    Caramelle Pasta, fun candy shaped pasta. This pasta is so exciting to make and to eat. It is a super fun project to try with your kids and makes any occasion even more special.

    What is Caramelle Pasta?

    Caramelle means candies in Italian but with pasta it refers not to a sweet flavour but rather to the shape of the pasta. Filled pasta twisted in the end to create a candy like look. They look especially nice served for Christmas or a birthday dinner.

    How my Love for Pasta Started?

    Ever since I bought my pasta maker, I started using it more and more each day. For me making pasta has become like a therapy. Nothing can beat fresh pasta, it is a winner for sure.

    Once you start making fresh pasta, you can never go back. There is something so satisfying in making fresh pastas at home. I have made lots of variations of pasta starting from basic spaghetti, raviolis, lasagnas and many more.

    Caramelle pasta is my new discovery. I came across this pasta in pinterest and it caught my eye instantly. Initially my thought is this pasta is so complicated to make at home. But later when I watched few tutorials I found out that this is super easy to make and tried immediately.

    How to Make Caramelle Pasta

    • Make two colour pasta dough, Since dough should rest for 30 mins.
    • Roast pumpkins in oven to make filling. If you don't have oven use your pan.
    • Grind pumpkins to a puree and set aside.
    • Start rolling your pasta sheets.
    • Form the two toned pasta sheet.
    • Fill with pumpkin filling and form caramelle shapes.
    • Cook pasta in boiling water till done.
    • Serve as it is or with your favourite pasta sauce.

    These are pastas filled like ravioli. The filling can be any variety of ingredients but our recipe features a simple roasted pumpkin and garlic filling. I made it very basic with minimum ingredients.

    Instead of pumpkin filling, you can make ricotta filling too. I have shared the recipe in my youtube channel.

    How to make pumpkin filling for raviolis

    • Pumpkins, peeled and cubed.
    • Garlic, I like to add extra garlic for flavour.
    • Fennel seeds, this spice goes well with pumpkin and garlic.
    • Salt, Black pepper and Olive Oil
    • You can add any fresh herbs like basil or rosemary. But i kept it simple.

    Equipment

    • pasta maker

    Ingredients

    For Yellow Pasta Dough

    • 1 cup All purpose flour
    • 1 tsp Turmeric Powder
    • ½ tsp Salt
    • ¼ cup Water or adjust

    For Purple Pasta Dough

    • 1 cup All purpose flour
    • 2 tbsp Purple sweet potato powder
    • ½ tsp Salt
    • ¼ cup Water or adjust

    For Pumpkin Filling

    • 2 cups Pumpkin cubed
    • 2 tsp Fennel seeds
    • 6 cloves Garlic
    • 2 tbsp Olive oil
    • Salt to taste
    • Black Pepper to taste

    Brown Butter Garlic Basil Sauce

    • ¼ cup Salted Butter
    • 4 cloves garlic
    • 6 leaves Fresh Basil
    • ¼ tsp Black Pepper

    Instructions

    Pasta Dough Procedure

    • Start by making the pasta dough. Take flour, turmeric, salt in a bowl and mix well. Add in water and knead to a stiff dough. Make purple dough similar to this. Place both the dough into the ziploc cover and set aside for 30 mins.
    • Once 30 mins is up, take the dough and knead it once more till smooth and set aside for 10 mins.

    Make the pumpkin filling

    • Take the filling ingredients in a baking tray. Pop it into the oven and bake for 40 to 45 mins till roasted.
    • Now the filling is cooked. Take it in a food processor and pulse few times till smooth. Set aside.

    Preparing Pasta Sheets

    • Now lets make the pasta. Take your pasta maker. Take half of the yellow dough and start rolling in the thicker settings of the pasta machine. Once it is rolled fold over and roll again till you get smooth and sheen finish.
    • Keep reducing the thickness of the pasta and keep rolling.
    • Set aside.
    • Roll the purple dough the same way.
    • Pass the rolled purple sheet of pasta in the thicker noodle setting of the pasta machine and cut it in ribbons.
    • Take the yellow dough. brush the top with very little water. Place the purple strips of pasta over the yellow dough at an angle.
    • Sprinkle flour on top and cut off the excess.
    • Pass the sheet of pasta into the pasta maker and roll it once. so the strips sticks to the pasta sheet.
    • Make sure the sheet of pasta is even, trim off the excess dough.

    Shape the pasta

    • spoon some filling in the end of the pasta sheet, fold it once. Apply some water on the side and fold once more. Trim off the pasta. now pinch the pasta from both the ends so it forms like a candy shape.
    • Set aside the shaped pasta in a floured tray.

    Cooking of pasta

    • Bring lots of salted water to a boil. Add the pasta gently in.
    • Cook the pasta for 2 mins and drain it gently using a slotted spoon.
    • Place the pasta in a serving plate.

    Brown Butter Garlic Basil Sauce

    • Take butter in a saute pan. Cook it on very low heat till it gets melted and light golden colour.
    • Add in sliced garlic and basil leaves. cook for further few minutes till crispy.
    • Cook the butter on low heat till the butter is toasted and brown.
    • Take it off the heat and set aside

    Serving of pasta

    • Serve the pasta in a warm bowl with a drizzle of brown butter garlic sauce

    Notes

    • Start by making the pasta dough. Since it has to rest for few minutes.
    • The pasta dough has to be very stiff. This makes the perfect pasta.
    • Roast the pumpkin in oven till it is caramelized. If you don't have oven, cook it in a pan.
    • You can use food colour or any natural colour powder for dyeing of the pasta dough.
    • You can change the pasta filling as you like.
    • You can serve the pasta without the sauce as well.

    Step by Step Pictures for Caramelle Pasta

    1)First let's make the pasta dough. You have to make two coloured pasta dough. One yellow dough and one purple dough. Take flour in a bowl.

    2)Add in turmeric powder

    2)Add in salt.

    3)Add little water at a time and make a stiff dough.

    4)The dough has to be stiff.

    5)Now lets make the purple dough. Take flour, purple sweet potato powder and salt.

    6)Add water and knead to a stiff dough.

    7)Take both the dough in a ziploc cover. Set aside covered for 30 mins.

    8)Now lets make the filling. Take pumpkin, garlic, salt, black pepper, olive oil and fennel seeds in a baking tray. Pop the tray into the oven and bake at 200 degree c for 40 to 45 mins.

    9)Now the dough has rested for 30 mins. Remove it from plastic wrap and knead for 1 to 2 mins.

    10)Take the dough in the pasta maker.

    11)Roll the pasta sheets in larger setting. Fold it two to three times and let it run through the pasta maker till it smooth.

    12)yellow pasta sheets.

    13)now lets roll the purple dough.

    14)pasta sheets are made

    15)pass the dough sheet through the thicker noodle setting and cut it into stripes.

    16)stick the stripes over the yellow dough in an angle.

    17)cut off the excess

    18)pass the rolled sheet into the pasta maker once so the strips sticks.

    19)pumpkins are roasted

    20)take the roasted pumpkins into the processor and pulse few times till pureed.

    21)add a spoonful of pumpkin puree in the end.

    22)fold it over

    23)apply some water and fold it.

    24)squeeze both the sides so it sticks.

    25)now the shaped has formed like a candy shape.

    26)shaped caramelle pasta

    27)Boil the pasta in salted water for just 1 to 2 mins.

    28)Drain it and take it in a serving plate.

    29)Once cooked take it in a serving plate.

    30)I made some brown butter sauce. I browned some butter, with garlic and basil till crispy and toasty.

    31)Drizzle some butter on top.

    32)Serve hot.
