    Barbeque Chicken Recipe

    Couple weeks back i posted pictures about our grilling night in facebook. I got so many request to post the barbeque chicken recipe from my viewers. So here i am with the post. We set up a traditional barbeque using bricks and woods. It was so fun we totally enjoyed the day. I used my own twist on the barbeque, I added Indian spices and made my own barbeque sauce too.

    About Barbeque Chicken

    Barbecue chicken is made up of barbecued, grilled, or smoked chicken parts or entire chickens . There are numerous global and regional cooking styles and preparation techniques. Barbecue chicken is frequently seasoned with a spice rub, barbecue sauce, or both. Marinades are also used to tenderise and flavour meat.

    Rotisserie chicken has grown in popularity and prominence in grocery stores across the United States. One of the most popular barbecue dishes in the world is grilled chicken.

    Why is it called a barbecue?

    The term barbecue comes from the Taino language of a Caribbean Indian tribe. Barbacoa is their word for grilling on a raised wooden grate. According to Planet Barbecue, the term first appeared in print in a Spanish explorers account of the West Indies in 1526.

    Barbeque Chicken Sauce Ingredients

    Butter or Oil - I used oil to saute onions and garlic for this barbeque sauce which adds flavour to the chicken. You can use butter too.

    Tomato Ketchup - this is the one of the main ingredients which adds tang and taste to the sauce.

    Vinegar - vinegar balances the taste of the sauce also gives the tang.

    Spices - any of your favourite spice mix can be added in the sauce. Spices like garlic, ginger, paprika can be used. I used red chilli flakes.

    Brown Sugar - add a good amount of sugar or brown sugar for the sweet taste.

    Worcestershire Sauce - one of the main flavour which adds smoky and sweet taste to the sauce.

    Soy sauce - gives the umami flavour and the rich colour.

    Grill Chicken vs Barbeque Chicken vs Tandoori Chicken

    Even though these recipes may sound similar. But the marination and cooking process varies slightly resulting in juicy and moist chicken.

    Grill chicken - chicken is marinated and cook in a rotisserie oven or grill. It is mostly cooked whole.

    Barbeque Chicken - chicken is cooked on low heat and smoke with slather of sweet spicy, sticky barbeque sauce.

    Tandoori chicken - the marination has yogurt and speciality spices. The chicken is cooked in a traditional clay oven also known as tandoor.

    Barbeque chicken made at Home (3 Ways)

    Barbeque Chicken in Oven

    Now preheat oven to 250 degree C. Line a baking tray with foil, oil it lightly. Place the chicken in the tray. Baste both sides with a coat of barbeque sauce. Place the chicken in oven and bake for 10 mins. Remove it from oven. Reduce the temp to 160 degree C. Remove it from oven, brush top side with sauce generously. Flip over and brush some more sauce over it. Bake this for 10 mins. Repeat this one more time.

    I used a open grill to cook my barbeque chicken. Place the marinated chicken over the grill rack and cook for 5 minutes on each aside. Once half cooked, slather with the homemade barbeque sauce and cook for further 10 minutes on each side. Serve barbeque chicken hot with side salad.

    Marinated chicken can be cook on a pan low and slow. Once chicken is ¾ th cooked, brush with barbeque sauce on both sides and cook till caramelized.

    How to Make Barbeque Sauce (Two Ways)

    This is an authentic recipe for barbeque sauce which is made with onions, garlic and sauces. The sauce is cooked till thick and shiny. This barbeque sauce is brushed over chicken or other protein of choice to create the sweet sticky texture.

    The sauce have this unique taste of sweet, salty and spicy taste to them. It is all because of the combo of ingredients used. Even though you can buy good quality barbeque sauces at supermarkets, it is quite easy to make at home. This is my secret barbeque sauce recipe.

    Barbeque Sauce (Authentic Recipe)

    1)Heat oil in a pot. Add in garlic and onions. Saute onions and garlic in oil for 2 to 3 minutes till the raw smell leaves and the onions gets light golden.

    2)Add in tomato ketchup, soy sauce.

    3)Add in worcestershire sauce, vinegar and mix well.

    4)Add in jaggery (brown sugar), red chilli flakes and mix well.

    5)Add in salt and mix well. You can add some water to make the jaggery melt.

    6)Once the brown sugar is melted. Cover the pot with a lid and cook on low heat for 10 minutes till the sauce thickens.

    7)Allow the sauce to cool a bit. Take it in a blender and make it into a puree. Thats it. Your barbeque sauce is ready.

    8)The sauce will be thick and shiny.

    9)Store this in an air tight container in fridge for 1 to 2 months.

    No Cook Barbeque Sauce

    1)This is my no cook barbeque sauce which can be made in an Instant. All you need is to mix few ingredients together and use.

