    Curd rice Recipe, also known as thayir sadham or yogurt rice is rice mixed with plain homemade yogurt and tempered with whole spices, ginger, chillies and curry leaves. It is also known as Perugu Annam or Daddojanam in other parts of India. Curd rice makes a perfect lunch option specially during hot summer days. It is more healthier if you make my millet curd rice, quinoa curd rice. Learn how to make the best curd rice with step by step pictures, video and variations.

    Curd Rice | Thayir Sadam

    In this post there are variety of rice variations you could make. It is also known as Perugu Annam or Daddojanam. Curd rice makes a perfect lunch option too.

    Theyir Sadam or Curd rice is one of my favourite, it has natural cooling properties in this which is perfect for hot summer days. This recipe is one step further because it has as much cucumber and carrots like rice. So it is much more cooling and more tasty.

    About Curd Rice

    Curd Rice is a comforting rice dish which you can make in just few minutes. It is simple satisfying and very tasty too. It can be had on hot summer days and on days when you don't feel like having anything.

    Highly nutritious and yogurt is rich in probiotics which is actually good for your guts. This is good for digestion and feels light on tummy.

    Cooking rice is a little tricky when making curd rice. The rice have to be very soft and mushy. So I follow few steps when cooking rice. I have two variation of curd rice here. A fruity curd rice and a plain simple curd rice. Perfect side dish for this curd rice is pickles, but you can even have it with any poriyal.

    What is Curd Rice?

    Homemade Yogurt or Curd is required to make perfect curd rice.

    Curd rice is my favorite food. If I don’t like eating anything spicy or if I didn't find that days lunch appetizing. Then the first thing which I do is take some rice add some curd, may be sprinkle with some salt and have it. I love this a lot and some how this was my comfort food. Curd rice taste best with mango pickle, but my favorite is with garlic and tomato pickle.You can have curd rice with pakoda or bhajji as well.

    It taste great. The secret of making a perfect curd rice is you should cook the rice till it completely mushy, the one thing which you don't want to do while eating curd rice is chew. Hence it is comforting. This recipe is great for a hot summer day, it cools you instantly.

    Curd Rice (Yogurt Rice) Ingredients

    Rice - I used regular ponni rice for making curd rice. You can use any rice of choice. It is important to cook the rice till soft for making the best curd rice.

    Yogurt | Curd - use homemade yogurt for best taste. But greek yogurt or storebought plain yogurt can be used. Dahi makes creamy yogurt rice.

    Milk - The key to make a tasty and kids friendly curd rice or yogurt rice is to add less yogurt and more milk which makes it more tasty. Use boiled and cooled milk for making curd rice.

    Vegetables & Fruits - grated cucumber and carrot adds fresh taste to the yogurt rice. You can add fruits like pineapple, grapes, pomegranate, apples.

    Tempering - for tempering, use mustard, urad dal, green chillies, asafoetida, curry leaves and ginger.

    Oil or Ghee - ghee enhances the flavour of the curd rice.

    How to Make Curd Rice Taste Better

    About Rice

    Rice has to be mushy for making creamy curd rice. So make sure you cook it the right way. Ponni rice, raw rice, basmati rice can be used.

    Once you have cooked the rice. Cool it completely before proceeding. You should never add curd to hot rice.

    The key to make a tasty and kids friendly curd rice or yogurt rice is to add less yogurt and more milk which makes it more tasty.

    Tempering

    It is best to use ghee for tempering for flavour. You can use chana dal in tempering if you want some crunch texture in curd rice.

    Make Ahead

    If you are packing it in lunch box. Then add very little yogurt to rice along with milk. Because as the rice sits for few hours it gets sour. I usually add ¼ cup of yogurt and 3 cups of milk.

    How to Make Curd Rice (Stepwise Pictures)

    Prepreparation

    1)Make sure you prepare all the ingredients before cooking. Even though it is optional, you can add cucumber and carrot for taste and cooling benefits.

    I like to peel cucumber, cut in half, deseed and grate it fine. Same with the carrot.

