Chicken lollipop
Chicken Lollipop is one of our all time favourite dish. It is our favourite appetiser to order whenever we drop by any restaurant. I make it occasionally at home, because I don't find this often in the frozen section.
Couple days back, I bought a packet of lollipop. I told my sister about that, immediately she wanted me to make lollipop. I tried making it little differently like restaurant style and it was amazing. It turned out so juicy and tasty.

About Chicken Lollipop
Chicken lollipop also known as lollipop chicken, Chicken Drums of heaven is a popular restaurant style appetizer. It is usually served two ways, marinated chicken deep fried just like chicken 65. Second version includes tossing the fried chicken in a spicy sauce.
Chicken lollipop is nothing but legs of chicken cut in such a way it forms like a lollipop shape. You can easily get pre cut chicken lollipop in most grocery store. These cuts of chicken lollipop marinated in masala and fried till crispy and juicy. This taste amazing when served with tomato ketchup of any sweet and tangy sauce.

Chicken Lollipop Ingredients
Chicken - Pre prepared chicken lollipop is available in the frozen section of super market. If you cannot find it, I recommend you to prepare it yourselves. There are variety of videos available to cut chicken in lollipop shape.
Sauces - I used soy sauce, ketchup and vinegar to flavour the chicken.
Ginger & Garlic - use lots of ginger and garlic which adds aroma to the chicken.
Chilli Garlic Paste - I used my homemade chilli garlic paste. You can add more or less as per your spice level.
Seasonings - as far as the seasonings, I used salt, pepper and chilli powder.
Flour Coating - use a combination of plain flour and cornstarch to create the crispy exterior.
Egg - egg is used as binding of the chicken. It helps the coating stick the chicken when frying.
How to Cut Chicken into Lollipop
- Take a whole chicken leg.
- Cut it in each joints so you get 2 piece of chicken to work with.
- Now use a sharp knife to scrape the flesh from the chicken on each leg.
- Gather it together to form into drumsticks like shape.
- You will be getting around 2 chicken lollipop from each whole chicken leg and thigh portion.
How to Make Chicken Lollipop (Stepwise Pictures)
Preparing Marination
1)In a large mixing bowl, add in chilli garlic paste. This is to provide colour and flavour to the chicken lollipop. I used my homemade chilli garlic paste. You can add more or less as per your spice level.
Pro Tip: You can skip this if you don't have. Instead you can use chilli sauce.
2)Add in ginger and garlic paste.
3)Add in salt, red chilli powder and black pepper powder. I am using Kashmiri chilli powder for colour.
4)Add in soy sauce.
5)Add in vinegar. Instead of vinegar you can use lemon juice.
6)Add some tomato ketchup. You can skip this, it is entirely optional.
7)Mix this really well. Taste and adjust salt and chilli powder. This is your marination for chicken.
Marinating Chicken
8)Add in the lollipop chicken into the marinate.
9)Mix the chicken with the marinate really well. Leave this aside for minimum of 30 minutes to marinate. You can leave it overnight as well.
Final Coating
10)If you have marinated the chicken overnight. Remove it from fridge 30 minutes before frying. So the chicken comes back to room temperature.
Now before frying, add in plain flour, cornstarch and egg. This helps in binding the chicken and creates coating on the chicken and makes it crispy when fried.
11)Coat the chicken really well in the flour and egg.
Frying Chicken
12)Drop the chicken one by one in hot oil. Once chicken is added in the oil, reduce the heat to medium and fry the chicken for 10 to 12 minutes till golden and crispy. Keep flipping in between for even frying.
Pro Tips: Don't fry the chicken on high else the outer coating will burn before the centre is cooked through.
13)Once chicken is fried. Strain it on some paper towel. Serve with ketchup or chilli sauce.
Variations
Saucy Chicken Lollipop Recipe
This version of chicken lollipop has an Indo-Chinese style sauce coated all over it. The sauce is made with garlic, onions, bell peppers and Chinese sauces. It is super delicious and can be enjoyed with fried rice or noodles.
This version of sauce coated chicken comprises two steps. The chicken is coated in a seasoned flour mixture and fried till crispy. This fried chicken is then tossed in spicy sauce.
I like to saute garlic, onions and bell peppers in oil before adding in the sauces. Cook this till thick and then toss the chicken in this to make a sauce coated chicken lollipop.
Ingredients for Fried Chicken for Lollipop
- Chicken Lollipop - 20 pieces
- All Purpose Flour - ½ cup
- Cornstarch - ½ cup
- Salt & Black Pepper Powder to taste
How to Make Fried Chicken for Lollipop
1)Season flour, cornstarch with salt and pepper.
2)Coat the chicken in this flour mixture. Make sure you squeeze and press the chicken in this flour so you get a thick coating over the chicken.
3)Drop in oil and fry till golden brown and cooked completely.
4)Strain and set aside.
Ingredients for Sauce for Chicken Lollipop
- Oil - 1 tblspn
- Garlic - 6 cloves chopped
- Green chillies - 2 chopped
- Onion - 1 large chopped
- Capsicum / Bell Pepper - 1 chopped finely
- Tomato Ketchup - 2 tblspn
- Red Chilli Sauce - 1 tblspn
- Green Chilli Sauce - 1 tblspn
- Soy Sauce - 2 tsp
- Vinegar - 1 tsp
- Dry Red Chillies - 5
- Sugar - 1 tsp
How to Make Sauce for Chicken Lollipop
1)Heat oil in a pan. Add in chopped garlic and green chillies. Saute this for 1 minute till fragrant.
2)Add in finely chopped onions and cook for 2 to 3 minutes till cooked.
3)Add in chopped bell peppers. This is optional, you can skip this if you want.
4)Saute the peppers for few minutes.
5)Now add in tomato ketchup, soy sauce and chilli garlic paste.
6)Add in green chilli sauce and red chilli sauce. Toss that to combine.
7)Season this with salt and sugar.
8)Mix well. if this looks too dry, you can add a splash of water to this.
9)Add in the fried chicken lollipop and toss to combine.
10)Serve.
Air Fryer Chicken Lollipop
- Mix chicken lollipop with all the marinating ingredients except cornflour and maida.. Keep aside for 30 mins.
- Now add in cornflour and maida. Mix well.
- Preheat an air fryer at 180 degree C for 10 mins. Grease the inside of the air fryer with little oil. Brush more oil on the chicken. Arrange it in a single layer inside the air fryer.
- Bake it for 25 to 30 mins, flip it in between and keep cooking.
Chicken Lollipop in Oven
- Combine chicken lollipop with all the marinating ingredients except cornflour and maida. Keep aside for 30 mins.
- Add in cornflour and maida. Mix well.
- Preheat oven at 180 degree C for 10 mins. Take a baking tray. Line it with parchment paper. Arrange chicken lollipop in a single layer.
- Apply oil on the chicken.
- Bake it for 25 to 30 mins, flip it in between and brush with little extra oil keep cooking.
Expert Tips
- You can marinate the chicken and store in fridge upto 3 to 4 days.
- Marinated chicken can be stored in freezer for upto a month.
- Instead of frying, you can air fry the chicken.
- for restaurant style taste, add a dash of ajinomoto for restaurant taste, you can skip it.