    Take a mixing bowl. Add in melted butter. Instead of melted butter you can use oil. Add in salt, sugar, red chilli flakes and ground cumin.

    2)Add in grated ginger and grated garlic. Add in tomato ketchup, vinegar to the spices.

    3)Add in mustard sauce and chopped coriander leaves.

    4)Add in dried oregano and mix well. This is your no cook barbeque sauce. Taste this and adjust it as per your taste.

    Barbeque Chicken in Oven

    This chicken dish is so easy to make, you just need chicken, barbeque sauce, I also added some garlic for extra kick. The chicken after it is baked turn out so juicy, moist and delicious.

    For making barbeque chicken you can use oven or grill to cook the chicken. Marinate the chicken with spices, lemon juice and herbs as per your choice. Now you can bake this in the oven and baste the homemade barbeque sauce over it. or you can cook in grill.

    Ingredients for Oven Barbeque chicken

    • 2 Chicken Legs
    • 2 Garlic cloves grated
    • Salt a pinch
    • ½ cup Barbeque Sauce or as needed (Homemade)
    • 1 tsp Oil

    1)Take chicken in a ziploc bag, add in salt and garlic. Toss well and leave to marinate for couple of hours in fridge. Remove it from fridge 30 mins before cooking.

    6)Repeat this one more time. serve the chicken immediately with side salad.

    Barbeque Chicken on Grill

    For this version, I like to marinate the chicken with a simple marination before grilling or barbeque it on grill. I used a simple Indian style marination for this chicken.

    Ingredients for Marination

    • 1 kg Chicken (bone-in)
    • 3 tbsp Olive Oil
    • 3 tbsp Lemon Juice
    • 1 tsp Oregano - 1 tspn
    • 2 tbsp Ginger Garlic paste
    • 2 tsp Garam Masala Powder
    • 1 tbsp Chilli powder
    • 1 tsp Turmeric powder - 1 tsp
    • Salt to taste
    • 2 tsp Black Pepper powder

    How to Cook Barbeque Chicken on Grill

    1)In a jar or bowl mix the marination for the chicken. Take oil and lemon juice in a bowl. instead of lemon juice you can use vinegar.

    3)Add in salt and all your spice powders. Mix well. This is your marination for chicken.

    4)Take the cleaned chicken pieces in a bowl and make deep slashes in it. Pour the marinate over the chicken and let it sit for 8 hours or overnight in fridge. Remove the chicken from fridge 1 hour before cooking or grilling.

    5) I used a open grill to cook my barbeque chicken. Place the marinated chicken over the grill rack and cook for 5 minutes on each aside.

    Ingredients

    Barbeque Sauce (cooked)

    • 3 tbsp Oil
    • 10 cloves Garlic peeled
    • 1 large Onion peeled and chopped
    • 1 cup Tomato Ketchup
    • 3 tbsp Soy Sauce
    • ¼ cup Vinegar
    • ¼ cup Worcestershire Sauce
    • ½ cup Jaggery | Brown Sugar
    • Salt to taste
    • 2 tbsp Red Chilli Flakes
    • ½ cup Water

    Barbeque Sauce (No Cook)

    • 4 tbsp Butter Melted
    • ¼ cup Tomato ketchup
    • 2 tbsp Vinegar
    • 2 tbsp Ginger Garlic Paste
    • 1 tsp Dried Oregano
    • 2 tbsp Mustard Sauce
    • 1 tbsp Sugar
    • 1 tbsp Red Chilli flakes
    • 2 tsp Roasted Cumin Powder
    • 2 tbsp Coriander leaves finely chopped
    • Salt to taste

    For Barbeque Chicken Marination

    • 1 kg Chicken bone-in
    • 3 tbsp Olive Oil
    • 3 tbsp Lemon Juice
    • 1 tsp Oregano
    • 2 tbsp Ginger Garlic paste
    • 2 tsp Garam Masala Powder
    • 1 tbsp Chilli powder
    • 1 tsp Turmeric powder
    • 2 tsp Black Pepper powder

    Instructions

    Barbeque Sauce (cooked)

    • Heat oil in a pan, add in onion, garlic and saute till golden. Add in all sauces and other ingredients. mix well, Cover and simmer for 10 mins. Now remove it from heat and let it cool. Take this in blender and puree till smooth. Store this in an air tight container in fridge for 2 to 3 months.

    Barbeque Sauce (No Cook)

    • For making no cook barbecue sauce. Mix all the ingredients given for the sauce in a bowl and set aside.

      We had a barbecue party at home yesterday and I made the sauce the way you've described it... and it was a hittttt!!! everyone loved it, one of the guest thought it was peri-peri sauce.. lol and was surprised that it was home made. Thank you.
