1)Cut the chicken into two slices so it cooks faster without drying out.
2)If you can get use panko breadcrumbs which gives you really crispy exterior.
4)Dont over bake.
Baking Time : 20 mins
Boneless Chicken Breast – 2
Olive Oil – 2 tblspn
Salt to taste
Red Chilli flakes to taste
Panko Breadcrumbs or any breadcrumbs – 1 cup
Parmesan Cheese – 3 tblspn (optional)
For Pineapple Salsa:
Pineapples – 2 cups chopped into small pieces
Red Bell Pepper – 1/4 cup chopped finely
Green Chilli – 1 deseeded and chopped finely
Coriander Leaves – 2 tblspn finely chopped
Lemon Juice – 1 tblspn
Salt to taste
Sugar – 1.5 tblspn or to taste
Preheat oven to 200 degree C. Take a baking pan and add 1 tblspn of oil to it and spread evenly. Now pop this in oven and let it heat up for 10 to 15 mins.
First lets make the pineapple salsa. Take all the ingredients in a bowl and toss well. Set aside till serving.
Now take the chicken and pat it dry, slit it open so each chicken gives you two chicken breast.
Now season this with salt and chilli flakes and rub on both sides of the chicken. Now drizzle 1 tblspn of oil over it and set aside.
In a plate take panko crumbs. Dip each chicken in the crumbs and coat on both sides. Now sprinkle the top with parmesan cheese.
Now take the hot baking pan from oven, take the chicken and place it on the pan. Pop it back in oven and cook for 15 mins, now flip over and cook for another 5 mins.
Now remove this from oven and serve with pineapple salsa.

|now dip the chicken in panko breadcrumbs|
