Brinjal Podi Fry Recipe - Simple Kathirikkai Varuval Recipe

Brinjal are my favourite, i make them quite often..My mum simply loves it, it is one of her favourite veggie..These sambar powder flavoured are so good. They go pretty much with anything..

Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Serves : 3 to 4


Brinjal / Eggplant - 1 big one or 5 small ones
Oil - 5 tblspn
Mustard Seeds / Kaduku - 1 tsp
Fennel Seeds / Sombu / Saunf - 1 tsp
Onion - 1 medium size sliced thinly
Garlic - 5 cloves chopped
Salt to taste
Sambar Powder - 1.5 tblspn


Heat oil in a kadai. Add in mustard and fennel. Let them sizzle.

Add in onions and garlic along with salt. Toss well.

Add in brinjal and toss well in the oil. Cover and cook for 7 to 10 mins till the brinjal is 3/4th cooked.

Now open the lid and cook on medium heat till it is roasted.

Add in sambar powder and mix well. Cook for few more mins.


Take all your ingredients

Take a brinjal

slice them

Heat a good amount of oil in a kadai

Crackle in some mustard and fennel seeds

add in onions and garlic

add some salt

saute for a min or so

add in sliced brinjal

toss well in oil

cover and cook

now brinjal is cooked

keep cooking on a medium heat till it gets little golden

add in sambar powder

mix well
