Potato Podimas ( Spiced Up Mashed Potatoes)

I have already told you about my love for potatoes...Once again I am telling you “I am a Potato Girl”..

I am delivering you another potato dish which has recently become amma’s favorite..One day I made Brinjal kulambu with potato podimas..As soon as i finished making it my sister’s started digging into it,I think mum went to some marriage function and she had food over there..Below is the conversation which we had..

I asked her “Amma..Taste this and tell me how it is”

Amma “What!!! My Tummy is totally full It can’t even take a single rice in”..

”Just taste that potato alone amma ,it came out really nice” – This is me


“See I telling you again and again right..I can’t” – Amma

“Ok..That’s fine..What for me you are missing one fine dish ”..I turned back to anusha and asked “Anu is it good” She said “Akka super...mmmmm”

Conversation stops here..After 10 mins..

Amma came slowly to the potatoes and took a huge bite...”mmmm..Wow..What all you put in that..Its really good..How you did it.”

Me and ma sister’s looked at her at the sametime..While she finished half of that bowl,For your information She didn’t stop at that alone..She took couple of spoonful of Brinjal kulambu and ate that too...

Amma...Love you..

Anyway I am giving you the recipe  straightaway..

Ingrediants:

Potato-4 cooked
Onion-2 chopped finely
Green chilli-3 chopped finely
Coconut- ½ cup
Mustard seeds / Kaduku-1 tsp
Cumin seeds / Jeerakam-1 tsp
Urad dal / Ulundam paruppu-1 tsp
Channa dal / Kadala paruppu-1 tsp
Asafoetida / Hing /Kaya podi- ¼ tsp
Salt to taste
Curry leaves 1 spring
Oil-1 tblspn

Method:

Mash potatoes slightly.Chop up your onions and green chillies..

Heat oil in a kadai...Add in mustard seeds allow it to pop..

Add in channa dal,urad dal,cumin seeds,asafoetida,curry leaves..

Now add in onions and green chillies..Season with salt.Cook this for 3 mins..

Add in coconut and mix well..Now add in potatoes and toss well so that it coats with the masala..

Stir fry this for 5 mins..

Serve it with any gravy and rice...

Pictorial:
Take all your ingrediants
Prepare everything up
Heat oil and crackle mustard seeds
add in channa dal and urad dal
add in cumin seeds
in with hing
and curry leaves
add in onions and curry leaves
sprinkle some salt so that the onions will cook faster
Onion is nice and translucent
add in coconut
stir fry for a minute
add in potatoes
and mix well
Done
Serve
Totally delicious..
