White Chocolate Mocha Cake Recipe - Eggless Mocha Cake Recipe

When i was cleaning my baking cupboard, i found 3 big packet of white chocolate lying around. And i wanted to use it immediately because they are nearing their expiry dates..So decided to add it to a mocha cake which i was planning to do. And it turned out great..White chocolate and coffee went well together..My next attempt is to make a white forest cake..

I used a basic eggless chocolate cake recipe and modified it to my taste. It turned out soft and moist, just perfect..

Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 10 mins
Baking Time : 35 to 40 mins
Makes : 2 small cakes or one 18 cm round cake

All Purpose Flour / Maida - 1 cup / 120 grams
Cocoa Powder - 1/4 cup (plus more)
Baking Soda / Cooking Soda - 1/2 tsp
Instant Coffee Powder - 1.5 tsp
Salt a pinch
Sugar - 1/2 cup / 100 grams
Water - 1 cup / 240 ml
Oil - 1/4 cup / 60 ml
Vinegar or Lemon Juice - 1 tblspn
Vanilla Essence - 1 tsp
White Chocolate - 1/2 cup chopped or use chips

(My 1 cup measures 240 ml)

Preheat oven to 180 degree C. Take a round cake pan or any of your favourite mould and oil it well. Sprinkle cocoa over and coat it on all sides. Set aside.

Take flour, cocoa, baking soda in a sifter and sieve well.

Take oil, water, sugar, coffee and vanilla in a bowl and whisk well.

Add in the flour mix and fold gently. Fold in the white chocolate and mix well.

Pour this in the prepared pan and bake for 35 to 40 mins.

Insert a tooth pick to check whether the cake is done, if the toothpick comes clean then the cake is done..

Remove it and let it cool for 15 mins. Invert it and cool completely.

Dust with some icing sugar and serve.

Take all your ingredients

I decided to use these moulds..you can make this in one round cake pan

brush the inside with oil

now it is brushed evenly

sprinkle cocoa powder over it

coat it on all sides

now it is done

Now take flour and cocoa powder in a sieve

add in little salt

and add in some baking soda

Sieve it well and set aside

Take water in a bowl

add in oil

add in sugar
Add in instant coffee powder

now add in vanilla

mix well till sugar is melted

add in vinegar

and add in the flour mix

mix gently
Add in white chocolate chunks

Fold gently

pour it into the prepared pan

bake them

dust with some powdered sugar
