Hai Friends .. Hope everyone is doing great…I wish you all a very very happy weekend…I am completely busy this weekend, because I have two cake orders and one cookie order in my hand. So how could I not..I will let you know the results soon..Now coming back to today’s recipe..Lemon rice is a must in our house for once a week..Somedays we even have it twice or thrice..This is  a quick and simple dish to make if you have only minutes in your hands. A awesome spiced up rice with a hint of tangy taste.

Many people skip the turmeric in this dish.. But I strongly suggest you to add it because that  gives the awesome colour which a lemon rice should have..Amma makes this along with her signature potato poriyal( which I am yet to post)…But I often like to have it with this potato roast. Lemon rice with potato is a perfect combo..And this is one of my friend named eswari’s favorite dish, she can eat it all day without getting bored..I know you too will love it..So hope you try it and let me know how it came out.

Preparation Time : 20 mins
Cooking Time : 10 mins + 15 mins for coking rice
Serves :  1 or 2Ingrediants:

Rice – 2 cups cooked
Urad dal / Ulundu Paruppu– 1 tsp
Mustard seeds / Kaduku -1 tsp

Dry Red Chillies – 2 broken
Curry leaves -1 spring
Turmeric Powder / Manjal Podi -1tsp
Salt to taste
Lemon Juice – 2 tblspn or to taste
Oil- 2 tblspn

Method:

Heat oil in a kadai. Add mustard seeds, channa dal, urad dal, dry red chillies, curry leaves and fry for 30 seconds.

Now add in salt and turmeric powder and fry for 10 seconds.

Add lemon juice in and mix well.

Immediately add cooked rice in and mix well. Stir until everything is heated through.

Serve hot or put in lunch box along with potato poriyal.

I so enjoy the exotic (to me) recipes you share. Question: you refer to two kinds of dal. I have been under the impression that that is a kind of lentil. Are they cooked before you put them with the rice. I will only see your reply if you write to [email protected]. Thanks.
