    Sweet Corn Fried Rice Recipe

    Sweet corn fried rice is a quick and tasty dish made with basmati rice, sweet corn, fresh vegetables and simple seasonings. Enjoy this rice hot on its own or pair it with Indo Chinese side dishes like chilli chicken, honey chilli potatoes or chilli paneer for a satisfying meal.

    I made this today for lunch, I had a packet of sweet corn lying in the freezer and my lil one just loves steamed sweet corn. So i steamed some for her and made this delicious fried rice for lunch.

    This is so easy to put together, you can add whatever veggies you like or have on hand. You can make this just with sweet corn and spring onions. You don't need any side dish for this, but you can have it with any Chinese recipes.

    About Sweet Corn Fried Rice Recipe

    Sweet corn fried rice is a simple Indo Chinese style rice prepared with sweet corn, cooked rice, vegetables and basic seasonings like soy sauce, ginger, garlic and spring onions.

    The sweetness of the corn adds a delicious flavour that pairs really well with the taste of fried rice and is perfect for both kids and adults. 

    You can make this recipe with freshly cooked rice or leftover rice from the refrigerator, which makes it perfect for busy lunch or dinner days. It is also a great option for school lunch boxes because kids love the sweet corn and the flavours of fried rice. 

    Another best thing about this recipe is its versatility. You can easily customize it according to your taste by adding tomato ketchup, schezwan sauce, chilli sauce or chilli oil for a spicier variation. You can also add scrambled eggs or cooked chicken for extra flavour.

    Serve sweet corn fried rice hot with side dishes like chilli chicken, dragon chicken or pepper gobi for a complete meal.

    At my home, I usually prepare different varieties of fried rice like chicken fried rice, egg fried rice, or schezwan rice once a week.

    Recently, I had some frozen sweet corn and a few vegetables in the kitchen, so I decided to make this simple version of fried rice.

    It turned out incredibly delicious and kids enjoyed it so much. So, I thought of sharing this easy sweet corn fried rice recipe that you can also try at home for a quick and flavourful meal. 

    Ingredients

    • Oil : Use any cooking oil of your choice to make the fried rice. 
    • Basmati rice : Long grain basmati rice works best for making fried rice.
    • Ginger and garlic : Ginger and garlic enhances the overall taste of the fried rice. 
    • Green chillies : Green chilli adds heat.
    • Spring onion : Spring onion adds a fresh, onion flavour and enhances the taste of the dish. 
    • Vegetables : I have added carrot, cabbage and capsicum in this recipe.
    • Sweet corn : I have used frozen sweet corn. You can also use fresh sweet corn if available. 
    • Salt and sugar : Salt and sugar balances the taste with mild sweetness. 
    • Red chilli flakes : Red chilli flakes adds heat.
    • Soy sauce : Soy sauce gives the fried rice its signature Indo Chinese taste and adds rich umami flavour. 
    • Vinegar : Vinegar adds a slight tangy taste.

    Step by Step Pictures

    1)Heat oil in a wok. Add in ginger, garlic, spring onion white part, green chillies in oil. Saute for couple of minutes.

    2)Add in cabbage, carrot, beans, capsicum and saute for couple of minute.

    3)Add in salt and sugar and mix well.

    4)Saute for couple of minutes.

    5)Add in sweet corn and mix well.

    6)Toss for couple of minutes.

    7)Add in soy sauce and mix well.

    8)Add in vinegar and mix well.

    9)Toss well for a minute.

    10)Add in red chilli flakes.

    11)Mix well.

    12)Add in cooked rice and mix well. Toss on high for couple of minutes.

    13)Add in spring onion green and mix well.

    14)Toss on high for a minute.

    15)sweet corn fried rice is ready.

    16)Serve hot.


    Expert Tips

    • Always use cooled rice or leftover rice for the best fried rice texture. Freshly cooked hot rice can become soft and mushy while stir frying.
    • Toss everything together on high flame to get the restaurant style flavour and slight smoky taste. 
    • Don't overcook the vegetables, keep them slightly crunchy for better texture. 
    • For extra flavour, you can add pepper powder, tomato ketchup, chilli sauce or schezwan sauce according to your preference. 
    • You can also add scrambled eggs, cooked chicken or paneer to make the fried rice more protein rich, filling and delicious. 

    Storage and Serving

    Store the leftover fried rice in an airtight container in the refrigerator for 1 to 2 days. Reheat in a pan or in the microwave with a few drops of oil. 

    Serve this sweet corn fried rice with veg manchurian, chilli chicken, chicken manchurian or with hot and sour soup for a complete Chinese meal. 

    FAQ 

    Q. Can I use fresh corn ? 

    Absolutely ! You can use fresh boiled sweet corn or frozen sweet corn in this recipe. Both works well to make this fried rice.

    Q. Why did my fried rice become sticky ? 

    This usually happens when hot rice or overcooked rice is added. Always use cooled rice and stir fry them on high heat for the best restaurant style texture. 

    Q. Can I make this fried rice spicy ? 

    Absolutely ! You can easily make it spicy by adding extra green chillies, chilli flakes or add chilli sauce, schezwan sauce for a spicy version.

    Ingredients
      

    • 3 cups Basmati Rice cooked

    Aromatics

    • 3 tablespoon Oil
    • 1 tablespoon Ginger peeled and finely chopped
    • 1 tablespoon Garlic peeled and finely chopped
    • 3 no Green Chillies finely chopped
    • 4 no Spring Onion (White Part) finely chopped

    Vegetables to Use

    • 1 medium Carrot finely chopped
    • 2 cups Cabbage finely chopped
    • ½ medium Capsicum finely chopped
    • 1 cup Sweet Corn i used frozen

    For Flavourings

    • Salt to taste
    • 1 teaspoon Sugar to taste
    • 1 teaspoon Red Chilli Flakes to taste
    • 1 tablespoon Soy Sauce to taste
    • 2 teaspoon Vinegar to taste
    • 4 no Spring Onion (green part) chopped finely

    Instructions
     

    • Heat oil in a wok till smoking hot. Add in ginger, garlic, chillies and spring onion white and saute for a min or so.
    • Add in all the veggies and salt, sugar. Mix well and cook for 5 to 8 mins till it is cooked.
    • Add in sweet corn and saute for 5 mins till it is cooked. Now add in soy sauce, vinegar and mix well. Add in chilli flakes and mix well.
    • Then add in cooked rice and toss well. Add in spring onion greens and toss well. Serve hot.
