    Bran Muffins also known as Raisin bran muffins is made with only bran and doesn't uses any flour. This honey raisin bran muffins is rich in fibre, turns out so tender and taste great with a cup of milk.

    Healthy wheat bran raisin muffins which taste super moist and so soft. It is a perfect way to start a morning. Enjoy with a cup of milk and you are in business.

    About Raisin Bran Muffins Recipe

    Wheat bran or any bran is a healthy ingredient and you have to include it in your diet at least once or twice a month. This muffin is a perfect way to enjoy wheat bran since it taste great and wholesome.

    I call this as "only bran muffins" since there is no flour added. The muffin bakes so tender, surprisingly moist. The only issue I faced was the top was slightly darker in colour. But still the muffin tasted great.

    I used basic ingredients like eggs, milk, oil, vanilla, raising agent, bran and raisins to make this muffins. And the texture is not like your regular dense muffins, since it has no flour the texture is more delicate.

    Ingredients

    • Eggs - You need to use eggs in this recipe, since this muffins has no flour, eggs is what hold the muffins together.
    • Milk - use full fat milk for texture. You can swap regular milk with almond milk or soy milk.
    • Honey - This is the sweetener which I used. It also helps hold the muffin together.
    • Oil - you need some kind of fat to make the muffin tender and moist.
    • Vanilla - Use pure vanilla extract to flavour the bran muffins
    • Raising Agent - I used both baking powder and baking soda to make the muffins.
    • Bran - i used wheat bran in this recipe. Use fine variety and measure it.
    • Raisins - you can choose to use any dried fruits in this recipe.

    Step by Step Pictures

    1)Start by mixing the wet ingredients in a bowl. Take eggs, milk and vanilla extract in a bowl and whisk together.

    2)Add in melted butter or oil. This helps the muffins stay moist and tender.

    3)Add in honey. Instead of honey you can use maple syrup. Honey is the only sweetener used in this recipe.

    4)Whisk well till honey, eggs, milk and oil is mixed well.

    5) Now Add in wheat bran.

    6)Add in salt, baking soda, baking powder over the wheat bran. Mix this well to form a thickish batter.

    8)I found the batter to be too thick. So I added some more milk. The bran will absorb most of the liquid. So you can adjust the milk accordingly.

    9)This is the consistency your batter should look like.

    10)Now I am adding in seedless black raisins. You can use any nuts or dried fruits that you prefer now.

    11)Mix well till raisins is combined evenly.

    12)Use an ice cream scoop to take batter and fill your cupcake moulds. This way the cupcakes are in even size.

    13)Fill with muffin batter into cupcake liners lined tray. Place this into the oven and bake till cooked. Once baked, remove from oven and allow to cool for few hours.

    14)Serve.

    Ingredients

    Wet Ingredients

    • 1 large Egg
    • ⅓ cup Sunflower Oil (80 ml)
    • ½ cup Honey (120 ml)
    • ½ cup Whole Milk (120 ml) 120 ml
    • 1 teaspoon Vanilla Extract

    Dry Ingredients

    • 1½ cup Wheat Bran (85 grams)
    • 1 teaspoon Baking Powder
    • ½ teaspoon Baking soda (Cooking Soda)
    • ⅛ teaspoon Salt
    • ¼ cup Seedless Black Raisins

    Instructions
     

    • Preheat oven to 180 degree C (360 degree F). Line 6 cup muffin pan with cupcake cases. Set aside.
    • Take egg, milk, oil, honey and vanilla in a bowl and whisk well till combined.
    • Now add in bran, baking powder, baking soda, salt and mix well. The batter will be thick. If it is too thick, you can add in some extra milk as well. Add in raisins and mix well. Set aside for 5 minutes for the batter to rest.
    • Now Spoon the batter into muffin pan using an ice cream scoop and bake for 25 to 30 mins. Remove the muffins from oven and allow to cool. Serve.

      I am very interested in trying this recipe for Honey Raisin Bran Muffins.. .. but I noticed that there was no mention of any flour ? Can you confirm for me that this is correct before I attempt to make a batch ? Thanks

      These came out pretty good. The top weren’t pretty, so I think I won’t fill the cupcake molds so high. I will make these again
