    Chilli Egg Recipe is a popular Indo-Chinese side dish made with boiled eggs, onion, ginger, garlic, capsicum and sauces. The process of making chilli egg is made with batter dipped fried eggs coated in a spicy sweet sauce. You can make chilli egg dry or gravy, both the recipes are shared in this blog post. Learn how to make spicy chilli egg dry or egg chilli gravy recipe with step by step pictures and video. Make sure you serve chilli egg with any Indo Chinese main course like fried rice or noodles.

    Chilli Egg 

    This is my favourite dish, I have made it quite few times, but haven’t blogged about it. Few days back I made it for dinner and decided to take pictures for the blog. Many of you have tried this recipe and loved it so far.

    Chinese style recipes are my absolute favorite, I love to make them quite often because of their taste. Everyone in the family loves it. Maha loves it so much too. Many viewers ask me how to get restaurant style taste in Chinese dishes. The reason behind the taste is MSG or Ajinomoto. I didn’t add it in this recipe, but If you want authentic taste you can add a touch of it in your Chinese dishes. Still I don't recommend it when you are feeding your kids.

    About Chilli Egg (Dry & Gravy)

    Chilli egg is an Indo Chinese recipe which is very popular in restaurants specially with Eggetarian. It is very similar to chilli paneer and chilli chicken, but made with eggs. Boiled egg is dipped in a flour battered fried crispy. Fried eggs is tossed in a spicy sauce which taste delicious. 

    Chilli egg is super easy to make, all you need is garlic, onions, spicy chillies and Chinese style sauces. The recipe is very customisable, you can add bell peppers or celery as well. This recipe can be made two different ways depending on how you prefer your chilli egg. If you are serving this as an appetiser you can make it dry. if you are going to have it with fried rice or noodles, make it slightly saucy.

    Chilli Egg Ingredients

    Eggs - for making chilli egg, you have to use boiled egg. Cut boiled egg into slices, coat them in batter and fry till crispy. 

    Ginger & Garlic - like every Chinese recipes, ginger and garlic is main flavouring for the dish. Make sure you chop fresh ginger and garlic fine and use it in the dish. 

    Onions & Capsicum - like every Chinese recipes, onion and bell pepper is main flavouring for the dish. It adds flavour and aroma.

    For Batter - use a mixture of plain flour and cornstarch for the batter to create crispy texture. I added some baking powder to create a crispy texture. 

    Sauces to use - I used a combination of soy sauce, tomato ketchup, chilli garlic sauce, green chilli sauce and vinegar.

    How to Make Chilli Egg (3 Easy Steps)

    Make Batter & Fry Eggs - Take batter ingredients in a bowl, add water slowly and make it into a semi thick batter. Dip each egg halve in batter and fry till golden. It should be cripsy. Drain onto some paper towel and set aside.

    Make Sauce - Now heat oil in a pan, add in garlic, ginger and fry for a min. Add in onions, bell peppers and saute for 3 mins.  Add in sauce, chilli powder, pepper powder, salt, sugar and cook till it is thick and glossy.

    Chilli Egg (Dry & Gravy) - For making chilli egg dry, Once the sauce is ready, Add in fried egg and toss well. Finally garnish with spring onion. For making gravy, add 1 cup of water or veg stock. Thicken it with cornstarch slurry. Finally add in fried chilli egg and mix. Serve hot.

    How to Make Chilli Egg (Stepwise Pictures)

    Ingredients for Batter

    1)Get all your ingredients for batter ready. I am using plain flour, cornstarch with some baking powder. This helps create a crispy exterior. You can skip baking powder if you want.

    Boiled Eggs

    2)I hard boiled some eggs for 12 minutes. Allow them to cool down completely in ice water bath. Peel the eggs and halve them. Set aside for later use.

    Make Batter

    3)Take plain flour, cornstarch in a bowl for making batter.

    4)Add salt to taste. At this point, you can add your favourite flavourings of choice like ginger, garlic, soy sauce.

    5)Add in baking powder.

    6)Pour some water and make it into a smooth batter.

    7)This is the batter you are looking for. It shouldn't be too thick or thin.

    Coating Eggs in Batter

    9)Dip the boiled eggs in this batter. You can halve the eggs and coat in the batter or dip a whole boiled egg in the batter.

    10)Coat this well in the batter. Make sure the egg is completely coated in the batter.

    Frying Eggs

    11)Heat oil for frying, drop the egg in oil and fry till golden brown.

    12)Flip it in between and fry till golden brown.

    13)Once fried, strain the fried eggs on some paper towel and set aside.

    Sauce for Chilli Eggs

    14)Take all your ingredients for sauces. Finely chop some onions, garlic, ginger, spring onions and capsicum.

    15)Take chilli garlic sauce, tomato ketchup, soy sauce, green chilli sauce, vinegar in a bowl. Mix the sauce ingredients together till smooth. Taste and adjust the taste.

    Making Sauce

    16)Heat oil in a frying pan. Add in chopped garlic and ginger. Saute this in oil.

    17)Once garlic turns slightly brown. Add in finely chopped onions. Instead of onions you can use spring onions too.

