    Carrot Paruppu Usili Recipe with step wise pictures.

    Healthy and highly nutritious carrot paruppu usili which taste so yummy with any spicy curry. This is best with some hot rice too.

    I have quite a few iyengar recipes in my blog. All the credits go to my friend, She taught me lots of her and her mum’s recipe. They all turned out great.The combination of little crispy and spicy dal cooked along with the soft tender beans was amazing. It goes perfectly with any spicy gravies.

    Ingredients
      

    • Carrot - 2 chopped finely
    • Coconut Oil - 2 tblsp
    • Mustard Seeds / Kaduku - 1 tsp
    • Urad dal / Ulundu Paruppu - 1 tsp
    • Dry Red Chillies - 2
    • Asafoetida / Hing / Kaya Podi a pinch
    • Curry leaves - 1 sprig
    • Salt to taste

    FOR DAL:

    • Yellow Split Moong Dal / Pasi Paruppu - 1 cup
    • Dry Red Chillies - 2
    • Garlic - 3
    • Asafoetida / Hing / Kaya Podi - ½ tsp

    Instructions
     

    • Soak moong dal for 1 hour. Drain and take it in a blender along with all ingredients given for grinding.
    • Grind till coarse. Spoon it in idli plate and steam for 10 mins. Take it in a bowl and crumble it.
    • Heat oil in a pan, add seasoning ingredients and carrots. Add salt and saute for 10 mins till cooked.
    • Add dal and extra salt and mix well.
    • Cook for 5 to 10 mins.
    • Serve.

    9)Heat oil in a pan, add mustard, urad dal and curry leaves

    11)Let them sizzle.

    14)Saute for 3 to 4 mins.

    15)Cook till carrots are caramelized.
