    This is a great recipe using up your thanksgiving leftover mashed potatoes. I am sure that you will get leftovers after thanksgiving and this is a great recipe to use them up without wasting it. It is a kids friendly recipe and your little one will love it for sure.

    If you don't have leftover mashed potatoes, just use some boiled mashed potatoes and follow the exact same recipe. It will be just perfect.

    About Potato Cakes

    Potato cake refers to a variety potato dishes from throughout the world, such as a potato patty, a fried mashed potato patty, a fried and battered potato slice, or a flatbread prepared with mashed potato and flour.

    This version of potato cake is made with leftover mashed potatoes. Mashed potatoes is one of the most important dish made during thanksgiving, fall or even for Christmas dinner. After all the parties and gatherings happening, you should be left with tons of mashed potatoes in the fridge.

    Leftover mashed potatoes doesn't taste that great when heated the next day. Potato cakes is one of the easy recipe that you can make using your thanksgiving or holiday leftover mashed potato. Since mashed potatoes already have butter, milk and cream added, you don't need to bother with those.

    Potato Cakes Ingredients

    Mashed Potatoes - Potatoes that have been boiled and then crushed and beaten into a soft mass

    Coriander leaves -The coriander leaves should have a light, lemony flavour. They can be utilised whole or crushed.

    Chilli Powder- Chilli powder can range from mild to fairly spicy, depending on the amount of cayenne pepper in the blend.

    Plain flour - I used refined flour for binding the potatoes which holds the shape and gets crispy when fried.

    Cheese - you can use grated parmesan or cheddar cheese for a slightly cheesy texture and flavour.

    How to Make Potato Cake (Stepwise Pictures)

     

    Take mashed potatoes in a bowl, if you don't have mashed potatoes (RECIPE HERE)..
    Just use regular potatoes and mash it well
    chopped coriander leaves
    add some all purpose flour / maida
    salt and pepper to taste
    add in lots of grated cheese
    add in some chilli powder or cayenne
    mix well
    take small portion
    flatten it like this
    done
    heat oil in a pan, place the patties
    cook till golden brown on both sides
    done
    Serve

    Expert Tips

    • Instead of using leftover mashed potatoes. You can use boiled and mashed normal potatoes.
    • Any herbs, dried herbs, seasonings and spice powders can be added into the mashed potatoes.
    • you can fry the patties in butter rather than oil.
    • Chopped onions, grated carrots can be added. 
    • You can even add in cooked shredded chicken into the mashed potatoes.

    Mixing Bowl
    saute pan or skillet

    Ingredients
      

    • 1 cup Mashed Potatoes or use normal boiled and mashed potatoes
    • 3 tablespoon Parsley chopped finely
    • ½ cup All Purpose Flour
    • ½ cup Cheddar Cheese grated
    • 1 teaspoon Salt or to taste
    • ½ teaspoon Black Pepper powder or to taste
    • ½ teaspoon Chilli Powder
    • 4 tablespoon Oil

    Instructions
     

    • Mix all ingredients except oil and take small portion from it. Form it into patties.
    • Heat oil in a pan, drop the patties in and fry till golden on both sides. Strain on some paper towel and serve.