- 12 pieces Chicken Lollipop
- Oil for Deep Frying
For Marination:
- 1 tbsp Chilli Garlic Paste

- 1 no Egg
Instructions
- Mix chicken lollipop with all the marinating ingredients except cornstarch, plain flour and egg. Keep aside for 30 minutes to marinate. Just before frying add in cornstarch, egg and maida. Mix well.
- Heat oil for deep frying. Once the oil is hot, Drop chicken in hot oil, simmer the flame and cook on low heat for 10 mins till the chicken is cooked, Now increase the heat and fry the chicken on high heat for 5 mins or till the chicken get crispy and cooked. Strain and serve.

- You can marinate the chicken and store in fridge upto 3 to 4 days.

This is perfect recipe i got till this day for chicken lollipop.
I tried with same proportions of all the ingredients and they came out Well..
However...the slight issue was that the flour(maida and corn) dint get stick to the chicken totally...i mean...when they were left to get fry....the flour was coming out partially from the chicken.
How can I avoid this and make sure the flour ( maida and corn) doesnt come out while frying..
please give some advice on this.

@MadhuriU have to fry these in rhigh heat. if ur oil temp is not correct then the masala will come out.

@Lokesh vamseedhar reddyit is all because of frying..U have to start frying in a high temp, so it seals the masala..Now lower the flame and cook on a low flame. This will make the chicken soft

@Nareshnot sure about the temp, but the heat should be medium high and it will take around 6 to 8 mins for the chicken to cooked..test a chicken whether it is dont or not
