    This is a great recipe using up your thanksgiving leftover mashed potatoes. I am sure that you will get leftovers after thanksgiving and this is a great recipe to use them up without wasting it. It is a kids friendly recipe and your little one will love it for sure.

    If you don't have leftover mashed potatoes, just use some boiled mashed potatoes and follow the exact same recipe. It will be just perfect.

    About Potato Cakes

    Potato cake refers to a variety of shaped potato dishes from throughout the world, such as a hashed potato patty, a fried mashed potato patty, a fried and battered potato slice, or a flatbread prepared with mashed potato and flour. A potato scallop, potato cake, or potato fritter is a small slice of potato that has been battered and deep fried in several Australian states. Another popular variation in the UK is made using cold mashed potatoes and fresh eggs. The two ingredients are mixed and fried until the outside is crunchy. In India Its a Breakfast meal from the Punjab province of
    India. In India western, central, and northern areas, as well as Pakistan eastern parts, the recipe is one of the most popular breakfast dishes.

    How to Make Mashed Potato Cake

    • Mix mashed potatoes with spices. Form it into patties.
    • Heat oil in a pan, drop the patties in and fry till golden on both sides.
    • Drain and serve.

    Ingredients for Potato Cakes Recipe

    Mashed Potatoes:

    Potatoes that have been boiled and then crushed and beaten into a soft mass

    Coriander leaves:

    The coriander leaves should have a light, lemony flavour. They can be utilised whole or crushed. It has an earthy, acidic, and sweet flavour, as well as a floral scent when toasted.

    Chilli Powder

    Chili powder can range from mild to fairly spicy, depending on the amount of cayenne pepper in the blend. The Tex-Mex flavour character is created by the fragrant and savoury spices in the blend.

    Ingredients
      

    • Mashed Potatoes - 1 cup or use normal boiled and mashed potatoes
    • Coriander leaves or parsley - 3 tblspn finely chopped
    • All Purpose Flour / Maida - ½ cup
    • Cheese - ½ cup grated
    • Salt to taste
    • Pepper to taste
    • Chilli Powder or Cayenne - ½ tsp
    • Oil for pan frying

    Instructions
     

    • Mix all ingredients except oil and take small portion from it. Form it into patties.
    • Heat oil in a pan, drop the patties in and fry till golden on both sides.
    • Drain and serve.

    Just use regular potatoes and mash it well
