    Potatoes are my favourite, i make them quite often. These ginger flavoured are so good. Adding onions to this makes it more tasty.

    I made these and served with plain rice, tomato rasam and curd. It was delicious. I used Kashmiri chilli powder, because I wanted to have a bright red colour without the heat.

    About Potato Roast (Urulai Roast)

    This is a kind of potato roast which requires no fancy spices. This recipe is very straight forward. You only need basic spices and you are done. The one thing about this dish is it requires quite a bit of time to roast. You should cook it in low flame for a long time so that the potatoes gets nice and crisp.

    Alternatively you could even use an oven to roast the potatoes, But I find stove top works fine. This is my favorite potato roast and I make this more often.

    Potato Roast Ingredients

    Potatoes - For making potato roast you have to pre cook potatoes, peel off the skin and use them in cooking. You can do this step a day in advance. Store cooked potatoes in fridge for easy cooking.

    Onion - sliced onions adds sweetness to the dish as well as flavour. You can skip this entirely.

    Green Chillies - Chillies can be chopped or slit and used in the recipe.

    Whole spices - I used mustard, urad dal, curry leaves and asafoetida in this recipe. For a floral note you can use fennel seeds.

    Spice Powders - I used chilli powder, turmeric in the recipe. But you can use garam masala powder for taste.

    Oil - This recipe uses good amount of oil. You can use gingelly oil or regular oil.

    How to Make Potato Roast (Stepwise Pictures)

     

     
    Take all your ingredients
    Boil potatoes and peel the skin off
    Cut them and set aside
    Heat oil in a kadai..Add in mustard and urad dal
    add in asafoetida
    Add in sliced onions
    season with some salt
    add in chillies
    saute for a min
    add in little turmeric
    toss well
    add in cubed potatoes
    toss well
    fry this till the potatoes get nice colour
    add in chilli powder
    and toss well
    Simmer this whole things for few mins
    Serve

    Variations

    This version of making potato roast is super easy and simple. You don't need onions in this recipe. It uses a basic tempering of mustard seeds and curry leaves in oil. Add in boiled cubed potatoes along with turmeric and salt. Cook on very low heat mixing often until the potatoes is well roasted. Just before you turn off the heat add in chilli powder and mix. You can enjoy this as an appetizer or with rice.

    1)Pressure cook potatoes till they are cooked. Peel away the skin and cut into cubes. Set this aside for a moment. Heat oil in a kadai. Add in mustard seeds curry leaves and let it splatter.

    2)Add in potatoes and mix well. Now add in salt and turmeric powder. Mix well. Reduce the flame to a low and simmer it for 10 mins until the potatoes turn light golden around the edges.

    3)Now add in chilli powder and mix well. Cook this in a low flame for 15-20 mins. By which time the potatoes will have been beautifully crisped up. Switch off the flame and serve with rice.

    4)Serve.

    Expert Tips

    • You can boil potatoes a day in advance and store in fridge.
    • You can add a pinch of garam masala powder in the end for flavour.
    • Fennel seeds can be used as a floral note.
    • You can add a handful of coriander leaves for flavour.

    Equipment

    • Cooking pot

    Ingredients

    • 3 large Potatoes boiled peeled and cut into big chunks
    • 1 large Onion sliced thinly
    • 4 slit Green Chillies
    • 1 tsp Mustard Seeds
    • 1 tsp Split Urad Dal
    • ¼ tsp Asafoetida
    • 2 sprig Curry leaves
    • 1 tbsp Chilli Powder
    • ½ tsp Turmeric Powder
    • ¼ cup Oil

    Instructions

    • Heat oil in a nonstick kadai. Add in mustard, urad dal, curry leaves and asafoetida. Add in onions, green chillies, salt, turmeric and saute for 2 mins or so till translucent.
    • Add in potatoes and toss well. Cook till it gets crispy and well roasted. It will take around 10 minutes. Add in chilli powder and mix well. Roast for few more mins. Serve.
