We make this wheat dosa often in our house. Since it can be made in an instant and takes only minutes to make, it is mostly served for breakfast. Amma always make this dosa whenever we run out of dosa batter. Amma dosa is more on the softer side, But I don’t prefer it. This version is my favourite, It is so crispy and flavourful.

About Wheat Dosa Recipe
Dosas is a South Indian staple that is a crepes made from fermented rice and lentils that are served with sides such as sambar and various types of chutney. You can make dosa with any type of flour like wheat flour, sooji, gram flour. These type of dosa is usually made in an instant. All you need is to mix few flours together with water to form a batter and make dosa or crepe.
Wheat dosa is also known as godhumai dosa is made with wheat flour, rice flour, pepper, onions, cumin and other ingredients. The correct proportion of ingredients results in crispy wheat dosa. There are few tips for crispy dosa. First one is the right proportion of ingredients, the batter has to be runny or watery, you have to cook the dosa low and slow till super crispy. If you follow these you can make crispy godhumai dosa every time.
The best combo for wheat dosa is coconut chutney. This is one of those best dish for busy breakfast and a great one for people who are in diet. Serve wheat dosa with coconut chutney or tomato chutney. You can enjoy with sambar as well.

Instant Crispy Wheat Dosa Ingredients

Wheat Flour - whole wheat flour is used in this recipe. Use finest flour quality of wheat flour and You may need to sieve the flour to remove any lumps.
Rice flour - I like to add some rice flour in the dosa batter which makes the wheat dosa crispy in texture.
Whole Pepper and cumin - The aroma and flavour of black pepper are sharp and pungent. Cumin adds a subtle flavour to the dosa.
Onions - you can use finely chopped shallots or onions in the batter. It adds flavour and taste.
Optional- ingredients like green chillies, coriander leaves and curry leaves can be added for flavour and taste.

Tips for Extra Crispy Wheat Dosa
Right proportion - I use 1 cup of wheat flour and ½ cup of rice flour to get the crispy texture. You can add ¼ cup of rice flour as well.
Batter Consistency - make the batter super thin and watery for crispy texture. Thinner the batter, crispier the dosa will be.
Use the right pan - you can use nonstick dosa tawa if you use that. But in my personal experience I like to use cast iron dosa tawa.
Pouring technique - like rava dosa, it is important to pour the batter from a height to create lots of holes in the dosa.
Take your time - like rava dosa, wheat dosa tends to take more time to cook. So cook on medium high heat until you see the dosa getting crispy on the bottom.
Serve hot - wheat dosa doesn’t stay crispy for long. So it is best to make fresh and enjoy.

How to Make Crispy Wheat Dosa (Stepwise Pictures)
Pre-prep
1)Chop onions, green chillies and coriander leaves into fine pieces. You can use grated carrots as well.

Make Batter
2)Take wheat flour and rice flour in a bowl. Rice flour helps to get crispy texture.

3)Now add in salt to taste.

4)Add in black pepper. If you don't prefer whole black pepper, you can crush them slightly and use.

5)Add in cumin seeds, onions, green chillies and coriander leaves. Mix this really well so the salt and other ingredients are evenly distributed.

6)Add water and mix well. Make it into a smooth batter.

7)The batter has to be smooth, make sure the batter has to be thin.

8)The batter has to be thin in consistency.

Make Dosa
9) like rava dosa, it is important to pour the batter from a height to create lots of holes in the dosa.

10)Drizzle oil around the sides and cook on low medium heat so it gets crispy and golden.

11)Once the dosa is crispy. Fold and serve.

12)Serve with chutney.

Ingredients
- 1 cup Wheat Flour
- ½ cup Rice Flour
- 1 tsp Whole Black Pepper
- 1 tsp Cumin Seeds
- 1 medium Onion peeled & finely chopped
- 1 no Green Chilli finely chopped
- 3 tbsp Coriander Leaves finely chopped

Instructions
- Mix everything except oil to a thin batter. The batter should not be thick it should be watery in consistency.
- Now heat a tawa. Pour a ladleful of batter in it and swirl the tawa so that the batter coats evenly and thinly.
- Drizzle some oil and Cook it for 3-4 mins on one side until the bottom turns little crispy and golden brown. Fold in half and serve.
- Finish the entire batter like this. Serve it with coconut chutney or sambar.
