    I came across this recipe while browsing the Internet which inspired me to create my own version. I worked on this recipe for quite sometime, I kept on tasting the seasoning, added more spices, reduced more spices and finally this is the recipe which I settled with. It taste close to the original maggi seasoning mix.

    About Maggi Tastemaker

    Maggi is one of India's top selling instant noodles brand. It is loved by many specially college goers, hosteller and bachelors. Something about this Instant noodles seasoning packet which makes it addictive. Make sure you check my dominos oregano seasoning blend recipe as well.

    The tastemaker that comes with the instant noodles has a mixture of spices and ingredients to create the iconic taste. When I was trying the spice blend for maggi, I found out that it has tomato powder added. I didn't have tomato powder on hand, but I found a packet of tomato soup mix. So I used that and it provided the close to real taste.

    Make a batch of this masala and have on hand. This special tastemaker adds so much umami flavour to your soups, stews and curries as well.

    For making maggi tastemaker at home. You need certain sets of spices and ingredients. Correct proportion of these spices put together to create the iconic masala taste from maggi noodles.

    Spice Powders - You need garlic powder, onion powder, red chilli flakes, ginger powder, cumin powder, turmeric powder, pepper powder and coriander powder, red chilli power, amchoor powder, fenugreek seed powder and garam masala powder.

    Speciality Ingredients - The unique ingredients that helps to give the iconic taste is either tomato powder or tomato soup powder. Here I am using tomato soup powder.

    Cornstarch - You will be needed cornstarch as well. This helps with the thickening of the noodles once you cook it.

    Seasonings - as far as the seasoning. You will be using salt, sugar and citric acid.

    How to Make Maggi Tastemaker (Stepwise Pictures)

    Spice Blends

    1)For making maggi tastemaker at home. You need certain sets of spices and ingredients. Correct proportion of these spices put together to create the iconic masala taste from maggi noodles.

    In this plate, I have garlic powder, onion powder, red chilli flakes, ginger powder, cumin powder, turmeric powder, pepper powder and coriander powder.

    2)In this bowl, there is red chilli power, amchoor powder, fenugreek seed powder and garam masala powder.

    3)Now comes to some of the main and unique ingredients that helps to give the iconic taste. You will be needing either tomato powder or tomato soup powder. Here I am using tomato soup powder. You will be needed cornstarch as well.

    4)Now in this little bowl. I am having a mix of salt, sugar and citric acid.

    Blending Masala

    5)Now add in all the spices into the blender jar. use a small jar for even mixing. Since some of the spices and ingredients are in large crystals, it is important to blend for even mixing.

    6)I am adding the second set of spices as well.

    7)Add in the sugar, salt, citric acid mix as well.

    8)Add in cornstarch. This helps with the thickening of the noodles once you cook it.

    9)This is the soup packet I am using.

    10)This is one of the important ingredient in making maggi tastemaker. If you have tomato powder on hand, you can use that.

    11)Blend everything up for 30 seconds.

    12)Add it while cooking noodles and enjoy.

    How to Use Homemade Tastemaker

    1)Heat 1 tsp oil in a pan. Add in your preferred vegetables of choice and saute for 2 to 3 minutes till raw smell leaves.

    2)Pour in water and your preferred noodles of choice. Cook until noodles is almost cooked.

    3)Add in the required amount of tastemaker to your taste. Mix well so it combines evenly.

    4)Serve and enjoy.

    Expert Tips

    • If you don't have some of the spices on hand, you can skip that. But the main spices I would recommend not to skip are garlic powder, onion powder, tomato soup powder, citric acid and sugar which are very important for the taste. 
    • Instead of grinding, you can mix it in a bowl as well.
    • Store the powder in an air tight container in fridge.

    Serving & Storage

    You can store this powder in an air tight container in fridge upto 2 months. You can add this while making noodles, soups and stews.

    Ingredients

    • 1½ tsp Onion Powder
    • 1½ tsp Garlic Powder
    • 1½ tsp Coriander Powder
    • 1 tsp Chilli Powder
    • ½ tsp Turmeric Powder
    • 1 tsp Cumin Powder
    • 1 tsp Pepper Powder
    • ¼ tsp Fenugreek Powder
    • ½ tsp Ginger Powder
    • 1½ tsp Garam Masala Powder
    • 1 tbsp Sugar
    • 2 tsp Red Chilli Flakes
    • 1½ tsp Salt
    • 1 tsp Cornstarch
    • ½ tsp Citric Acid
    • ½ tsp Amchoor Powder
    • 2 tbsp Tomato Powder or Tomato Soup Powder

    Instructions

    • Take all the ingredients in a blender and pulse few times to it is completely mixed up.
    • Store this in a air tight container in fridge.

        Just sundry cut onions , garlic and ginger till crisp. Then blend .u can get fresh onion , garlic and ginger powders without any additives.

      Hi Aarthi- I tried your recipe it was awesome.. I like it so much. I'm a big fan of maggi, from the day its banned, I was missing it very badly. When I googled for maggi masala recipe I found your blog and tried it.. mindblowing.. I would say its a better version of maggi masala and healthy too, yummy too!. Thanks for sharing it:)