    Cooking Rice

    2)Take 1 cup rice in a pressure cooker and wash it really well, add in 4 cups of water, cook it for 5 whistle. Simmer for 5 mins and turn off the stove.

    3)Let the pressure go all by itself. Open the cooker and mash it up with a spoon. Set aside so the rice gets cold.

    Mixing Curd Rice

    4)Now add in salt to the cooled rice and mix well. Sometimes I add a spoon of sugar to the rice for taste. This is optional.

    5)Add in yogurt | curd into the rice. Using homemade curd is preferred. If not you can use greek yogurt or plain yogurt. Mix the yogurt is mixed really well.

    6)Add in milk into the curd rice. Check my tips section to learn how much yogurt or milk to add to your curd rice.

    7)Now the yogurt rice is mixed well.

    Adding Flavourings

    8)Now it is your wish to add these ingredients. I added some carrot, cucumber and green chillies into the curd rice.

    You can even add fruits like pomegranate, grapes, apples in curd rice.

    9)Mix well. As the curd rice sits, it gets thicker in consistency. So you can add more milk to it and mix well.

    Tempering Curd Rice

    10)Heat ghee or oil in a small pan. Ghee adds flavour, but you can use oil.

    11)Add in tempering ingredients. Mustard seeds, split urad dal, asafoetida, curry leaves. You can add green chillies in tempering.

    12)Let the spices sizzle in the oil for a full minute for the flavours to develop and gets toasty.

    13)Add in ginger. You can use finely chopped or grated ginger. Let the ginger fry in the oil.

    Mixing Tempering in Curd rice

    14)Pour this into the yogurt rice. This adds so much flavour into the curd rice.

    15)Mix the curd rice really well.

    16)Remember as the curd rice rests, the thicker it get in consistency. So make sure you have some milk on hand to adjust the texture.

    17)Finally add in coriander leaves and mix well.

    18)You can place the curd rice in fridge for few hours before serving. It taste amazing cold or warm.

    Expert Tips

    • Don't add sour curd in this because it make everything so sour.
    • If you are taking this for lunch, add more milk so that it wont get so sour while eating. (This curd rice will get sour as it stand for hours)
    • If the curd rice gets thick while eating, you can add more milk.
    • You could add any fruits if you like and even skip the fruits.

    How to cook rice for curd rice?

    • Take 1 cup rice in a pressure cooker, wash it well. 
    • Add in 4 to 5 cups of water. Cover the pressure cooker.
    • Cook for 4 to 5 whistle.
    • Turn off the heat and let the pressure release by itself.
    • Open the pressure cooker and mash the rice really well.

    Equipment

    • Pressure Cooker or Cooking Pot
    • Tadka Pan or Any Small Pan

    Ingredients

    • 1 cup Rice
    • ½ cup Homemade Curd
    • 2 - 3 cups Milk
    • 1 cup Cucumber grated
    • ½ cup Carrot grated
    • 2 no Green Chilli chopped finely
    • Salt to taste
    • 3 tbsp Coriander Leaves finely chopped
    • 4 cups Water

    Tempering Ingredients for Curd Rice

    • 2 tbsp Oil or Ghee
    • 1 tsp Mustard Seeds
    • 2 tsp Split Urad Dal
    • ¼ tsp Asafoetida
    • 1 sprig Curry Leaves
    • 1 tbsp Ginger peeled & finely chopped

    Instructions

    • Take rice in a pressure cooker, add in 4 cups of water, cook it for 5 whistle. Simmer for 5 mins and turn off the stove, let the pressure go all by itself. Open the cooker and mash it up with a spoon. Let the rice get to room temp.
    • Now add in salt, curd and milk to the rice and mix well. Add in cucumber, carrot and green chilli and mix well.
    • Now make tempering by heating oil and crackling all the spices and ginger. Let them get golden. Pour this over the rice and mix well. Add in coriander leaves and mix well. Put it in the fridge for 1 hour. Serve with pickle.
