    Aloo Coconut Milk Curry

    I cook with potatoes often, atleast twice or thrice a week. Each time i make them differently. This is one curry which i made couple of days back, i added coconut milk in it and cooked it on a high heat till it is dry. It tasted so yummy.

    About Aloo Curry

    Aloo coconut milk curry also known as potato curry is made with onions, tomatoes, potatoes, spices and coconut milk. The curry is heavily flavoured with spices and coconut milk adds a creamy texture to the curry.

    The curry can be made according to your spice level. You can enjoy it with roti, rice or even pulao.

    Aloo Curry Ingredients 

    Onion & Tomato - Like all Indian curries, onions and tomatoes form the base of the curry. It adds the taste and flavour to the dish.

    Spices - a variety of whole spices like mustard, cumin is added for flavour. Spice powders like chilli, coriander, turmeric and garam masala adds the earthy taste.

    Coconut Milk - Coconut milk adds a sweetness to curry that counteracts the spice, creating a nice balance.

    Curry leaves - curry leaves goes well with coconut milk so make sure to use that in the oil.

    Potatoes - peeled and cubed potatoes is used in the dish. You can use any variety of potatoes.

    How to Make Aloo Curry (Stepwise Pictures)

    Take all your ingredients
    Heat coconut oil in a kadai
    Add in mustard and cumin seeds
    add a sprig of curry leaves
    thinly sliced onions and cook till golden
    Now the onions are golden
    Add in little ginger garlic paste
    and tomatoes
    sprinkle in some salt
    cook till tomatoes turn mushy
    Add in your spice powders
    mix well
    Add in cubed potatoes
    toss well with the masala
    Pour in some water
    cover and simmer till the potatoes are done
    Now the potatoes are perfectly cooked through
    Pour in thick coconut milk
    give a good mix
    Now put it on high heat and cook till the masala dried up
    Once the masala is dried, add in coriander leaves
    Serve

    Equipment

    Ingredients
      

    For Tempering

    • 2 tablespoon Coconut Oil
    • 1 teaspoon Mustard Seeds
    • 1 teaspoon Cumin Seeds
    • 1 sprig Curry leaves

    For Curry

    • 1 large Onion peeled & sliced thinly
    • 1 tablespoon Ginger Garlic Paste
    • 1 teaspoon Salt or to taste
    • 2 medium Tomatoes chopped very finely
    • 2 teaspoon Kashmiri Chilli powder
    • 2 teaspoon Coriander Powder
    • 1 teaspoon Cumin Powder
    • ½ teaspoon Turmeric Powder
    • 1 teaspoon Garam Masala Powder
    • 2 large Potatoes peeled and cubed
    • 1 cup Coconut Milk or use one 250 ml can
    • 3 tablespoon Coriander Leaves finely chopped

    Instructions
     

    • Heat coconut oil in a pan. Add in mustard and cumin seeds along with curry leaves, let them splatter.
    • Now add in onions and cook till golden. Add in ginger garlic paste and mix well. Add in tomatoes and salt. Mix well. Cook till the tomatoes turn mushy. Now add in spice powders and mix well.
    • Add in potatoes and add in some water. Bring this to a boil, cover and simmer till the potatoes are cooked.
    • Now add in coconut milk and mix well. Cook this on high heat till the masala dries up and coats all the potato pieces. Now add in coriander leaves and mix well. Serve.
