    Brinjal Fry also known as eggplant fry or fried eggplant is a simple and delicious side dish made with brinjal all over India. If you are an eggplant fan, then this spice coated brinjal pan fried in oil will be your new favourite. In this blog post, I have shared brinjal fry made 3 different ways, using 3 varieties including round brinjal, eggplant and green brinjal.     Brinjal are my favourite, I make them quite often. Amma loves it, it is one of her favourite vegetable.  Whenever we buy eggplants or brinjal, this is the first recipe I think of. In my opinion fried eggplants taste great. I have few varieties of brinjal recipes on my blog.

    Some of my favourite is brinjal poriyal, brinjal tawa roast and my aachi’s smoked eggplant dip. This recipe is crispy and delicious pan-fried brinjal slices which have soft in texture from within and crisp from outside.

    Versatile Brinjal (Eggplants)

    Brinjal is a universal vegetable, it is a most used vegetable around the world. This humble vegetables is available throughout the world in different forms and shapes. There are more than 100 varieties of brinjal available throughout India and called by different names across the nation. For example Begun in Bengali, ringna in Gujarathi, baingan in Hindi, Vashuthana in Malayalam, Kathirikai in Tamil, venkaya in Telugu. It is also called as eggplants, aubergine in other parts of the world. 

    You can use this humble vegetable in making many different recipes. Some of the most popular Indian recipes includes kathirikai puli kuzhambu, kathirikai masiyal, brinjal roast and vangi bhath. Some of the International recipes include baba ganoush, moussaka. 

    About Brinjal Fry (Fried Eggplant)

    One of the most popular ways to cook brinjal is frying it. Fried Brinjal Recipe also known as brinjal fry or fried eggplant is a popular Indian side dish made with brinjal. Making brinjal fry can be pretty easy, it can be made many different ways. Basic recipe of brinjal fry is made by coating brinjal in a spicy masala and fried in oil. 

    This recipe can be made with any variety of brinjal including long green ones, round purple brinjal, eggplants. They are so easy to make plus tasty as well. They go pretty much with anything.

    Making Brinjal fry or Eggplant fry is easy and can be made into many different ways. In this recipe post of brinjal fry, I am sharing 4 ways of making fried eggplants that you will love.

    Brinjal Fry Ingredients

    Brinjal | Eggplant - use young variety of brinjal or eggplant which tends to be on the sweeter side. Also when you slice eggplants, make sure it is thin slices so it cooks faster and gets crispy when fried.

    Spices - You can use a mix of chilli powder, turmeric, coriander, cumin and amchoor powder.

    Flour to use - you can use some kind of flour or a combination of flour to coat the eggplant. I have used gram flour, rice flour and cornstarch in these recipes. 

    Oil - use neutral tasting oil to fry the eggplants. Also don’t add too much oil because the brinjal soaks up lots of oil. 

    Variety of Brinjal (Eggplant) to Use

    For making brinjal fry, it is best to use large eggplant which has less seeds so it will be less bitter in taste. But you can use any variety of brinjal that you can find. I have used three varieties in this recipe and they turned out to be great.

    3 Ways of Making Brinjal Fry & More Brinjal Recipes

    As mentioned earlier, brinjal or eggplants can be cooked many different ways. Some of the most popular recipes made using brinjal are baingan bharta, Andhra brinjal fry, vankaya nuvula masala. 

    For making brinjal fry, it is best to use large eggplant which has less seeds so it will be less bitter in taste. But you can use any variety of brinjal that you can find. I have used three varieties in this recipe and they turned out to be great. 

    All the three ways of brinjal fry made in this recipe are coated with some kind of flour like gram flour, cornstarch or rice flour. Since brinjals tends to absorb lots of oil when fried. The flour coating helps prevent them from absorbing too much oil. Some recipes using sooji as coating for brinjal which gives super crispy exterior. 

    Brinjal Fry - This version of fried brinjal includes brinjal dipped in a spiced gram flour batter and fried till crispy. 

    Green Brinjal Fry - I used long green variety of brinjal for this recipe. A spiced batter made with corn starch and spice powders. This creates a crispy exterior.

    Brinjal Tawa Fry - a dry mixture of rice flour, spices is mixed. Sliced round variety of brinjal is coated in this dry rice flour mixture and fried in oil. 

    How to Make Brinjal Fry (Stepwise Pictures)

    Preparing Eggplant

    1)Take your eggplants. Use young tender variety of brinjal or eggplant which tends to be on the sweeter side. Wash the eggplant really well.

    2)Cut off the stem or stalk from the eggplant. Use a sharp knife to slice them into thin slices.

    Make Batter

    3)Now for making marination or coating for the eggplant. Take gram flour in a mixing bowl.

    4)Add in some rice flour, rice flour helps with the crispy exterior.

    5)Now add in salt and turmeric powder.

    6)Add in chilli powder, coriander powder and cumin powder. If you like spicy food, you can add more chilli powder.

    6)Add in amchoor powder. If you don't have amchoor powder, add in some lemon juice instead.

    7)Add little water and make it into a slightly thin batter. The batter shouldn't be too thick like bajji or pakora batter. it has to be thin.

    Coating Eggplants

    8)Take your eggplant slices and dip in the batter.

    9)The batter should coat the eggplants thinly and not thick.

    Frying Brinjal Fry

    10)Now drop the eggplant in hot oil and fry till golden brown. it should take 2 to 3 minutes on each side. Once the eggplant gets golden in the base, use a pair of tongs to flip this over and fry.

    11)Fry on the other side till golden brown. Remove this on some paper towel to drain off excess oil. Serve with rice.

    Variations

    Green Brinjal Fry Recipe

     I used long green variety of brinjal for this recipe. A spiced batter made with corn starch and spice powders. This creates a crispy exterior.

