    Tofu Bhurji Sandwich Recipe

    Tofu bhurji sandwich is a simple, quick and super healthy option that you can enjoy anytime of the day. The sandwich can be made in less than 15 minutes. Serve this sandwich along with tomato ketchup, mayonnaise or green chutney of your choice.

    Sandwiches are always our favorite and this tofu bhurji is both tasty and a healthy option. I make this quite often, I either use paneer or tofu in this, some times I even use egg in this.

    About Tofu Bhurji Sandwich

    Tofu is a healthy, vegetarian and protein rich ingredient made using soy beans. If you are looking to include plant based protein in your meals, then this tofu sandwich is a great choice. 

    The term "bhurji" means scrambled and tofu bhurji is a healthy twist to the classic paneer bhurji sandwich. In this version, paneer is replaced with tofu to make a light and vegan friendly sandwich that still tastes just as delicious. 

    To make this sandwich, crumbled tofu is cooked with onions, tomatoes and basic Indian spices to create a flavourful filling. Once ready, place between slices of bread and toasted or grilled until golden and crisp.

    This is one of the easiest sandwich you can ever make. I made in a toaster but you can make this in normal tawa or a grill pan if you want those fancy grill marks. 

    This is a great recipe to put in kids lunch box. If making for kids you can even add some grated cheese over it and make it . It will be so tasty. This sandwich along with some ketchup and some fruits will make a great filling and healthy sandwich.

    The tofu bhurji itself is versatile and can be enjoyed in many ways other than making sandwiches. You can roll it into chapati, stuff it inside dosa or use it as a filling for parathas. You can also replace tofu with paneer or even soy keema and adjust the spice levels based on your preference.

    Ingredients

    • Bread slices : You can use any bread of your choice like white bread, wheat bread, brown bread or even sourdough bread.
    • Tofu : Use fresh and firm tofu for best taste. You can also check out my homemade tofu recipe. 
    • Oil : Oil used to saute the ingredients. Any neutral cooking oil can be used. 
    • Onion & Tomato : Finely chopped onions and tomatoes form the base of the bhurji.
    • Ginger garlic paste : You can use either freshly grounded or store bought paste based on your convenience. 
    • Spice powder : Turmeric powder, chilli powder, coriander powder, cumin powder and garam masala powder are used.
    • Salt & sugar : Salt enhances the overall flavour of the filling, while a small amount of sugar helps to balance the tanginess.
    • Coriander leaves : Coriander leaves are added at the end for garnishing.

    Step by Step Pictures

    1)Take firm tofu block. You can press them slightly to remove excess water content.

    2)Crumble the tofu roughly.

    3)Heat oil in a kadai, add in onions.

    4)Sprinkle salt and sugar. Cook till it turns golden.

    5)The onions should get golden brown in colour.

    6)Add in ginger garlic paste and saute for couple of minutes.

    7)Add in spice powders into the oil and cook for few seconds till aromatic.

    8)Add in the tomatoes. Mix it well with the onions and spices.

    9)Add a splash of water and cook till the tomatoes turn mushy.

    10)Stir in between and cook till tomatoes get mushy.

    11)Add in the crumbled tofu and mix well.

    12)Stir tofu into the masala and cook for 2 to 3 minutes until tofu is heated through. Add coriander leaves and toss well.

    13)Tofu filling is ready to the sandwich.

    14)Now lets assemble the sandwich. Take couple of bread slices. Spoon ½ cup of filling in.

    15)sandwich with other bread.

    16)Apply oil or butter on top of bread or in toaster. place it on a toaster and cook till golden.

    17)You can cook in a pan as well. Now it is golden and crispy.

    18)Enjoy sandwich hot.

    Expert Tips

    • Always use fresh and firm tofu. Avoid tofu that smells sour or slimy as it affects both taste and texture. 
    • If your tofu has excess water, press it for a few minutes to remove moisture. 
    • Adjust the spice levels by adding more green chilli or spice powder if you like to keep it spicy. 
    • Don't overcook the tofu, just saute for a minute so it stays soft and moist. 
    • Add little milk or fresh cream if you want a creamy and soft texture in the bhurji like paneer bhurji. 
    • Toast the sandwich with butter on a pan or grill for a crispy golden texture and flavour. 

    Storage and Serving

    Store the leftover tofu bhurji in an airtight container. It stays well in the refrigerator for 2 to 3 days. 

    You can also use the leftover tofu bhurji for making it as a filling for wraps, rolls, dosai or paratha. Or even serve it with rice and salad for a complete meal.

    Q. Is tofu bhurji healthy ?

    Absolutely, it is healthy. Tofu is rich in plant based protein and nutrients like calcium and iron. So this sandwich makes a healthy option for both adults and kids or those looking for simple, vegan friendly recipes. 

    Q. Why is my tofu bhurji bland ? 

    Tofu itself has a very mild taste, so it needs to add enough spices and chillies for the proper seasoning taste. 

    Q. Can I add vegetables to this bhurji ? 

    Yes, this recipe is so versatile that you can add other vegetables like capsicum, carrot, peas or any vegetables you like for extra flavour and texture. 

    Q. Can I replace tofu with something else ? 

    Yes, you can replace tofu with paneer, soy keema, potato or even with chicken keema, scrambled egg to make this sandwich.

    Ingredients

    For Making Tofu Bhurji

    • 1 tablespoon Sunflower Oil
    • 1 medium Onion chopped finely
    • 1 teaspoon Salt to taste
    • 1 medium Tomato chopped finely
    • 1 tablespoon Ginger Garlic Paste
    • ½ teaspoon Sugar
    • 2 teaspoon Red Chilli Powder
    • 2 teaspoon Coriander Powder
    • ½ teaspoon Turmeric Powder
    • 1 teaspoon Cumin Powder
    • 1 teaspoon Garam Masala Powder
    • 2 cup Tofu crumbled

    For garnishing

    • 2 tablespoon Coriander leaves finely chopped

    For Sandwich

    • 8 slices Brown Bread
    • 4 tablespoon Oil or Butter

    Instructions

    • Add in the spice powders and tomatoes. Add a splash of water and cook till the tomatoes turn mushy.

    • Take 2 bread slices, spoon ½ cup of filling in, sandwich with other bread.
