    Biryani Masala Powder Recipe

    Biryani Masala powder is an aromatic roasted spice blend specially made for making biryani. It is made with a combination of whole spices freshly roasted and ground. You can use this to make veg biryani or non veg biryani like my chicken dum biryani or mutton biryani to make it flavourful and tasty. Learn how to make homemade biryani masala with step by step pictures and video. 

    Biryani Masala Powder

    Whenever I make biryani I use my own blend of regular spice powders like chilli, coriander, garam masala and cumin powders for making them. You can check out my coconut milk biryani and all the biryani recipes. It turns out delicious always.

     But I wanted to make my very own biryani masala powder for biryani which made me create this recipe. I made the masala and the aroma was just divine. I made biryani out of that and it tasted amazing just like the ones which you get in the restaurant.

    About Biryani Masala Powder

    Biryani is one of the most popular rice dish around India. Meat or vegetables is added with rice and cooked in an onion tomato base which is spiced heavily to create this delicious main dish. One of the main ingredient in making biryani are the spice powders. Normal recipe uses right proportion of chilli, coriander, garam masala, cumin powder.

    This biryani masala powder is an instant easy option for making biryani. You can make biryani easily using this spice blend. It has added chilli powder, coriander powder, garam masala whole spices which are roasted and ground into a powder. Biryani masala powder is packed with tons of flavour which enhances the biryani you make. 

    In this blog post, I am sharing an easy recipe for making biryani masala at home with step by step pictures and video.

    Biryani Masala Powder Ingredients

    Coriander Seeds - This along with chillies are added in right proportion for the biryani masala. You can use whole coriander seeds, where you have to add it in the beginning along with spices so it roast well. I used coriander powder which I added in the end after you switch off the flame. You can use any one of them. 

    Dry Red Chilli - If you prefer your biryani on the spicier side, you can use regular chillies. Else add Kashmiri chilli powder which is used in the end. You can use whole chillies or chilli powder depending upon your preference. 

    Cinnamon & Fennel Seeds  - these two adds sweet flavour to the biryani masala. It is well toasted to release all its natural sweetness. 

    Cumin Seeds - adds a nutty smokey aroma to the masala. 

    Bay Leaf & Kalpaasi - one of the main flavourings in biryani masala along with kalpaasi.

    Green & Black Cardamom - if you haven’t used black cardamom so far, you have to. It gives the unique aroma to biryani which you can usually relate to Kolkatta style biryani. 

    Other Spices - mace, star anise, black pepper, cloves adds to the flavour of the biryani masala.

    Difference between Pulao vs Biryani

    Pulao is a mild rice dish which heavily rely on whole spices as flavouring instead of spice powders. It has onions, chillies, mint, coriander leaves, ginger and garlic sautéed in oil or ghee. Meat or vegetable is added along with rice. Sometimes yogurt is added for the tangy flavour. 

    Biryani is a heavy spiced rice dish made with meat or vegetables cooked in a spiced onion tomato masala. It has variety of spice powders like chilli powder, coriander, turmeric, garam masala added. 

    How to make Biryani Masala Powder (3 Easy Steps)

    Roasting Spices - Take all the ingredients in a dry pan and roast it on low heat for 5 mins till it is well toasted. If using whole dry red chillies and coriander seeds add it along with other spices and roast for few minutes till aromatic. If you are using coriander and chilli powder, add it in the end, roast for few seconds and turn off the heat. Once Roasted, remove them to a plate and let it cool down for 5 mins.

    Blending - Take them in a blender and make it into a fine powder.

    Storing - Transfer this powder in a plate and let it cool completely. Now store this in an air tight container.

    How to Make Biryani Masala Powder (Stepwise Pictures)

    Roasting Spices

    1)Take all the spices in the kadai. Since I am making a small batch, I added all the spices in together. if you are making a bigger batch, you have to roast it one by one.

    2)Add in black pepper. In this recipe, black pepper can be skipped but it adds a wonderful aroma.

    3)You can break cinnamon stick into small pieces before roasting. Roast the spices by constantly mixing for even roasting. Now as you can see the spices are well toasted and looking golden. It smells even more aromatic.

    Adding Final Ingredients

    4)If you are using whole dry red chillies and coriander seeds, add it along with other spices and roast for few minutes till aromatic.

    If you are using coriander and chilli powder, add it in the end, roast for few seconds and turn off the heat. 

    5)I used Kashmiri chilli powder because I don't want my masala to be spicy. You can use half regular chilli powder and half Kashmiri as well. 

    6)Since I have used powdered spices, I turned off the heat immediately. The residual heat is enough to roast the spice powder.

    Grinding Biryani masala

    7)take the cooled roasted spice in a blender and powder.

    8)Now the spices are well ground into a fine powder. Transfer this powder in a plate and let it cool completely.

    9)Now store this in an air tight container.

    Expert Tips

    • If you are making the biryani masala in bulk, add one ingredient at a time and toast. 
    • In this recipe, I am using coriander and chilli powder. You can use whole chillies and coriander seeds as well. 
    • I used Kashmiri chilli powder because I don't want my masala to be spicy. You can use half regular chilli powder and half kashmiri as well. 
    • Make sure you roast the spices on low heat for even toasting without burning. 

    Serving & Storage

    For Making Biryani, You can use around 2 t0 3 tbsp of the spice blending depending on the amount of biryani you are making. You can store the biryani masala in an air tight container for upto 2 months.

    Equipment

    • Kadai or Cooking Pot
    • Blender

    Ingredients

    • 4 stick Cinnamon
    • 2 tbsp Fennel Seeds
    • 1 tbsp Cumin Seeds
    • 4 no Bay Leaf
    • 15 no Green Cardamom
    • 3 no Black Cardamom
    • 8 no Cloves
    • 5 no Mace
    • 6 no Black stone flower | Kalpaasi
    • ½ cup Kashmiri Chilli Powder (or 20 Dry Red Chillies)
    • 1 cup Coriander Powder (¾ cup Coriander seeds)
    • 3 no Star Anise
    • 1 tbsp Whole Black Pepper

    Instructions

    • Take all the ingredients in a dry pan and roast it on low heat for 5 mins till it is well toasted. Roasting the spices enhances their flavors and aromas, contributing to a rich and aromatic masala. Ready-made spices are getting expensive day by day as the is increasing due to inflation. so it is a good idea to have masala for different dishes at home and made by oneself. wonderful effort
