    I have tried so many versions of chocolate chips cookies in my blog. But so far this is the best one. It is chewy, soft and very moist and chocolaty. This cookies uses basic ingredients and a bit of baking technique to make the iconic chocolate chip cookies. The cookies can be made from start to finish in less than 30 mins. You don't have to worry about resting the dough in fridge. Just make the dough, scoop and bake! Simple as it!

    The cookies is so easy to make and make really huge cookies, which is perfect with a cup of milk. You can bake this and keep in freezer when serving microwave it for few seconds and enjoy. I usually make a big batch of this cookies as well as my oreo chocolate chip cookies and M&M Cookies.

    Butter

    I prefer to use unsalted butter in any baked goodies while I use salted butter in cooking. Using salted butter in baked stuff will make your cookies taste salty.

    Sugar

    I use a Combination of white sugar and brown sugar in the cookies. Brown sugar cannot be substituted specially in cookies, because it gives the required chewy texture to the cookies.

    Eggs

    Eggs are essential in this recipe. There is no alternative to eggs, unless mentioned. Skipping eggs in this recipe will affect your texture. If you are a vegetarian you can check my Eggless chocolate chip cookies recipe.

    Flour

    Plain flour | All Purpose Flour | Maida is used. However you can replace half wheat flour and half all purpose flour. Using full measurement of whole wheat flour will affect the texture of the cookies but in my opinion it will still taste great!

    Almond flour or coconut flour cannot be substituted because it is totally different ingredient.

    Chocolate Chips

    I prefer to use high quality chocolate chips in my cookies which makes it taste great also gives the proper melt when baked. I prefer hersheys or nestle brand. Semi sweet chocolate chips is what i used. You can use mini chocolate chips or regular size on

    Pro Tips for Best Chocolate Chip Cookies

    I have tried many chocolate chip cookies recipe on my website over the past few years. I have learned so many things from my own trial and errors. Over these many years of baking, here are my tips for the perfect chocolate chip cookie recipe.

    Measurements is Key

    Measure your ingredients properly. Invest in a good kitchen scale to be accurate. Don't swap ingredients unless mentioned. Make sure all your ingredients is in room temperature for even mixing.

    Using Quality Ingredients

    Use best quality chocolate chips which melts beautifully. Dark chocolate chips can be replaced with semi sweet chocolate chips too.

    Over Mixing & Over Baking

    Don't over mix the batter. If you over mix your batter, it will activate the gluten from the flour and makes the cookie tough. Also never over bake the cookies more than the mentioned time. Cookies may look soft when they are taken from the oven, but as they cool they will harden.

    Using Brown Butter in Baked Goodies

    When cooking butter for brown butter, make sure you cook them on lowest heat as possible. So the butter doesn’t burn. When using brown butter in your recipes, make sure you scrape out all the brown bits in the bottom of the pan to get maximum nutty taste. 

    Storing & Make ahead

    This cookie dough can be portioned onto some baking tray lined with parchment paper and frozen. Defrost it before baking.

    Brown Butter Chocolate Chip Cookies Recipe

    Brown butter is obsession and takes cookies and other baked goodies to the next level. Heating butter on low heat on a heavy bottom pan for 6 to 10 mins until the milk solids toast and turn golden brown gives you pure gold which is called as brown butter. Brown butter is used in baking recipe to add nutty taste to the baked goods. 

    When using brown butter in your recipes, make sure you scrape out all the brown bits in the bottom of the pan to get maximum nutty taste. Brown butter can be used in any recipes as you like, specially on chocolate cookies.

    Toasted brown butter is one of the essential component when making Turkish eggs too.  I made this exact same recipe using brown butter and it totally changed the game.

    Chocolate Chip Cookies with Fleur de Sel

    Fleur de sel is a moist, unrefined sea salt crystals which is often known as finishing salt. It is used over cookies once it is baked to give a sweet, nutty and salty hit. I strongly recommend to try this salt over "Brown Butter Chocolate chip cookies". It is addictive.

    Major Success Tips

    How to Bring Butter to Room Temperature Faster?

    Soft butter is essential in baking this cookies. When you use your finger to press the butter, it should be bit soft to touch but not melted.

    • Remove the butter from fridge atleast 1 hour before baking.
    • If you forget to remove the butter from fridge. You can use the microwave and heat the butter at 3 seconds interval. Within 10 seconds or so the butter will be perfect and soft.

    Baking Techniques for perfect cookies

    There are two techniques used in baking this cookies. You shouldn't line the baking tray or cookie sheet with parchment paper. The cookie dough has enough butter which will prevent the cookie from sticking to the tray. Also make sure you bake the cookies in the bottom rack of the oven. The heat from the bottom will make the cookies spread evenly faster and makes the cookie chewier.

    Troubleshooting Chocolate Chip Cookies

    If you find your cookies are spreading too much - Place the dough in fridge for 15 to 30 mins before baking.

    Dough is too runny - Add a tbsp of flour and place the dough into the fridge for 30 mins before scooping and baking.

    Butter is melted - Place the butter in fridge till it firms a little and use.

    Always do a Cookie test - I recommend you to bake 2 to 3 cookies first to do a test run and then bake rest.

    Bottom rack baking & Small Oven - My oven is bigger in size so the heat is not too intense in the bottom rack. If your oven is small and the cookies looks burnt in the bottom rack, then place the tray in the middle rack when baking.

    Best Chocolate Chip Cookies Step by Step

    1)Take soft unsalted butter in a bowl

    9)Add 1 tbsp hot water and mix well

    10)pour this into the cookie mixture.

    13) Mix and form into a dough. The dough will be little sticky. It is supposed to be like this.

    14)Now use an ice cream scoop to scoop out the dough. This measures around 1.5 tbsp of the dough.

    15)Arrange it on a baking tray that is not lined with parchment paper. This step is important. It makes the cookies spread evenly.

    16)Place the baking tray in the bottom rack of the oven. Baking the cookies in the bottom rack makes it spread evenly and create the chewy texture to it.

    17)Now the cookies are baked. You can sprinkle some chocolate chips on top of the cookies once they come out of the oven.

    Ingredients

    • ½ cup Unsalted Butter (110 grams)
    • ½ cup Caster Sugar (100 grams)
    • ½ cup Brown Sugar (100 grams)
    • 1 tsp Vanilla Extract
    • 1 large Egg
    • ½ tsp Baking Soda
    • 1 tbsp Hot Water
    • ¼ tsp Salt
    • 1½ cup All Purpose Flour (180 grams)
    • 1 cup Semi Sweet Chocolate Chips

    Instructions

    • Preheat oven to 180 degree C.
    • Take soft unsalted butter in a bowl.Add brown sugar, white sugar and vanilla into the butter and mix till creamy.
    • Now add in egg and whisk till creamy. Add in salt and mix well.
    • Add 1 tbsp hot water into ½ tsp baking soda and mix well. Pour this into the creamed butter and sugar and mix well
    • Add in flour and chocolate chips and mix well. the dough will be little sticky.
    • Using an Ice cream scoop scoop around 1.5 tbsp of the dough and place it on a baking tray that is not lined with a parchment paper. You should pop the cookie dough directly on the baking tray.
    • Now pop this in oven on the lowest rack of your oven and bake for 10 to 12 mins.
    • once baked the cookies would be beautifully spread and baked. Remove from oven and cool for 5 mins before Removing this to a cooling rack to cool.
    • store the cookies in an air tight container.
    • Serve with milk.

      When I make cookies bottom gets burned easily where as top would be still white. What am I doing wrong?
      For preheating I heat top and bottom rods. and for baking just bottom . Is that wrong? Waiting for your response
