    About Bombay Chutney

Besan Chutney is a simple yet delicious side dish for idli or dosa made with gram flour also known as besan or kadalai maavu. This is made by cooking onions, tomatoes, chillies in oil along with gram flour and water. This thick chutney is also known as Bombay chutney.

It comes handy when you don't have any vegetables on hand. You can skip the tomatoes in this recipe, if you don't have it. Just onion and green chillies would do.

    • Add in curry leaves and let them sizzle.

    • Now add in turmeric and salt and mix well.
    • Add in gram flour and toast for 2 mins on a low heat.

How to Make Bombay Chutney (Stepwise Pictures)

1)Heat oil in a pan. I am using regular cooking oil.

2)add mustard and urad dal and allow them to splatter.

3)add in curry leaves and let them sizzle too.

4)Add in chopped onions , green chillies and tomatoes. You can even use carrots as well.

5)Saute this for 2 minutes till the raw smell leaves.

6)add in salt and turmeric powder.

7)Mix this well and cook for 30 more seconds so the raw smell from turmeric powder is gone.

    8) Add in gram flour (besan).

    9) toast this for couple mins, you may need to add another tablespoon of oil for this process.

    10) now the raw smell is gone from the gram flour.

11)Now add in water and mix well. Cook until the besan thickens.

    12) Keep mixing and mix well so no lumps are formed. The besan will get thick.

    13) Now let them come to a boil and cook for few more minutes. As it boils, the chuytney will thicken.

14)Now add in sugar to taste.

    15)Add in lemon juice.

16)Add in a handful of chopped coriander leaves.

    17)Besan chutney is ready.
