Prawns, bread and sesame seeds add a delightful crunch and flavour to the recipe. You can serve these scrumptious toast for kids evening snacks or as a party appetizer. You can even refrigerate or freeze the prawn bread a day before and fry it whenever you want.

    About Sesame Prawn Toast

Prawn toast is a traditional recipe from China and it is quite popular in Hong Kong. It is made using raw prawns which are cleaned and deveined. A lumpy paste is prepared by grinding prawns, chilli, garlic, ginger, cilantro, onion, soy sauce and egg. This paste is then spread over the bread slices, which is then covered with a generous amount of sesame seeds and fried in oil.

After our recent trip to Japan, I started recreating all the recipes we tried over there in restaurants and in convenience stores like seven-eleven. I’ve already recreated some of the recipes like misir wat, kare pan, injera and now I made this prawn sesame toast.

I bought some large quantities of prawns for making prawn thokku and I took some prawns and kept it aside to prepare this toast during dinner. If you love prawns and want to make something different from the usual, then you should give this recipe a try. I’m sure you will definitely love this ! And it will be super addictive.

WHY THIS RECIPE IS A HIT

Kids friendly : Prawn sesame toast is a mildly spiced recipe. So kids will surely love this recipe for its taste, flavour, crunch and texture. It is a kind of finger food fry like nuggets and so it is a great option for kids evening snacks or for kids birthday party starters. Serve the toast with sweet chilli sauce or tomato ketchup.

Burst of flavours : The beauty of the toast is how the ingredients like prawn, onion, chilli, soy sauce and spices creates a fresh, flavourful spread and it enhances the taste of the toast without overpowering. When the bread is fried, the crunches offer a nice texture. It is such a satisfying and comforting recipe.

    Ingredients

White bread : White bread is best for making this toast. As it will be thick and hold the shape when fried. You can also use wheat bread, millet bread based on your diet. Trim the edges of the bread before spreading the paste.

Prawn : Use small or medium sized prawns. Avoid large or tiger prawns. The smaller or medium prawns tend to cook faster and also blend with masala easily. Make sure the prawns are cleaned, deshelled and deviened.

White Sesame seeds : Use roasted white sesame seeds for toasting the bread. It gives a nutty taste and texture when fried. You can also use a mix of roasted black and white sesame seeds for toasting.

Oil : Oil is used for frying the toast and it helps to achieve the golden crispy texture. You can use any oil like vegetable oil, peanut oil or sunflower oil of your choice.

Binding : I have used egg whites as the binding agent. You can also add corn starch, all purpose flour for binding.

Aromatic ingredients : I have used freshly minced ginger and garlic, half portion of onion, half green chilli and some coriander leaves to grind along with prawn. It adds a warm, slightly spiced and fresh flavour to the spread. You can adjust the quantity of chilli based on your spice level.

Soy sauce : Soy sauce plays a vital role in Chinese cuisine. Add a ¼ teaspoon of soy sauce while grinding as it adds a umami flavour to the toast.

Spices : I have used red chilli and black pepper powder for the spice and heat.

Sweet chilli sauce : The toast is served hot with the sweet chilli sauce as a dipping. You can also serve with other dipping sauces like tomato ketchup, hot sauce and mayonnaise of your choice.

    Hacks

Deshelled and deveined prawn : If your prawns are not deveined, then use a toothpick and insert on the back of the prawn and slowly remove the intestinal tract ( a black line ) . It is best to remove before washing and cooking. Wash and clean the prawns. Strain and dry the water from the prawn completely before grinding.

Food processor : Use a blender or food processor to mince the prawn. Then add the spices like ginger, garlic, onion, chilli, egg white and soy sauce to blend everything together with prawn without adding any water.

Assembling : Place the sesame seeds on a large plate. Take the bread, trim off the edges, spread the prawn paste on a side and dip it on the sesame seeds. The seeds will stick to the prawns.

Shallow or deep frying : In a frying pan, add oil and let it heat it up. Once the oil is hot enough, fry the prawn sesame side first and then after 2 minutes fry on the other side of the bread till it is golden brown.

Baking : Preheat the oven to 180 degree celsius. In a baking tray, arrange the bread pieces and brush them with oil. Fry them in the oven for 5 to 10 minutes. At an interval of 3 minutes, turn each side and cook. It should be done till golden crisp.

Air frying : If you’re conscious about oil consumption and health, then air fry the toast. Preheat the air fryer to 200 degree celsius. Place the prawn toasts in the air fryer basket. Spray a little cooking oil over them. Air fry the toasts for 5 to 7 minutes or until it is fried golden crispy.

    Expert Tips

    • Trim the edges off the bread, and cut the bread into a triangle or square of your choice.
    • Chill the blended prawn mixture in the refrigerator for 30 minutes as it helps to hold the shape and reduce oil consumption while frying.
    • Don’t spread the prawn paste like a thin jam, generously spread like a thick layer.
    • You can test the heat of oil by dropping a small piece of bread, if it floats on top immediately then fry the bread.
    • Garnish the fried toast with chopped spring onion.
    • Make sure to evenly spread the prawn mixture and cover all sides of the bread, otherwise the sesame seeds won’t stick properly.
    • Don’t overcrowd the pan, fry in small batches.

    Storage

Store the assembled prawn bread in the refrigerator or in the freezer. Stack the bread pieces by placing a parchment paper in between them and freeze it for a month. It can be fried or baked whenever you want.

    Serving

This prawn sesame toast tastes best when served with sweet chilli sauce. You can also serve it with regular tomato ketchup or mayonnaise.
