    Stuffed Brinjal Fry Recipe

    Stuffed brinjal fry is a South Indian dish in which small brinjals are filled with a spicy and mix of coconut, spices and tamarind. This stuffed brinjals are cooked in oil with tempering which makes them aromatic and delicious.

    This dish is also called as stuffed eggplant fry, masala stuffed brinjal or spicy brinjal fry. This tasty brinjal fry is a perfect side dish which can be served with rice, chapati or sambar. This easy brinjal fry recipe is perfect for simple lunch meal or special dinner meal.

    I love brinjal recipes, I try different one each time, as a result i have posted so many brinjal recipes in this blog. This recipe is one of my recent try and it tasted delicious. There are so many ways you can make this dish, this is a easy method. Will share different variations soon. This recipe comes from the Andhra region.

    About Stuffed Brinjal Fry

    Stuffed brinjal fry is a great dish which brings strong flavours in soft vegetable. It is a popular Andhra recipe which is also known as gutti vankaya fry. This dish can be made with very few ingredients which are available in home and it can't take much time in making.

    This dish is both filling and satisfying and is perfect for lunch and dinner. People who don't like brinjals also loves to have this tasty side dish. This stuffed brinjal fry recipe is a simple dish yet it is a flavourful option for everyday meals.

    Stuffed Brinjal is easy to make and steps are simple. It don't take much time or skills. I can serve it perfectly with rice, chapati, sambar and even curd rice.

    The mix of coconut, garlic and spices used in this dish makes it tasty to eat. It gives a comforting flavour for spicy eaters. Stuffed brinjal fry is a dish that feels special but it is a simple recipe. This dish is great for everyday meals and festive occasions.

    Slit carefully the brinjal and check for worms, sometimes brinjal might have worms inside. Deep cut will spoil the structure of the brinjal.  Roast coconut lightly before grinding it enhance the flavour of the stuffing. Cook the brinjal on low heat. It helps to cook thoroughly without burning the spices. Slight toss the brinjal. Over tossing will break the brinjal into pieces.

    Ingredients

    Brinjal: This is the main ingredient of the recipe. It absorbs the flavours well. Always Choose small and firm brinjals. It holds the stuffing better and cook evenly.

    Oil:  It helps to cook the brinjals evenly and makes them rich and tasty. You can use regular oil or groundnut oil.

    For stuffing: I used coconut which adds a natural sweetness and creamy texture to the stuffing. Spices like chilli powder, coriander powder, turmeric is used.

    Jaggery: It adds a touch of sweetness which all the spices.

    Tamarind Pulp: This gives a tangy flavour which makes the dish more tasty.

    Step by Step Pictures

    1)Take all your ingredients. Small baby brinjals are great for this recipe.

    2)First lets make the masala in a blender. Take coconut in a blender.

    3)Add in red chilli powder.

    4)Add in coriander powder.

    4)Add in turmeric powder.

    5)some garlic cloves adds flavour to the brinjal.

    6)Add a small piece of tamarind.

    7)Now add in jaggery and salt.

    8)Make this into a coarse mixture. You shouldn't add any water. The moisture from the coconut is enough.

    9)This is the consistency you are looking for.

    10)Take your brinjals. Make sure to use small brinjal.

    11)Make sure your brinjal is fresh without any bruises.

    12)Slit it like this. Make sure to keep the stems intact.

    13)Open the brinjal slightly and check whether there is no worms inside.

    14)Now stuff the brinjal with the filling. Stuff it with as much filling as you could.

    15)All brinjal stuffed.

    16)Take a pot with lid. Add in oil. Be generous with the oil.

    17)Once the oil is hot, add in mustard and curry leaves. Allow them to pop.

    18)Add in brinjal.

    19)Toss well in the oil.

    20)Cover with the lid and let them cook.

    21)Make sure to check inbetween and toss them well.

    22)Cover them until the brinjal is cooked.

    23)Now the brinjal is cooked and ready to serve.

    Expert tips

    • Use fresh brinjals. They absorb the stuffing better and it tastes better.
    • Use heavy bottomed pan or non stick pan. It prevents the brinjals from sticking or getting burnt.
    • Taste the stuffing before adding . Adjust salt and spices for better flavours.
    • Press the brinjals lightly while cooking. It helps the stuffing to stick inside.
    • Add roasted peanuts or sesame seeds to the stuffing. It gives extra crunchiness to the recipe.

    Variations

    Besan stuffed peppers recipe: In this recipe bell peppers are filled with a spicy besan mix. In this peppers stay soft and the stuffing is tasty and slightly crunchy. This goes well with rice and roti.

    Stuffed bitter gourd recipe: Bitter gourds are filled with a spicy mix that makes them less bitter. By cooking slowly bitter gourd absorbs full flavours and becomes soft. This is a healthy dish which is good for lunch and dinner.

    Panner stuffed capsicum recipe: In this dish Bell peppers are filled with soft panner and spices. In this recipe peppers stay tender and panner is creamy and tasty. This is a colourful and tasty dish which is perfect for comforting meals.

    Q: Can I use big brinjals?

    Small brinjals gives better taste. But you can also use bigger ones.

    Q: Can I skip coconut in the stuffing?

    Yes. But coconut gives good flavour and texture to the recipe

    Q: How long should I cook the brinjals?

    Cook until the brinjals becomes soft and cooked thoroughly. Maximum it will take 10-15 mins.

    Q : Can I prepare stuffing in advance?

    Yes. You can grind the stuffing and keep it ready before cooking.

    Q: How do I prevent the brinjals from breaking?

    Toss them gently and cook on low heat with the lid on.

    Q: Can I freeze stuffed brinjals?

    Fresh ones are tastes better, but you can also freeze the brinjals.

    Ingredients
      

    • 8 small Brinjal
    • 4 tablespoon Groundnut Oil
    • 1 teaspoon Mustard Seeds
    • 2 sprig Curry leaves

    For Stuffing

    • ½ cup Coconut grated
    • 2 teaspoon Red Chilli Powder
    • 1 tablespoon Coriander Powder
    • 1 teaspoon Turmeric Powder
    • 1 teaspoon Salt
    • 1½ teaspoon Jaggery
    • 2 teaspoon Tamarind pulp
    • 2 cloves Garlic peeled

    Instructions
     

    • Take the stuffing ingredients in a blender and make it into a coarse puree.
    • Take the brinjal, slit them in the middle,open lightly, stuff the brinjal with this mix.
    • Heat oil in a pan, add in mustard and curry leaves. Saute them for a min.
    • Add in the brinjals, and toss well in the oil. Cover and simmer for 10 to 15 mins till the brinjal is cooked. Toss them often.
    • Serve.