    18)Cook onions till golden brown.

    19)Add in chopped bell peppers. You can chop it finely or in chunks as well.

    20)Mix that well.

    21)Pour in the sauce which we mixed earlier.

    22)Now season the sauce with salt, sugar, chilli powder, pepper powder.

    23)Mix that really well.

    24)Cook this till it thickens slightly.

    Cooking Chilli Eggs

    25)Add in the fried eggs into the thickened sauce.

    26)Toss to coat, add in spring onions and mix well. Your chilli egg dry is ready.

    Chilli Egg Gravy Recipe

    If you want to turn the same recipe into a gravy to serve with fried rice, noodles, you need to change few steps in the recipe. Once you make the chilli eggs sauce, you have to add some water or vegetable stock. Thicken the sauce with cornstarch slurry. Finally toss in the eggs. Thats it.

    1)Now the chilli egg sauce is ready. I added around 1 cup of vegetables stock or water.

    2)Mix it well and bring it to a full boil.

    3)Pour in 2 tsp cornstarch mixed with 2 tbsp water into the sauce to to thicken it slightly.

    4)Now the sauce is thick and glossy.

    5)Add in fried egg and mix well.

    6)Add in spring onions for garnishing and serve.

    7)Serve chilli egg with your favorite main dish.

    Expert Tips

    • Cornstarch has to be used in the batter to create crispy texture. 
    • You can skip baking powder in the batter if you want the chilli egg to be super crispy. 
    • You can taste and adjust the sauces added in the dish. 
    • Chilli Egg can be served as an appetiser or as a side dish. 

    Storage & Serving

    You can serve chilli eggs with wide variety of main dishes like fried rice, noodles and other Indo-Chinese dishes.

    Variety of Fried Rice 

    You can serve it with fried rice which is one of the best combo. You can make my veg fried rice, egg fried rice, chicken fried rice, mushroom fried rice, tofu fried rice, schezwan fried rice or paneer fried rice.

    Variety of Noodles 

    Pick from veg noodles, Chinese noodles, chicken noodles & hakka noodles.

    Serve with Soups

    Chicken clear soup, Hot & sour soup and Sweet corn soup are my favorites.

    Equipment

    • Cooking pot
    • Mixing Bowl
    • Deep Fry Pot

    Ingredients

    For Chilli Egg Sauce

    • 4 no Eggs Boiled, Peeled & Halved
    • 1 tsp Oil
    • 1 tbsp Garlic chopped finely
    • 1 tbsp Ginger chopped finely
    • 1 no Onion chopped finely
    • 1 no Capsicum / Bell Pepper chopped finely
    • 1 tsp Salt
    • 1 tsp Sugar
    • 2 tsp Chilli Powder
    • 1 tsp Pepper Powder
    • 3 tbsp Spring Onions finely chopped

    For Chilli Eggs Batter

    • 3 tbsp All Purpose Flour
    • 3 tbsp Cornstarch
    • ¼ tsp Baking Powder
    • ½ tsp Salt to taste
    • ¼ cup as needed Water
    • Oil for Deep Frying

    Sauce to Mix Together

    • 3 tbsp Tomato Ketchup
    • 2 tsp Soy Sauce
    • 2 tsp Vinegar
    • 2 tbsp Chilli Garlic paste
    • 2 tbsp Green Chilli Sauce

    For Making Chilli Egg Gravy

    • 1 cup Veg Stock or Water
    • 2 tsp Cornstarch
    • 2 tbsp water

    Instructions

    • Take batter ingredients in a bowl, add water slowly and make it into a semi thick batter. Dip each egg halve in batter and fry till golden. It should be cripsy. Drain onto some paper towel and set aside.
    • Mix all the sauce ingredients and set aside.
    • Now heat oil in a pan, add in garlic, ginger and fry for a min. Add in onions and saute for 3 mins or so till golden. Add in capsicum and cook for 2 mins. Now add in sauce, chilli powder, pepper powder, salt, sugar and cook till it is thick and glossy.
    • Toss in fried egg and toss well. Add spring onion and mix well. Serve hot.

    For Making Chilli Egg Gravy

    • Once sauce is ready, pour in 1 cup water or stock. Bring it to a full boil.
    • Mix cornstarch with 2 tbsp water to form slurry. Pour this into the sauce to thicken it. Add in fried eggs, spring onions and mix. Serve hot.

      Hi Aarthi whenever I try to deep fry eggs, it starts bursting ... I also got small burns due to the splattering oil ... M I doing anything wrong ??? One more thing ... Can I skip the garlic chili sauce in this recipe or any substitute for it ... Please suggest... Thank u

        you can skip it. Drain the egg well. If there is any water content it may splatter

      I'm looking forward to trying this! I've been searching for interesting egg recipes as we are coming into spring in Australia. My chickens, ducks, geese, turkey & quail are all starting to lay and I have so many eggs!

        You have to fry idlies in very very hot oil. Put idlies in fridge for 1 or 2 hours before frying

      Hey !! I tried this recipe, but the batter didn't stick to the egg so well. And so, the egg got hard while frying in the oil ! Any way to avoid this ??
