    When you think of diwali snacks, muruku is the thing which comes in your mind first. I have a recipe for mullu muruku but there are so many other muruku too. I am going to post a couple of them for this Diwali, so stay tuned. And when you want to make muruku, you need urad dal flour. You can find them at stores, but making them at home is not at all a big deal. Here is the recipe and make it in bulk so you can have them handy when you want to make diwali snacks.

    Urad dal is rich in protein and dietary fiber. It is easily available in many households, and this flour can be made in less than 20 minutes. Urad dal is a versatile ingredient, it is used in many Indian dishes like porridge, idli, dosai, vadai, murukku.

    Ingredients

    Whole urad dal : Fine and best quality of whole urad dal is used for this recipe. And also use skinless ( de-husked black urad dal ) for the flour making.

    This urad dal flour can be stored in an airtight container for months. Making at home ensures free from additives and preservatives. One of my favourtie recipe using urad dal is urad dal kali ( porridge ). It is a traditional south Indian sweet recipe which is prepared using urad dal flour( black urad dal), palm jaggery and gingelly oil. Usually in south India, this urad dal kali is offered to girls, women for bone strength during menstruation, pregnancy, delivery.

    How to Make Urad Dal Flour (Stepwise Pictures)

    You need whole urad dal
    Start roasting in a kadai
    Stir always
    Once they turn golden
    Remove to a plate a cool it
    Take it in a blender
    Blend it
    Once it is powdered
    Transfer it to a sifter
    sift it
    Cool it down
    Store in an air tight container

    Expert Tips

    Here are some of the tips and tricks to be followed for urad dal flour :

    • Roast the urad dal in a heavy bottomed pan. Make sure the flame is low to medium.
    • Don’t burn the urad dal while roasting.
    • Don’t use split urad dal for preparing the flour.
    • After roasting, cool down the urad dal completely. Once it is cooled down, grind them into a fine powder.
    • Sieve the powdered urad dal flour to ensure small granules are removed. Spread the powder in a newspaper or kitchen towel and dry them.

    Storage 

    Store it in an airtight container for freshness. Store in cool and dry places to avoid rancid.

    1.Which blender works best for grinding flour ?

    Any type of mixie, blender can be used to grind the flour. Once it is ground, it is best to sieve the flour.

    2.Can I use split urad dal ?

    Yes, you can use split urad dal. But the measurement, texture and flavour differs.

    3.How long homemade urad dal flour lasts?

    If it is stored in cool and dry place, it lasts for upto 6 months.

    4. Is it necessary to wash the urad dal for this recipe ?

    Back then, our previous generations generally wash and sun dry the whole urad dal before making urad dal flour or any type of flour at home. To remove the impurities they did that. Now we can resource the best quality urad dal, I guess. If you like to wash and use, you can completely do it. But make sure it is completely dried before roasting.

    5.What kind of urad dal works for this recipe ?

    Un-skinned ( de-husked black urad dal) works best for homemade urad dal flour. Generally black urad dal flour is used for making kali ( porridge ).

    Uses & Recipes

    Idli batter : A quick version of idli batter can be prepared using rice flour, homemade urad dal flour, water and salt. Ferment the batter and use it.

    Urad dal vadai : Urad dal vadai is a traditional south indian snack recipe. Soak and grind the urad dal to a smooth dough. Add onion, green chillies, curry leaves, asfoetida, and salt to shape into a urad dal vadai.

    Urad dal waffle : The regular rice and urad dal batter can be converted into waffles by adding spices. It can be served as a kids snack recipe.

    Murukku : You can make ‘n’ number of murukku recipes when you have homemade urad dal flour. Murukku recipes like thenkuzhal, coconut milk murukku, oosi murukku, ragi murukku, garlic murukku etc.

    Seasoned urad dal : Instead of moong dal, cook the urad dal and mash it. Do a simple tadka with mustard seeds, jeera , hing and curry leaves. Serve it with hot rice and ghee.

    Seedai : Seedai is a popular South Indian snack made with rice flour, urad dal flour and spices. The dough is shaped into a ball and deep fried.

    Thattai : Thattai is a South Indian snack made with rice flour, urad dal flour. The dough is rolled out thinly and deep fried in oil. It is so crispy and flavourful.

    Urad dal kali : Urad dal kali is a traditional south indian recipe. It can be made both sweet and savoury.

    Ingredients

    • 2 cups Whole White Urad dal

    Instructions

    • Take a heavy bottom kadai. Add in urad dal and start roasting on a low flame till it is roasted, the colour should get darker and light golden.
    • Now remove it to a plate and allow it to cool down. Once cooled take it in a trusty blender and powder it finely.
    • Now sift them. You can add the coarse mixture to the next batch which you grind. Spread it on a newspaper. Allow it so it cools down. Store this in an air tight container.

      Good. Easy, and as they say...no need to wash the urad dal first? Just roast, dry, and powder it. Stays fresh how often long?
