Samosa made with vegetables makes a great party snack which will be popular among kids and adults. You can make a double batch of the samosa and freeze half of it for later just like chicken samosa and potato samosa. Learn how to make crispy veg samosa with step by step pictures and video.
Vegetable Samosa Recipe
Usually I make samosa from scratch. You can check out my Punjabi samosa and Tapioca samosa. But few weeks back I saw this readymade samosa patti in the freezer section of super market.

At first I wanted to make chicken samosa using them. But I used them to make vegetable samosa for maha's birthday part yesterday. It came out superb and everyone loved them. If you don't have the samosa patti on hand, you can make them from scratch using the recipe from my tapioca samosa.
About Veg Samosa (Vegetable Samosa)
Vegetable samosa also known as veg samosa is a crispy snack made with spiced mixed vegetable filling and samosa patti. This fried patti taste great with a cup of tea or coffee. Kids enjoy samosa with some tomato ketchup or green chutney.
Samosa are great freezer friendly dish. You can make it in bulk and store in freezer for later use. This makes them more convenient specially during Ramadan season.
If you are planning to freeze the samosa. Place the shaped samosa in a sheet of parchment paper. Freeze overnight. Once frozen, collect the frozen samosa in a ziploc bag and store in freezer till use. You can fry straight away from freezer, no need to thaw.

Veg Samosa Ingredients
Oil - I used flavourless refined oil in cooking and deep frying samosa.
Onions - chop onions finely and saute till golden.
Vegetables - For making veg samosa, use mixed vegetables of choice. You can use green beans, capsicum and shredded cabbage. Green peas, corn can be used.
Spices - I used a simple combination of chilli, coriander, garam masala and turmeric in this samosa.
Samosa Patti - You can find this in the freezer section of super market. For making homemade samosa patti, check this recipe. Make sure you remove the samosa patti from freezer at least 15 minutes before making samosa.
How to Make Veg Samosa (3 Easy Steps)
Make Samosa Filling
Heat oil in a kadai. Add in onions, ginger garlic paste and saute till golden brown. Add in spice powders and mix well. In goes grated carrots and vegetables and cook till raw smell leaves. Sprinkle in salt, tomato ketchup and mix well. Add in boiled potatoes and combine. Finally add in coriander leaves and mix.
Folding Samosa
Mix flour with water to make a thick paste. This is used for folding of the samosa. Set this aside till needed. Instead of this, you can even use an egg to seal the samosa. Take a samosa sheet, spoon in the filling. Fold it like a samosa (check image) for reference. When you come to the end apply a paste of flour and shape like samosa. Place the shaped samosa on a plate. Repeat this with the remaining samosa patti. You can fry the samosa immediately or store in container in freezer until needed.
Frying Samosa
Heat oil for deep frying. Drop samosa in and fry on medium high heat till golden brown and crispy. Strain using a slotted spoon and serve with ketchup.
Air Frying & Baking Veg Samosa
For Air frying, brush the shaped samosa with oil on both sides. Place it in the greased air fryer basket. Place it inside a 180 degree C air fryer and bake for 12 to 15 mins, flip in between half way through.
For Baking, brush the shaped samosa with oil on both sides. Place it in a parchment lined baking tray. Bake for 15 to 20 minutes in a 180 degree C preheated oven till crispy. Serve.
How to Make Veg Samosa (Stepwise Pictures)
Sauteing Onions & Spices
1)Heat oil in a frying pan. Add in finely chopped onions.
2)Saute onions till light golden brown. You can sprinkle some salt for faster cooking.
3)Add in ginger garlic paste and cook for 2 minutes with the onions till raw smell leaves.
3)Add in all the spice powders. Here I am using chilli, coriander, garam masala and turmeric powder.
- 1 tsp Chilli powder
- 1 tbsp Coriander powder
- 1 tsp Garam masala powder
- 1 tsp Turmeric powder
4)Cook the spices for few minutes till the smell gets fragrant.
Adding in veggies
5)Add in mixed vegetables into the onions and spices. I used carrots alone, you can use green beans, capsicum and shredded cabbage. Saute the vegetables with the onions and spices till slightly cooked.
6)Season the vegetables with some salt.
7)Add in tomato ketchup. Even though this is optional, it is important to balance the taste. Mix the tomato ketchup with the vegetables and spices.
Pro Tip: Instead of tomato ketchup, you can add one chopped or pureed tomatoes.
8)Now add in boiled, peeled and mashed potatoes.
9)Mix the potatoes with vegetables and spices.
Make Samosa Filling
10)Finally add in some coriander leaves and mix well.
11)Mix coriander leaves into the vegetables potato filling. Now the filling for samosa is ready.
Samosa Patti
12)Take your samosa sheets or patti. You can find this in the freezer section of super market. For making homemade samosa patti, check this recipe.
Remove the samosa patti from freezer atleast 15 minutes before making samosa.
Folding Samosa
13)take a sheet of samosa patti. Make sure you keep the remaining patti covered with either kitchen towel or wet cloth.
14)Spoon some veg filling into the samosa patti.
15)Now start folding from the top sides.
16)Now fold from the other side.
17)As you fold like this, keep folding it tight so there is no holes peeking through.
18)As you do the final fold. Make sure you seal it tight.
19)Now you have come to the end.
20)Now this is your sealing paste. I mixed 2 tbsp of plain flour with some water to create a paste. I used this paste to seal the samosa.
21)Use this paste to apply on the samosa sheet in the end to seal it.
22)Now the samosa is well sealed.
23)Samosa folded.
Frying Samosa
24)Heat oil for deep frying. Drop samosa into the hot oil and fry till golden brown. Make sure you fry on low medium heat so it gets crispy.
25)Gently flip the samosa so it fried till crispy.
26)Serve hot.
Expert Tips
- You can use any vegetables of choice in this. You can use green beans, green peas, cabbage, cauliflower in this. Make sure you chop the vegetables finely before cooking.
- The filling can be made a day in advance. Store in fridge and reheat later.
- You can add cooked chicken in the filling if you want non veg.
Storage & Freezing
