    About Vegetarian Taquitos

    Crispy Vegetarian taquitos are any filling that is stuffed inside tortilla and rolled tight and fried till crispy. This is a popular mexican snack which is known all over the world for its taste.

    Taquitos are usually made with meat filling or bean filling. Shredded chicken can be used in this as well.

    You can fry the taquitos which are more traditional way of making them. I have included Vegetarian Baked Taquitos, are kid-friendly and much healthier than deep-fried. By baking the taquitos, the tortillas still turn out incredibly toasty and crunchy and the filling still gets melty and gooey. The one thing that will be missing in the baked taquitos are the oily grease.

    You can freeze the taquitos once you make them. So you can make taquitos whenever you need.

    How to Make Baked Vegetarian Taquitos

    Step 1: 

    Preheat oven to 400 F. You can in fact use toaster oven to bake taquitos, Air fryer can also be used in this process.

    Step 2:

    Mix 3 tablespoon Cream Cheese, ½ cup Capsicum, ¼ cup Onion, ¼ cup Tomato, ½ teaspoon Red Chilli Flakes, ½ teaspoon Oregano, Salt, Black Pepper and Mozzarella Cheese in a bowl, mix well and set aside.

    Step 3: 

    Spread the filling in the tortilla and roll it right. Secure it with tooth pick if needed. But in baking you don't need to follow this step.

    Step 4: 

    Place the taquitos seam-side down on a foil-lined cookie sheet, spray the tops lightly with cooking oil and bake for 25 minutes.

    Ingredients
      

    • 4 Chapati or Tortilla
    • 3 tablespoon Cream Cheese
    • ½ cup Capsicum
    • ¼ cup Onion
    • ¼ cup Tomato
    • ½ teaspoon Red Chilli Flakes
    • ½ teaspoon Oregano
    • 1 teaspoon Garlic powder
    • Salt to taste
    • Black Pepper powder to taste
    • 1½ Mozzarella Cheese grated
    • 3 tablespoon Coriander leaves
    • Oil for shallow frying
    • Salsa
    • Mayonnaise

    Instructions
     

    • Mix all ingredients in a bowl, mix well and set aside.
    • Spread the filling in the tortilla and roll it right.
    • Secure it with tooth pick and shallow fry till crisp. Keep rotating and remove toothpick carefully once half fried.
    • Drain onto some paper towel.
    • Serve with salsa, mayo.

    Notes

    • I used leftover chapati, you can use readymade tortilla like corn tortilla, flour tortilla or whole wheat tortilla.
    • You can add any finely shredded vegetables like cabbage, carrots in the filling.
    • Refried beans can be used instead of cream cheese for more mexican touch.
    • Tomatoes can be skipped and a spoonful of salsa can be added in the filling.
    • Fry the taquitos on low to medium heat till crispy on all sides.

    • Taquitos are best served with salsa, sour cream and guacamole.

    Vegetarian Taquitos Recipe with Step by Step Pictures

    1)Take cream cheese in a bowl.

    2)Add in finely chopped onions, tomatoes, capsicum and coriander leaves

    3)Add in oregano, red chilli flakes and garlic powder. Season with salt and pepper too.

    4)Add in grated mozzarella cheese. Mix well and set aside.

    5)You can use chapati or tortilla for this.

    6)Spoon in filling.

    7)Roll it tight

    8)Secure with tooth picks

    9)Shallow fry till golden on both sides. You can remove the tooth picks carefully half way through.

    10)Remove to a paper towel.

    11)Serve hot.

    Tips & Tricks