    Ingredients for Green Brinjal Fry

    • 2 large Long Green Brinjal cut into rounds
    • Salt to taste
    • 2 tsp Kashmiri Chilli Powder 
    • 1 tsp Turmeric Powder 
    • 1 tsp Garam Masala Powder
    • 3 tbsp Cornstarch 
    • 1 tbsp Plain Flour
    • 1 tsp Lemon Juice 
    • 2 tsp Ginger Garlic Paste 
    • Water as needed
    • 4 tbsp Oil 

    How to Make Green Brinjal Fry

    1)Wash your green brinjal. Remove the stalks off.

    2)Cut into thin slices.

    3)Now lets make batter for the fry. Take salt, spice powders in a bowl.

    4)Add in cornstarch and plain flour.

    5)Add in ginger garlic paste.

    6)Add water and lemon juice to form a thin batter.

    7)Batter is ready.

    8)Add the green brinjal slices in the batter and coat it really well with the batter.

    9)Heat oil in a tawa and pan fry the brinjals on low to medium heat till golden and cooked.

    10)Flip over and cook on other side till golden brown.

    11)Remove to a plate and serve.

    Brinjal Tawa Fry Recipe

    Making this version of tawa fry is easy. A dry mixture of rice flour, spices is mixed. Sliced round variety of brinjal is coated in this dry rice flour mixture and fried in oil. 

    Ingredients for Tawa Brinjal Fry

    • 6 Round Brinjals 
    • 4 tbsp Rice Flour
    • 2 tsp Kashmiri Chilli Powder
    • 2 tsp Coriander Powder 
    • Salt to taste
    • Oil  for pan frying

    How to Make Tawa Brinjal Fry

    1)Wash brinjals and cut off the top. Now slice this thinly into circles.

    2)make sure the slices are thin so it cooks faster.

    3)In a shallow plate, take rice flour and add in chilli powder, coriander powder and salt and mix well.

    4)Now your dry mixture is ready.

    5)Now take each brinjal slices and dip in the rice flour mixture.

    6)Coat brinjal on both sides with the rice flour mixture.

    7)Now all the brinjal is coated with rice flour.

    8)Now heat 2 tblspn of oil( for one batch) in a frying pan and drop the brinjals one by one. Cover with a lid and let it cook for 5 mins on one side. Now remove the lid and cook it for another 3 mins on other side on a low flame.

    9)Remove the brinjals to a plate and continue the process until you end. Serve hot with rice and any gravy.

    Expert Tips

    • Make sure to pick tender eggplants or brinjal which is fresh. This makes it less bitter and cooks faster.
    • Slice eggplants thinly so it cooks more evenly and faster which helps it get crispy coating. 
    • You can add more spices if you like it on the spicy side. 
    • Sautéed onions and fried curry leaves can be sprinkled over fried brinjal for an elevated look.
    • Add little oil at a time when frying brinjal, because brinjal is like a sponge which absorbs lots of oil when frying. 

    Storage and Serving 

    Brinjal fry taste best when served hot immediately after it is fried, as it cools the brinjal tends to get soggy. 

    This fried eggplant taste best with dal rice, dal khichdi, curd rice and sambar rice.

    Ingredients for Brinjal Fry

    • 1 large Eggplant
    • 6 tbsp Oil or as needed for shallow frying
    • ½ cup Gram Flour
    • ¼ cup Rice Flour
    • 2 tsp Kashmiri Chilli Powder
    • 2 tsp Coriander Powder
    • ½ tsp Turmeric Powder
    • 1 tsp Cumin Powder
    • 1 tsp Amchoor Powder | Dry Mango Powder
    • Salt to taste
    • Water as needed

    Ingredients for Green Brinjal Fry

    • 2 large Long Green Brinjal cut into rounds
    • Salt to taste
    • 2 tsp Kashmiri Chilli Powder
    • 1 tsp Turmeric Powder
    • 1 tsp Garam Masala Powder
    • 3 tbsp Cornstarch
    • 1 tbsp Plain Flour
    • 1 tsp Lemon Juice
    • 2 tsp Ginger Garlic Paste
    • Water as needed
    • 4 tbsp Oil

    Ingredients for Tawa Brinjal Fry

    • 6 no Round Brinjals
    • 4 tbsp Rice Flour
    • 2 tsp Kashmiri Chilli Powder
    • 2 tsp Coriander Powder
    • Salt to taste
    • Oil for pan frying

    Instructions

    How to Make Brinjal Fry

    • Slice eggplant into thin slices.
    • Mix the batter ingredients to a smooth batter. the batter should be little thin, but not too thin.
    • Heat oil for shallow frying, dip the eggplant slices in the batter and fry till golden on both sides. Strain on to some paper towel. Serve.

    How to Make Green Brinjal Fry Recipe

    • Take all the ingredients except brinjals and oil in a bowl and mix to a smooth paste. Add brinjals in and toss well.
    • Heat oil in a tawa and pan fry the brinjals on low to medium heat till golden and cooked. Remove to a plate and serve.

    How to Make Tawa Brinjal Fry

    • Wash brinjals and cut off the top. Now slice this thinly into circles.
    • In a shallow plate, take rice flour and add in chilli powder, coriander powder and salt and mix well.
    • Now take each brinjal slices and dip in the rice flour mixture and set aside in a plate. Do exactly same with everything.
    • Now heat 2 tblspn of oil( for one batch) in a frying pan and drop the brinjals one by one.
    • Cover with a lid and let it cook for 5 mins on one side. Now remove the lid and cook it for another 3 mins on other side on a low flame.
    • Remove the brinjals to a plate and continue the process until you end. Serve hot with rice and any gravy.
