a boil.

Take dry chillies in a bowl. Cover it with boiling water and let it soak for 10 mins.

Now take that in a blender along with water. Add in sugar, garlic, salt and vinegar in this.

Blend it to a puree. It will be watery.

Now pour this in a saucepan and bring it to a boil.

Boil this for 10 mins on a low heat so that the flavours will infuse together.

Now mix cornflour with water. Pour this over the sauce and mix well.

It will start thickening. At one point, the sauce will start to double boil.

At this point switch off the flame and let it cool completely.

Store this in a dry air tight glass jar in fridge.

Serve this as a dipping sauce with any fried food.


Notes:
1)This will last for months in the fridge.
2)Always use dry spoon while serving this.
3)You can adjust the spiciness by decreasing or increasing the chilli level.

Pictorial:

Take all your ingredients

Boil water in a sauce pan

Take dry chillies in a bowl

Pour in boiling water over this

Let it steep for a while

Now take the chillies along with water in a blender

Add garlic cloves in that

Add in sugar

And some salt

Pour in vinegar

Time to blend this

Blend them

It will look watery

Pour that into a sauce pan

Boil it up

Let it boil for few mins

Boil till the flavour infuse

Now take cornstarch

Mix it with water

Pour that into the sauce pan

Mix that well

Boil it till it gets  little thick

At a point, the sauce will double boil

Allow to cool down

Store in a air tight bottle

Enjoy

I love this as a dipping sauce

    This was delicious. The chicken cooked up very crispy. I steamed sugar snap peas and threw them in at the last minute. Great flavor. I made the sweet chili sauce, too. Easy , healthy and yummy.

    Hi Aarthi.. I tried this today evening.. We all loved the sauce.. Had it as a side dip with chicken momos and it tastes heavenly.. This is the best sauce.. Thank you so very much..
