Chocolate Fudge Cookies Recipe / Triple Chocolate Cookies Recipe

My love for anything chocolaty never stops i guess. This cookies is a proof for that. Because oneday i saw this recipe in my reader list and believe it or not, the next minute i am with a pen and a paper writing down the ingredients for it to make it instantly.

I am telling you this is one of the best cookies i ever made and ever tasted. This is not like your normal cookies..It is fudgy and chewy and very soft, not to mention extremely chocolaty. When i took my first bite i felt like eating a chocolate heaven and i felt like having a chocolate brownies in cookie form. 
This cookies has become my latest favourite and i loved it so much, i finished the entire batch in two days..My sister tasted it and loved it so much..
I hope you will try this and i i strongly suggest you to give it a try..
Preparation Time : 10 mins
Resting Time : 45 mins
Baking Time : 16 mins
Makes : 7 large cookies

Ingredients:
Dark Chocolate – 100 grams chopped
Butter – 40 grams
Egg – 1
Jaggery / Gur / Palm Sugar – 1/2 cup ( you can use brown sugar)
Vanilla Essence – 1/2 tsp
All Purpose Flour / Maida – 3/4 cup / 90 grams
Baking Powder – 1/4 tsp
Chocolate Chips – 3/4 cup
Chocolate Chunks – 3/4 cup ( I chopped some dark chocolate)

Method:
Take egg in a bowl. Add in brown sugar and vanilla essence. Beat it well till it is all mixed up.
Now take dark chocolate pieces in a microwave safe bowl, add butter over it and melt it in microwave for 45 sec. You can melt it by placing this bowl over a pan of simmering water.
Once it is melted, remove it and let it cool a bit.
Now add the egg mix in and mix well.
Add in all purpose flour and baking powder. Mix well till it is combined.
Add in 1/2 cup of chocolate chips and 1/2 cup of chocolate chunks. Reserve few for topping the cookies..Mix this well.
Place this bowl in fridge for around 30 mins.
Now line a tray with silicon mat or foil and scoop some of the batter using a icecream scoop and place it over the tray. Leave distance between each cookie.
Now take the remaining chocolate chips and chunks and dot it all over the cookies.
Place this tray in freezer for 10 to 15 mins till the cookies get rock hard. 
Preheat oven to 170 Degree C.
Now pop it straight into the oven and bake for 16 mins. 
Remove it from oven and let it cool on the tray before removing it carefully using a spatula.
Enjoy it warm.

Take all your ingredients

Crack open a egg in a bowl

add in some grated jaggery / palm sugar / gur

add a splash of vanilla

whisk it well till the sugar is melted

set this aside

In a microwave safe bowl, take chocolate chocolate

add some butter over it

you have to melt this up, i melted it for 45 sec in microwave,
you can melt it by placing this bowl
 over a pan of simmering water and melt it gently

Now after the chocolate mix is warm enough to handle,
add the egg mix in

mix well

add in flour

and some baking powder

mix well

Now add in some chocolate chips and chocolate chunks

fold well

I popped the bowl into the fridge for 30 mins or so

after 30 mins the mix is little firm to scoop.

I had this silicon mat lying around, so i placed it over a plate.

use a icecream scoop to scoop perfect cookies

place it over the silicon mat, leaving space between each one, because this cookies will spread a lot

i took some extra chocolate chips and chocolate chunks 

i studded it all over the cookies

The cookies should be firm and rock hard before
your pop it in oven

so i placed the cookies tray in the freezer for
10 mins till it is firm

Now i transfered the mat to a baking tray and
poped it in oven

look how beautiful it looks after it is baked

It taste even better..Yum..

    @Aysha UmerIf u have convection mode oven, u can bake for the same time..or else you cannot.

    Aarthi can we substitute dark chocolate with dairy milk? Also i dont have 170 deg C in oven.Shld i bake it at 160 deg C or 180 deg C?

    Can we skip using foil or parchment paper instead butter the pan really well? Will that work.

    @Anonymousu can use any chocolate, u can use bournvile. bake at 160 degree C

    Lining the tray with foil or parchment is ust, else the cookies will stick.
