Eggless Chocolate Pudding

I love browsing other food blog and I came across this recipe in moreover every blog…I know this recipe is going to be a keeper..

I thought of doing this last week, but somehow it got skipped always..Yesterday was the day and finally I made it. Before trying this, I thought this is going to turn some kind of chocolate custard like, but once I made it and tasted my first spoonful it taste so chocolaty and rich and yummy. Totally delicious..
I used plain dark chocolate chips to make this, But you could use your favorite chocolate like dairymilk or any chocolate. You need only 3 to 4 tblspn of that..I got around 2 big glassful of this rich rich desert, but it is a little too much for a single person..If you are serving this for parties, you could use mini glasses.Then I would say that you will get around 5 short glasses.
I would suggest you to add some nuts in this. It would be great if take some nut filled chocolates like dairymilk fruit and nut or something like that and use it. I decorated this with some cocoa and edible stars, you can do as you wish.
Ok here you go to the step by step recipe with pictures.
Ingrediants:
Milk – 400 ml / 1 ¾ cup / 14 fluid ounces
Cocoa Powder – 3 tblspn or as needed
Sugar – 3 tblspn or to taste
Custard Powder-2 tblspn
Vanilla Essence -1 tsp
Dark Chocolate Chips – 3 tblspn
Nuts of your choice ( optional)
Method:
Melt Dark chocolate chips either in microwave or double boiler and set aside.
Now take custard powder, cocoa, sugar in a mixing bowl. Add some milk and make it into smooth paste.
Now take the remaining milk and in a pan and heat it up..
When it starts to boil add the mixed custard batter slowly and mix constantly so that no lumps gets formed.( if you are afraid that lumps will form, then you can take the hot milk and add it into the mixed custard batter and mix well.Then pour the entire batter to the pan and heat it up)
Now mix this well till it gets thicken..It will take 5 minutes..Make sure that you keep the heat really low.
Add in the melted chocolate and mix well.Cook this for 2-3 mins on a very very low heat.
Now take it off the heat and fill your glasses with this.
Dust some cocoa on top and decorate it as per your wish.
Put it in the fridge for a couple of hours and serve chilled.
Enjoy each spoonful of chocolaty goodness.
Pictorial:
Take all your ingrediants
Add chocolate chips in a sauce pan
melt it down
Take custard and cocoa in a bowl
add in sugar
and mix well
pour half of milk and make this into a smooth paste
set this aside
heat remaining milk
add in vanilla
bring this to boil
add the chocolate mixture in this
mix well
Cook untill it gets thick
fold in the melted chocolate
mix well
done done..
can you see how thick it is
now allow it to cool a bit
take your glasses
fill it up
decorate it as per your wish
MMMM….YUMMO..

    Buttery Saffron Infused Bites

    Ingredients

    2/3 cup hot water
    few saffron threads
    1 tsp dry yeast
    4 tbsp Melt Buttery Spread
    pinch of salt
    2 cups all purpose flour

    Directions

    Soak the saffron threads in the hot water for a couple of minutes until the water becomes lukewarm. Pour the yellowish water in your mixing bowl, sprinkle the yeast over and let it dissolve. Since we're using too much water for a teaspoon of yeast, it is not going to foam. When the yeast dissolves add 4 tbsp Melt Buttery Spread. With the hook attachment on start mixing slowly adding the salt and the flour. Mix until all the flour is incorporated and the dough comes clean form the sides of the bowl.
    Place the dough into a greased bowl, cover and let it rest until in doubles in volume. It's going to take about 30-40 minutes.
    When the dough is risen, divide it into 24 mini balls. Place each ball into a mini muffin cup. If using paper liners there's no need to grease the pan. If not, grease the pan before placing the mini balls in the muffin cups.
    Cover the pan again and heat the oven to 375F.
    Let the balls rise again for about 15 minutes while the oven reaches the desired temperature.
    Bake in preheated oven for 18-20 minutes. Let them cool slightly into the baking pan and completely on a wire rack.
    Enjoy!

    Aarthi, I'm a big fan of your blog and recipe collection. Tried this pudding today. It was so scrumptious!
