Aval Payasam Recipe with step by step pictures. This recipe is simple and quick traditional dessert to make for any occasion. It is made using brown rice poha, banana, coconut, jaggery, coconut milk, nuts and ghee.

Payasam is something which is perfect to serve god on any special occasions. Specially for ganesh chaturthi there must be a payasam on the menu. So why not set all your regular payasam aside and give this Aval payasam a try. Each mouthful will be so delightful.
About Aval Payasam
Poha payasam also known aval payasam or poha kheer is a simple kheer recipe made with poha, jaggery, coconut milk. For a twist I added ripe banana and coconut which adds texture, aroma and taste.
You can skip banana for this kheer but I like the texture it gives the kheer.

Here are some of my tips and tricks for getting deeper tasting pradhaman or payasam. Whenever you use jaggery in a payasam, make sure you take your time to cook it well. Not only it deepens the flavour, but adds a caramel like note to it.
So as soon as I add jaggery to the kheer, I cook it together for 4 to 5 minutes. In this payasam, I added some ripe banana because my mom used to add it.
Ingredients

Poha - I used red rice poha or aval for this recipe. You can use white flattened rice.
Coconut - freshly grated coconut adds texture and taste to the payasam.
Coconut milk - thick or thin coconut milk, used as payasam or pradhaman. It adds flavour and taste.
Cardamom - i used this as flavouring. You can add a pinch of ground ginger for this payasam.
Jaggery - use molasses rich jaggery or sarkarai for this kheer. I used powdered jaggery which adds flavour.
Ghee - add good quality ghee for payasam.
Nuts - I used chopped badam, cashews, kishmish adds taste.

Aval Payasam (Step by Step Pictures)
1)Heat ghee in a pan. Add in poha and fry it little till it is toasted.

2)Toast for couple minutes until toasted.

3) Now add in banana, coconut, jaggery.

4)Mix well for 3 to 4 minutes till caramelized.

5)Pour in thin coconut milk and mix well.

6) mix well.

7)Cover and cook for 10 minutes. Now poha should be cooked.

8)Now the poha is thickened and cooked.

9)Add in cardamom powder.

10)Pour thick coconut milk and mix well.

11)Mix well and simmer for couple of minutes.

12)heat ghee in a pan, add in almonds or cashews and toast till golden.

13)Pour the fried badam with ghee over payasam and mix well. Serve.

Equipment

Ingredients
- 2 tablespoon Ghee
- 1 cup Poha | Aval | Flattened Rice I used Brown Rice Poha
- 2 small Ripe Banana peeled and chopped
- 1 cup Jaggery
- ½ cup Fresh Coconut grated
- 750 ml Coconut Milk (second extract - thin) 3 cup
- ½ teaspoon Ground Cardamom
- 250 ml Coconut Milk (First extract -thick) 1 cup
For Garnishing
- 2 tablespoon Ghee
- 2 tablespoon Cashews or Almonds
- 2 tablespoon Sultanas (Kishmish)
Instructions
- Heat ghee in a pan. Add in poha and fry it little till it is toasted. Now add in banana, coconut, jaggery. Mix well for 3 to 4 minutes till caramelized.
- Pour in thin coconut milk and mix well. Cover and cook for 10 minutes. Now poha should be cooked.
- Once poha is cooked, add in cardamom and mix well. Now add in thick coconut milk and mix well. Simmer for 2 more minutes.
- Heat ghee in a pan. Add in cashews or almonds and fry till golden. Pour this over the payasam. Mix well and serve.
