I am back after my long vacation. The tour was very fun and exciting throughout. But it had some plan change at the last minute. First our plan was to visit jammu and kashmir. But when we reached jammu we got the news that the roads to srinagar is blocked because of heavy rainfall, so our plans got changed and we visited himachal pradesh, punjab, amristar and dharamshala. It was so much fun, will be sharing pictures in facebook soon.
I love chicken cutlet, they are a very tasty snack. But in some bakery they just increase the amount of potatoes in them and reduce the chicken, i dont like that kind of cutlet. This is my way of making them. I like to use less potatoes and more chicken so you will get a tasty chicken cutlets. It is pretty easy to make as well.
Preparation Time : 5 mins
Cooking Time : 30 mins
Makes : 12 to 15 cutlets
Oil – 1 tblspn
Onions / Spring Onions – 1 medium size chopped finely
Ginger Garlic Paste – 1 tsp
Green Chilli – 1 chopped finely
Chilli Powder – 1 tsp
Coriander Powder / Malli Podi – 1 tsp
Turmeric Powder / Manjal Podi – 1/2 tsp
Cumin Powder / Jeera Podi – 1 tsp
Garam Masala Powder – 1 tsp
Chicken Mince – 300 grams
Boiled Potato – 1 large
Salt to taste
Coriander Leaves – 3 tblspn finely chopped
Lemon Juice a squeeze
All Purpose Flour / Maida – 3 tblspn
Breadcrumbs – 2 tblspn+ as needed for coating
Oil for Shallow frying
Heat oil in a pan and add in onions, saute till golden.
Add in ginger garlic paste and green chillies. Saute for a min.
Add in the salt and spice powders. Mix well.
Add in chicken mince and cook till the mince turns golden.
Take boiled potatoes in a bowl and mash it roughly. Add the mince and mix well.
Add in 2 tblspn of breadcrumbs and mix well.
Take small portion from it and shape it into a pattice.
Mix flour with water to a runny liquid, dip the pattice in the mix and coat it in breadcrumbs.
Heat oil for shallow frying, drop the cutlet in hot oil and fry till golden on both sides. Drain and set aside.
Serve with ketchup,

|Heat oil in a kadai|
|Add in chopped spring onions..You can use |
normal onions too, chop it finely
|saute them little|
|add in ginger garlic paste|
|give them a good toss|
|add in chopped green chillies|
|add in all the spices|
|add in garam masala powder|
|add in some salt|
|add in chicken mince|
|keep cooking them|
|as you saute them keep breaking them with your spoon|
|keep cooking them till golden|
|finally add some chopped coriander leaves|
|squeeze of lemon juice|
|now take some boiled potatoes, i used one large|
|mash them roughly|
|now add the cooled mince in this|
|mix them really well..use your hands|
|i found the mixture not binding, so i added 2 tblspn of breadcrumbs|
|take a small portion from the mix|
|shape it into ball|
|flatten it out|
|now take your dipping things|
|i took 2 to 3 tblspn of all purpose flour in a bowl|
|add some water and made it into a runny liquid|
|i took some dry breadcrumbs in a plate|
|I took a cutlet|
|dipped them in the flour mix|
|then in the breadcrumb mix|
|coated it on both sides|
|you can put this in fridge for 30 mins or so|
|heat oil in a pan for shallow frying|
|place the cutlets carefully in hot oil|
|fry till golden|
|remove it out|
|drain on to a paper towel|
