    Cream Wafers Recipe, also known as cream biscuits which is perfect for Christmas. Cream biscuits are so delicious and has a melt in mouth texture. This cream wafers is originally from Swedish cuisine which is made with butter, cream, sugar, flour and vanilla and has a unique texture. Learn how to make cream wafers with step by step pictures and video.

    I was surprised to see a cookie recipe which is made with just three ingredients. The dough has just three ingredients and no sugar added which surprised me. But once I tried the recipe, I was convinced.

    The cookies has a buttery crispy wafers with a thick vanilla cream filling inside. I have shared the variety of flavour combination you can try. As always I am in love with Swedish desserts check my Swedish summer cake and saffron rolls. This is another unique Swedish recipe which have lots of cream and butter to make it delicious not so great for your arteries, but once in a while, its okay.

    About Cream Wafers Recipe

    Cream wafers is a classic Swedish biscuit which has a buttery cookies filled with vanilla cream filling. The cookie dough is made with butter, cream, flour, salt.  The cream filling is made with butter, icing sugar and vanilla extract. The cookies has a sparkly shimmery sweet sugar crunch on top which makes this cookies even more delicious.

    The cookie dough is rolled, cut using cookie cutter, rolled in sugar and baked. The biscuit dough has no sugar added, but it is rolled in the sugar which sweetens the cookies. The filling is sweet enough to sweeten the whole wafers.

    Traditionally this Swedish cream wafers is a cut out cookie. It is a classic recipe which is cut using shot glass, so it looks small and bite size. The cookie cream filling has either lemon zest or orange zest along with an egg yolk which makes it creamy and sets the filling perfectly. It is served with a cup of milk, tea or coffee.

    Swedish Cream Wafers Ingredients

    For making cookie dough

    Plain Flour - I used all purpose flour for the cookie dough which makes the cookie more crispy and flaky. Swapping whole wheat flour instead of plain flour may affect the texture a little.

    Butter - Always prefer unsalted butter which makes the cookies buttery without making it salty.

    Cream - a combination of cream, butter makes this cookies or wafers buttery and puffy in texture.

    Salt - a small pinch of salt is added in the cookie dough for balance taste.

    Ingredients for Cream Filling

    Butter - use soft butter in the cream filling which makes it buttery.

    Icing Sugar - confectioners sugar adds thick creamy texture in the creamy filling. Keep mixing the sugar with butter till creamy for minimum 5 to 10 minutes for even texture.

    Vanilla extract - this adds aroma in the filling which makes it more delicious. Optionally you can add some lemon zest or orange zest as well.

    Few tips to get perfect cookie.

    1. The only thing I would suggest is keeping the cookies chilled until right before serving. They are still wonderful, but don't crumble as much as when they are at room temperature.
    2. These cookies also freeze very well, so you can make them well in advance.
    3. Chill the cookie dough for at least an hour before rolling for easy roll.
    4. You can colour the butter cream filling as per your wish.
    5. Instead of using large cookie cutters, you can cut it using small shot glass or cutters.

    How to Make Cream Wafers (Stepwise Pictures)

    Make Cookie Dough

    1)Take soft butter in a bowl. I used unsalted butter which helps in the taste of the cookie dough.

    2)Add in cream along with the butter. Mix this together till combined.

    3)Add in plain flour and salt. Mix well till it is combined.

    4)Mix the flour into the butter till a smooth dough is formed.

    5)Cover the dough with plastic wrap. Place the dough in fridge for 30 minutes.

    Rolling Dough

    6)Take the dough in a silicon mat. Start rolling the chilled dough into a sheet.

    7)Now use a cookie cutter to cut out small cookies.

    8)Roll the cut out cookies in sugar until it is well coated.

    9)Now the cookies is rolled in sugar.

    Baking Cookies

    10)Arrange the cookies in a silicon baking tray. Pop the tray in oven and bake for 8 to 10 minutes.

    11)Now the cookies is baked. Remove the tray from oven and allow it to cool completely.

    Making Cream Filling

    12)For making filling. Take soft butter in a bowl. Add in icing sugar and vanilla extract in the bowl.

    Optionally, you can add in some orange zest and lemon zest.

    13)Mix the butter with icing sugar for 5 to 10 minutes until it is creamy and smooth.

    Piping Icing on Cookies

    14)Fill a piping bag with cream.

    15)Pipe the cream on the cookies.

    16)Cover the cookies with another cookies. Press it gently so it sticks.

    17)Cream wafers is ready. Enjoy.

    Expert Tips

    • You can chill the dough in the fridge for 30 minutes to 1 hour. You can store this in fridge overnight too.
    • Orange zest and lemon zest can be added in the filling for flavour.
    • You can add food colour to the creamy filling for authentic look.
    • The cookies can be baked ahead of time and stored in fridge.

    Serving & Storage

    You can bake and store the cookies in an air tight container up to a week.

    Ingredients

    For Making Cookie Dough

    • 100 grams Unsalted Butter
    • 4 tbsp Cream
    • 1 cup All Purpose Flour
    • ½ tsp Salt
    • ¼ cup Sugar for rolling the cookie

    For Vanilla Cream Filling

    • 50 grams Unsalted Butter
    • 1½ cup Confectioners Sugar
    • 1 tsp Vanilla Extract
    • 1 tsp Orange zest or Lemon zest optional

    Instructions

    • Preheat oven to 190 degree C (374 degree F) Line a baking tray with parchment paper and set aside.
    • Mix cream, butter till creamy. Add flour, salt and make a soft dough. Wrap and chill in fridge for 30 mins.
    • Now take the dough from fridge and roll it into a sheet and cut using cookie cutters. Take each cookie and roll in sugar. Arrange it in a baking sheet. Pop it into the oven and bake for 7 to 9 mins. Remove and cool completely.
    • Now make cream filling. Mix butter, icing sugar and vanilla till creamy and fluffy. Fill a piping bag with the cream. Take a cookie and pipe with the cream. Sandwich with other cookie and set aside. Serve.
