Cheesy Mashed Potato Cakes Recipe

This is a great recipe using up your thanksgiving leftover mashed potatoes. I am sure that you will get leftovers after thanksgiving and this is a great recipe to use them up without wasting it. It is a kids friendly recipe and your little one will love it for sure. If you dont have leftover mashed potatoes, just use some boiled mashed potatoes and follow the exact same recipe. It will be just perfect.

Preparation Time : 10 mins
Cooking Time : 5 to 6 mins 
Serves: 3 


Ingredients:

Mashed Potatoes – 1 cup (or use normal boiled and mashed potatoes)
Coriander leaves or parsley – 3 tblspn finely chopped
All Purpose Flour / Maida – 1/2 cup
Cheese – 1/2 cup grated
Salt to taste
Pepper to taste
Chilli Powder or Cayenne – 1/2 tsp
Oil for pan frying

Method:

Mix all ingredients except oil and take small portion from it. Form it into patties.

Heat oil in a pan, drop the patties in and fry till golden on both sides.

Drain and serve.





Pictorial:

Take mashed potatoes in a bowl, if you dont have mashed potatoes (RECIPE HERE)..
Just use regular potatoes and mash it well

add in chopped coriander leaves

add some all purpose flour / maida

add salt and pepper to taste

add in lots of grated cheese

add in some chilli powder or cayenne

mix well

take small portion

flatten it like this

done

heat oil in a pan, place the patties

cook till golden brown on both sides

done
