    Yogurt Muffins Recipe

    I would say this is the world's easiest and softest eggless muffin recipe you will ever make. The muffin is made with yogurt as the main ingredients and calls for basic pantry ingredients but the resulting muffin is spongy, fluffy and so good. Learn how to make eggless yogurt muffin with step by step pictures.

    Eggless Yogurt Muffins

    I would say this is one of the easiest and fluffiest muffins you will ever make..It is so easy to make, you need a bunch of ingredients to make this and one of the main ingredient is thick yogurt which has to be un sour. And I used my homemade cake flour recipe for this and it made the muffins so fluffy.

    About Yogurt Muffins

    Yogurt muffins is one of the most easy muffin you will ever make. The ingredients is just yogurt, sugar, oil, cake flour, vanilla, baking powder and baking soda. Thats it. The main ingredient in this bake is homemade cake flour.

    Cake flour helps make the muffin so fluffy. It is really easy to make at home. All you need is just plain flour and cornstarch. I have shared a separate post on how to make cake flour at home.

    The original recipe calls for mini muffin moulds, but I made this in my large muffin tray and I got a good 6 muffins out of this and they were so puffy and had the wonderful muffin top. There is something so satisfying about simple muffin recipes freshly baked from oven had with a cup of masala chai or coffee or milk(if you are like me).

    Ingredients

    Cake flour - cake flour is nothing but plain flour and cornstarch mixed. You can make it at home easily.

    Yogurt - make sure to use plain yogurt which is not too sour. You can use greek yogurt as well.

    Sugar - i used ⅓ cup of sugar and i found that the sweetness is just perfect. You can add more or less too.

    Oil - just a tablespoon of oil is used in this recipe.

    Raising agent - you need both baking powder and baking soda for this muffin.

    Success Tips for Perfect Muffins & Muffin Top

    Achieving perfect muffin top is not rocket science. You need to do few adjustment in measurements also few baking techniques. Here are my tips for domed muffin top.

    1)Rest the batter - Make the batter as mentioned. Don't over mix the batter and also rest the batter for 15 mins before baking. This allow the starch molecules to absorb and swell create a thicker batter.

    2)Fill every other holes - While filling the batter in muffin pan, fill every other hole in muffin tray, this allows the muffins to rise better without disturbing the other muffins baking.

    3)Fill as much as you can - fill your muffin pan super full. use as much batter as you can to pack in the mould. I like to fill it upto the top.

    4)Increase Baking Powder - the amount of leavening agent you add in this should be slightly more than the regular recipes. Follow my measurements to the 'T'and you should be rewarded with the perfect muffins.

    Step by Step Pictures

    1)Take all your ingredients..You can see, these are few basic ingredients

    2)Preheat oven to 180 degree C. Line a muffin tray with cupcake liners and set aside.

    3)Now to make muffin batter. Take yogurt in a bowl.

    4)Add in oil. This recipe uses 1 tablespoon of oil. You can use melted butter instead of oil.

    5)Add in vanilla extract.

    6)Add in baking soda.

    7)Add in baking powder.

    8)Mix this really well.

    9)Add in cake flour. Here is the recipe for homemade cake flour.

    10)Fold gently until it is combined.

    11)Now use an ice cream scoop to scoop out the batter.

    12)As you can see the batter is light and flluffy.

    13)Fill the liners till the top.

    14)Bake until done. It is fluffy and risen well.

    15)Enjoy.

    16)This is one of the softest and fluffiest muffin you will ever taste without eggs..

    17)Serve warm.

    • muffin tray

    • Ice cream scoop

    Ingredients
      

    • 1 cup Homemade Cake Flour
    • ⅓ cup Sugar 65 grams
    • ¾ cup Yogurt (Plain Yogurt) 180 ml
    • 2 teaspoon Baking Powder
    • 1 teaspoon Baking Soda
    • 1 tablespoon Refined Oil
    • 1 teaspoon Vanilla Extract

    Instructions
     

    • Preheat oven to 180 degree C. Line 6 muffin tray with cupcake cases and set aside.
    • Take yogurt, sugar, oil, baking soda and powder and vanilla in a bowl and mix well. Add in cake flour and fold gently. Don't over mix the batter. Lumpy batter is fine.
    • Scoop the batter using an ice cream scoop and fill the muffin mould until top and bake for 20 to 30 mins, insert a toothpick to see whether the muffin is done or not.
    • Remove the muffins from oven, let it sit for 10 mins. Now remove from tray and enjoy warm.

      Hope ur family and u are at the pink of ur health.As u even i lived my childhood in nagercoil am from the north by birth.Am a subscriber to ur channel.i like the originality in ur videos, how much ever heights u reach maintain dat coz i feel thats ur plus.now coming to ur yogurt muffin, i jus tried it.The outcome is what i wanted to share.The softness is there bt wen eating it, its kinda chewy and the cake doesn't come out completely clean off the cupcake liner unlike oder recipes.Why so dear.plz advise.
